And finally, at the very end of the month, it&#8217;s for the first strawberries, tiny and bright red.</p>

<p>This year, on May 2nd, I found myself standing over a pile of fava beans, happily shucking the beans from their fuzzy-pods. (This is only a happy activity the first time. After that it&#8217;s a chore and a half but still worth it.) I had just opened the first bottle of rosé, a lovely Chilean blend. And then, I realized that I had lived this exact moment the previous year &#8211; the first fava beans, the first rosé, the apple blossoms just reaching their peak outside the window. What a beautiful moment! The world is better for its patterns.</p>
<p>In celebration of this particular moment in the year, I&#8217;m bringing back a series that&#8217;s been quiet for years: ingredient of the week. It&#8217;s been <a href="http://katieatthekitchendoor.com/2014/06/23/ingredient-of-the-week-strawberries-strawberry-gazpacho-with-grapes-and-goat-cheese/">3 years since I last did one</a>, but it&#8217;s always at the back of my mind. What&#8217;s in season now that I can only get my hands on for a week or two? How can I make the most of it&#8217;s brief appearance before it&#8217;s gone for another year? After my Sunday Dinner series, it&#8217;s the series that best reflects why I write this blog &#8211; finding interesting recipes to celebrate seasonal ingredients. Of course, given my current blogging pace of 4 posts a month, putting together 5 posts in a week seems a bit Herculean. So much cooking and writing and photo editing, not to mention the fava bean shucking! But I&#8217;ve planned ahead, and I think we&#8217;ve got this.</p>

<p>Fava beans have a very distinct flavor, grassy and slightly bitter. This soup is the essence of that flavor, undistilled, unsweetened. It&#8217;s a good recipe to kick off this week, a pure celebration of spring flavors. It&#8217;s all about the toppings &#8211; don&#8217;t skip them. The soup needs the saltiness of the pancetta and the crunch of the croutons and the subtle sweetness of the mascarpone. It even needs the mint, that little bit of herbality humming in the background. Without all of those flavors to highlight and offset the grassy fava beans, the soup is a bit one dimensional and overwhelmingly green tasting. But all together, it&#8217;s the very essence of spring.</p>

<li id="instruction-step-1">Preheat the oven to 350°F. Toss the bread cubes with 2 TBS of the olive oil and some sea salt, then spread in a single layer on a baking sheet. Bake for 12-15 minutes or until golden and crisp, stirring once halfway through. Remove the croutons from the oven, turn off the heat, and set aside.</li>
<li id="instruction-step-2" style="text-align: left">Heat the remaining 1 TBS of olive oil in a soup pot over medium heat. Add the cubed pancetta and fry until browned and crispy all over, about 10 minutes. Stir frequently while cooking &#8211; pancetta gets a slow start but goes from almost done to burnt in just a minute or so, so keep an eye on it. When it&#8217;s done, use a slotted metal spoon to scoop the pancetta out and let the grease drip back into the pan. Place the pancetta in a bowl and set aside. Drain all but 1 TBS of the pancetta grease and discard. Return the pot to the stove and add the onion to the remaining pancetta grease. Saute until translucent, about 4-5 minutes, then add the garlic and cook for another 60 seconds. Add the potato and the chicken stock and bring to a boil.</li>
<li id="instruction-step-3" style="text-align: left">Shuck the fava beans, then peel off the outer layer of skin and discard the skin. When the potato is almost tender, add the fava beans to the soup pot. Cook for 5 minutes longer, just to cook the beans through. Remove from the heat and season to taste with salt and pepper. Let cool slightly then ladle the soup into a blender. Always use caution when blending hot liquids, and only use a blender that is designed for it. If your blender is not suitable for hot liquids, allow the soup to cool first. Blend until smooth and thick, thinning with a little heavy cream if desired. Reheat the soup gently if needed, then pour into bowls. Top each bowl of soup with croutons, fried pancetta, chopped mint, and a spoonful of mascarpone. Serve immediately.</li>

<p>People ask me all the time what my favorite thing to make is. I think that&#8217;s sort of a difficult question &#8211; it depends on my mood, on what I feel like eating, on what produce is abundant in my garden. But when someone asks you a question like that, to show interest in your hobby, to learn a little more about you, they don&#8217;t want to hear &#8220;it depends.&#8221; So I tell them, <em>soup</em>. And it&#8217;s true. I love to make soup. I love the rhythm of chopping vegetables, I love the way onions browning in butter smell, I love the sound of gentle simmering, the way steam curls over a pot and fills the entire house with the scent of comfort. I love sitting with a warm bowl of soup between my hands, how nourished and relaxed I feel after eating it. Campbell&#8217;s got it right all those years ago &#8211; soup <em>is</em> good food.</p>

<p>In our house, it&#8217;s an all-year food, too &#8211; I eat soup almost as much in the summer as I do in the winter. But it&#8217;s particularly gratifying to make and eat in the fall, on a rainy and blustery day, when the leaves are wet and slippery under your feet and houses, windows lit up against the blue-gray sky, begin to look incredibly inviting. I&#8217;m getting a little bit ahead of myself here &#8211; it&#8217;s currently 75° and partly sunny here, and while we did get some much needed rain this week, it was more of a tropical, humid rain than a cold, fall-ish rain. But I still found myself thinking about simmering pots of fragrant broth and chunky vegetable stews. So I thought it was finally time to share this lentil, mushroom, and pancetta soup that I made on a rainy day back in May. It&#8217;s a fairly straightforward French-style soup &#8211; shallots, carrots, celery, potatoes, and lentils &#8211; that gets three little upgrades. First, a bit of pancetta or bacon cooked with the mirepoix; second, crisp and earthy sauteed mushrooms on top; and third, a dollop of thyme-laced whipped cream that melts into the top of each bowl. It&#8217;s a soup that makes the simple and earthy just a little bit elegant, but still while being easy enough to whip up on a weeknight with ingredients you probably have in your fridge already.</p>

Serves 4.</em></p>
<ul>
<li style="text-align: center;">1 TBS olive oil</li>
<li style="text-align: center;">3 oz. pancetta or bacon, cut into 1/4 inch pieces</li>
<li style="text-align: center;">2 shallots, peeled and finely sliced</li>
<li style="text-align: center;">1 carrot, peeled and diced</li>
<li style="text-align: center;">1 stalk of celery, diced</li>
<li style="text-align: center;">3 cloves garlic, peeled and minced</li>
<li style="text-align: center;">4 sprigs thyme, divided</li>
<li style="text-align: center;">1 c. Puy lentils, rinsed</li>
<li style="text-align: center;">5 c. chicken or vegetable stock</li>
<li style="text-align: center;">2 medium potatoes, peeled and cut into 1/2 inch cubes</li>
<li style="text-align: center;">2/3 c. heavy cream, divided</li>
<li style="text-align: center;">2 TBS butter</li>
<li style="text-align: center;">1 1/2 cups thickly sliced shiitake mushrooms</li>
<li style="text-align: center;">sea salt and pepper to taste</li>
</ul>
<ol>
<li>Heat the olive oil in a large saucepan over medium heat. Add the pancetta and cook, stirring occasionally, until golden brown all over. Add the sliced shallot, carrot and celery and saute, stirring frequently, until vegetables are slightly soft and beginning to brown, about 6-8 minutes. Add the minced garlic and saute until fragrant, about 1-2 minutes longer. Add the 2 of the thyme sprigs, the lentils, and the stock. Bring to a simmer then add the cubed potatoes. Simmer the soup until the potatoes and lentils are tender, about 15-20 minutes.</li>
<li>When the potatoes are tender, use a slotted spoon to fish out the thyme sprigs and discard the stems. Add 1/2 cup of the cream to the soup. Transfer two thirds of the soup to a blender and blend until smooth and creamy, then return to the saucepan and mix with the remaining lentil and vegetable pieces. Season the soup to taste with salt and pepper. Keep the soup warm over very low heat.</li>
<li>Melt the butter in a large frying pan over medium heat. Add the sliced mushrooms to the pan in a single layer, and season with sea salt and pepper. Let the mushrooms cook for two minutes without disturbing them, then flip them over using a spatula and cook two minutes on the other side. Mushrooms should be golden brown. If not, continue sauteing, stirring occasionally, until golden brown. Remove from the heat and set aside.</li>
<li>Pour the remaining heavy cream into a medium bowl. Whip until soft peaks form. Remove the leaves from the remaining two sprigs of thyme and whip into the cream. Season the cream lightly with black pepper.</li>
<li>To serve, ladle the soup into bowls, then top each bowl with sauteed mushrooms and a generous spoonful of the thyme cream. Serve immediately.</li>

I came home with 5 different varieties of frozen fresh egg noodles: there is a lot of ramen in my future. While I process everything and experiment with recipes, I can at least share this delicious curried fish chowder with you &#8211; especially because if I wait much longer, we will be decidedly out of chowder season.</p>

<p style="text-align: left;">I&#8217;m sure I&#8217;ve mentioned it before, but I&#8217;ve only really been eating fish for the past year and a half. As a kid, I found fish absolutely revolting, and have terrible memories of sitting at the dinner table crying over the piece of now-cold baked cod that I couldn&#8217;t bring myself to eat. And now, after a lifelong hatred of all things seafood, here I am, posting two seafood recipes in a row. Smoked fish was my gateway drug. I started eating it on airplanes when it was the only choice (really, it&#8217;s amazing how frequently airplanes serve smoked salmon, at least in my experience). Although there are still things that I can barely get down (squid sashimi, for example), I will now readily eat smoked fish, ceviche, most sushi, grilled fish, fried fish, and shrimp. This may not sound like much of an accomplishment to you, but I really didn&#8217;t expect my tastes to change so drastically in such a short period of time.</p>

<p style="text-align: left;">This soup, adapted from one of my favorite cookbooks, <em><a href="http://www.amazon.com/Change-Appetite-Diana-Henry/dp/1845338928/ref=as_li_ss_tl?ie=UTF8&amp;qid=1456584382&amp;sr=8-1&amp;keywords=a+change+of+appetite&amp;linkCode=ll1&amp;tag=katatthekitdo-20&amp;linkId=f04048814da734f99f240ce6e5abe2be" target="_blank" rel="noopener noreferrer">A Change of Appetite</a></em>, is the sort of thing that can help convert non-fish lovers into fish lovers. It has a lot of intense flavors &#8211; caramelized onions, curry and cayenne, savory lentils, smoked fish, and even smokier pancetta. It is not your average fish chowder. I love it &#8211; it&#8217;s something I make every few months (an anomaly in a house where we are pretty much constantly trying new recipes). One word of caution &#8211; this makes a giant batch. If you&#8217;re just feeding one or two people, cut this one in half.</p>

<li id="instruction-step-1">First, prepare the lentils. Place the lentils and bay leaf in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer until just tender but not falling apart. This will vary slightly with each batch of lentils but should take between 15-30 minutes. Test your lentils at various cooking times to see if they are done. When they are tender, drain the lentils, season to taste with salt and pepper and set aside.</li>
<li id="instruction-step-2">Peel one of the onions and cut into thin slices. Heat the olive oil in a medium frying pan over medium-low heat and add the sliced onion. Cook until golden brown, stirring frequently, then add the brown sugar and caramelize until onions are dark brown and sweet. Set to the side for serving.</li>
<li id="instruction-step-3">To prepare the chowder, melt the butter in a large pot over medium-low heat. Add the pancetta or bacon and cook until crisped, stirring frequently, about 5 minutes. Peel the remaining onion and chop into small pieces, then saute with the butter and pancetta until translucent, about 5-8 minutes. Add the spices and cook until fragrant, about 2 minutes. Add the potatoes and stock and bring the soup to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.</li>
<li id="instruction-step-4">When potatoes are cooked, add the smoked fish and the cod to the chowder and cook until cod is opaque throughout and beginning to flake into smaller pieces, about 4-5 minutes. Remove from the heat and gently stir the cream into the chowder.</li>
<li id="instruction-step-5">Divide the lentils between bowls and ladle the chowder over the lentils to serve. Top with the caramelized onions.</li>

<p>On Monday morning, lying in bed and catching up on my blog-reading after a happy and busy <a title="A Weekend with Friends // Zucchini-Pesto Mini Quiches in Phyllo Cups" href="http://katieatthekitchendoor.com/2014/02/25/a-weekend-with-friends-zucchini-pesto-mini-quiches-in-phyllo-cups/">weekend with friends</a>, I saw <a href="http://cookieandkate.com/2014/creamy-vegan-butternut-squash-linguine-with-fried-sage/">this post from Cookie and Kate</a>, and was immediately obsessed. I spent the rest of the day thinking about various versions of the creamy butternut squash linguine, and by the time I stopped at the store on the way home from work I had reversed all of Kate&#8217;s healthy twists to the dish and it had morphed into a full-blown, decadent carbonara in my mind. Which, it turns out, is how the folks over at Bon Appetit had <a href="http://www.bonappetit.com/recipe/winter-squash-carbonara-with-pancetta-and-sage">originally published</a> it anyway. <p>Now that it&#8217;s (finally) March, we only have a few weeks left where root veggies, kale, and heavy winter flavors are what we need to keep us going, so I&#8217;d suggest that you indulge in this dish now before all you can think about are radishes and asparagus and rhubarb. I&#8217;m not sure how best to convince you that it&#8217;s worth the calories, so I&#8217;m just going to ask you to trust me. If it makes you feel better, serve it with gently sauteed bitter greens, like broccoli rabe or mustard greens &#8211; the bitterness is a perfect counterpoint for the sweetness of the roasted squash and the saltiness of the pancetta. And enjoy it! One of winter&#8217;s redeeming qualities is the comfort food it inspires, so if eating food like this is what gets you through the lingering cold, go for it.</p>

<li id="instruction-step-1">Preheat the oven to 375°F. Peel the butternut squash and cut into slices that are half an inch thick. Place on a baking sheet and drizzle with the olive oil, then sprinkle with salt and pepper. Flip slices with a spatula to coat with the oil. Roast until fork tender and slightly caramelized, about 20-25 minutes, checking and flipping after 10 minutes. When tender, remove from oven and place in a blender. Set aside.</li>
<li id="instruction-step-2">Heat a medium frying pan over medium heat and add the pancetta cubes. Cook until crispy and browned on all sides, stirring frequently. Once cooked, set aside on a paper-towel lined plate. Discard all but 2 TBS of the pancetta grease. Heat the 2 TBS of grease over medium-low heat, then add the sliced onions to the pan. Cook, stirring frequently, until thoroughly caramelized and slightly crispy, about 15 minutes.</li>
<li id="instruction-step-3">While the onions are cooking, bring a large pot of heavily salted water to a boil. Cook the fettucine according to package directions and drain, reserving 1 cup of the pasta water. Place the cup of pasta water in the blender with the squash and the 1/4 c. heavy cream, and puree until very smooth. Toss the squash puree with the fettucine.</li>
<li id="instruction-step-4">Just before serving, melt the 1 TBS of butter in a small frying pan. Fry the sage leaves in the butter until crispy, about 2 minutes. To assemble, divide the pasta between the serving plates, and top generously with cooked pancetta, caramelized onions, and fried sage. Serve immediately.</li>

<p>I know, I know, we&#8217;re closer to graduation than to spring break (ha! can you believe that?!), but I wanted to talk about the final component of my alternative spring break &#8220;food and farming&#8221; trip &#8211; the farming.  To be honest, I signed up for this trip mostly for the food part, and a little bit because I thought it would be nice to spend a few days out in the sun, doing a little honest work.  However, the farming component of this trip left me more inspired than all the <a title="ASB: Locavore Durham Restaurants" href="http://katieatthekitchendoor.com/2011/04/01/asb-locavore-durham-restaurants/">scrumptious food and inspiring chefs combined</a>.  Maybe because it&#8217;s a newer concept for me than cooking.  Maybe because I&#8217;ll never be able to kick that nurturing urge that extends even to tiny green things growing in a shoebox on my windowsill.  Or maybe because I have this hazy, completely idealized, rosy image of myself waking up early to collect eggs and milk the cow, working in the dirt all day, and sleeping the way you only can after a hard day&#8217;s work.  Whatever the reason, this trip got me excited.</p>

<p>Over the course of the four day trip we visited three farms and Durham&#8217;s community garden, SEEDS.  On Monday we spent the morning at <a href="http://www.prodigalfarm.com/">Prodigal Farm</a>, a goat farm run by Kathryn and Dave, ex-New Yorkers who recently decided to follow their dreams back down South.  Kathryn&#8217;s story resonated particularly well with me &#8211; a Duke graduate and practicing lawyer for 15 years, she gave that world up to live in rural North Carolina with Dave and their goats.  Now she spends her time caring for the goats (who live in an old school bus!), whipping up fresh goat cheese cheesecakes, and restoring the old farm they bought.  Oh, and taking on the Plum Island center for biological warfare research when they wanted to start a mainland operation and chasing them out of Durham, NBD.  While at Prodigal Farm, we ASB-ers played with the goats, who were surprisingly friendly and didn&#8217;t try to eat any of my belongings &#8211; I guess that&#8217;s only the unloved goats at petting zoos &#8211; and then spent an hour helping Dave to clear trees.  It&#8217;s amazing how much land you can clear in an hour with 20 college kids trying to earn their lunch &#8211; I kept thinking about how much my dad would love it.  Then Dave and Kathryn treated us to an incredible lunch of fresh goat cheese, jerusalem artichokes just pulled from the ground, okra pudding and &#8230; roasted goat leg.  Which was incredibly tender, delicious, and not at all what I expected.  Yes, it was a little bit odd at first to eat goat while simultaneously watching goats frolic, but after getting over the initial uncomfortableness, it was the coolest experience, being able to actually see the source of each food we were eating.  Inspiration, part one.</p>

<p>Later that afternoon we headed to Four Leaf Farms, where Tim and Helga run the neatest, most organized little operation I&#8217;ve ever seen.  On the very small plot of land surrounding their house, they grow enough produce to supply Watt&#8217;s Grocery, themselves, and several farmer&#8217;s markets, raise chickens, grow mushrooms in the woods, and even have a kiwi tree. (Who knew that kiwis grew in North Carolina?!)  I was amazed with how well they used the little bit of space that they had &#8211; I&#8217;m not sure I&#8217;ve ever been in such a supremely well organized place in my life &#8211; and standing in the greenhouse I was a little bit in awe of the rows and rows of green thriving in the middle of March.  More than anything, I think being at Tim and Helga&#8217;s gave us all the sense of &#8220;Hey, I could do this&#8230;&#8221;  I don&#8217;t think anyone&#8217;s dropped out of school to start a farm since break yet, but you never know.</p>
<p>Tuesday morning we spent 2 hours at<a href="http://www.seedsnc.org/"> SEEDS</a>, Durham&#8217;s community garden.  SEEDS is a well-established, well-loved piece of Durham culture, where high-school students can work to grow and sell their own produce, younger children can attend day camp, and anyone who would like to can sign-up for their very own plot in which to grow their own vegetables, herbs, and flowers.  While at SEEDS we got some of our energy out digging out the bermuda grass from a new plot [side note: google has revealed to me that Jamaica grass &#8211; an energy drink that I&#8217;m pretty sure has marijuana in it &#8211; is not the same thing as Bermuda grass] and helping to sort the compost.</p>

<p>From SEEDS we headed to the newly established Duke Campus Farm, the reason behind this whole trip.  On 12 acres of old tobacco land in the Duke forest, several Duke students are farming a 1-acre pilot plot, new this year.  Duke dining services has agreed to buy all of the produce, and dreams for the farm are big, but there&#8217;s a lot of work that goes into creating a farm-able area before you get to the harvesting part.  On the two days that we were there, we helped build an 8-foot tall deer fence around the plot, hoed the soil into rows, shoveled manure, and finally, as the sun was setting on the last day of the trip, got to plant the first baby lettuces and kales.  I wish that the farm had gotten started when I was a freshman, as it&#8217;s something that I&#8217;d love to be involved in, but I&#8217;m glad that it exists now and I hope that it succeeds.</p>
<p>Since all this farming business ended, I&#8217;ve been a little bit obsessed.  The night after going to Tim and Helga&#8217;s farm I went to Kroger and got three packs of seeds and a bag of potting soil.  I now have four sage plants, four lettuce plants, and four basil plants that I am absurdly happy about.  Sometimes Megan finds me sitting on the windowsill in the morning, literally just watching the plants, and she has to remind me how weird I am.  I&#8217;ve also been devouring books like &#8220;<a href="http://www.amazon.com/Dirty-Life-Farming-Food-Love/dp/1416551603">The Dirty Life</a>,&#8221; and one of my classmates caught me looking up how to grow asparagus in the middle of class, at which point he had to remind me that I am, in fact, a 21 year old college student and not yet a farmer.</p>

<p>To go along with all this springtime greenery, farm-ness, and inspiration, I baked these pea, pancetta and chevre tartlets, inspired by a recipe I&#8217;ve been eyeing in <a href="http://www.amazon.com/Tarts-Sarah-Banbery/dp/1405429577/ref=sr_1_3?ie=UTF8&amp;s=books&amp;qid=1303587650&amp;sr=1-3">Sarah Banbery&#8217;s &#8220;Tarts,&#8221;</a> for over a year now.  The fresh peas are the essence of spring, the goat cheese brought me back to lunch at Prodigal Farm, and the pancetta&#8230; well, pancetta just makes everything better.  These were delicious &#8211; light and creamy filling with bites of salty pancetta and sweet peas, and a flaky crust flecked with parmesan.  A little indulgent, but one or two makes a perfect Saturday afternoon lunch.</p>

<p style="text-align:center;"><em>Inspired by<a href="http://www.amazon.com/Tarts-Sarah-Banbery/dp/1405429577/ref=sr_1_3?ie=UTF8&amp;s=books&amp;qid=1303587650&amp;sr=1-3"> Tarts</a>.  Makes 4 tartlets.</em></p>
<p style="text-align:center;"><span style="text-decoration:underline;">For the crust (</span><em>makes enough for 6-7 tartlets, freeze extras</em><span style="text-decoration:underline;">)<br />
</span></p>
<ul>
<li style="text-align:center;">3/4 c. flour</li>
<li style="text-align:center;">1/4 tsp. salt</li>
<li style="text-align:center;">5 TBS cold butter, cut into small pieces</li>
<li style="text-align:center;">1/4 c. finely grated parmesan cheese, packed</li>
<li style="text-align:center;">2-3 TBS very cold water</li>
</ul>
<p style="text-align:center;"><span style="text-decoration:underline;">For the filling</span></p>
<ul>
<li style="text-align:center;">1/2 c. fresh peas, from 1/2 lb. peapods</li>
<li style="text-align:center;">1 TBS butter</li>
<li style="text-align:center;">2 shallots, peeled and finely diced</li>
<li style="text-align:center;">3 oz. pancetta, cubed</li>
<li style="text-align:center;">2 TBS finely minced fresh basil</li>
<li style="text-align:center;">3 oz. goat cheese</li>
<li style="text-align:center;">4 egg yolks</li>
<li style="text-align:center;">pepper to taste</li>
</ul>
<ol>
<li>Grease four 3&#8243; tartlet pans (I used pam and the tarts came out really easily).  Set aside.  In a medium bowl, sift together flour and salt.  Cut in cold butter, using a fork or pastry cutter to mash mixture until a crumbly dough is formed.  Add parmesan cheese, mix to combine.  Add water a tablespoon at a time, stirring between additions, until dough <em>just</em> comes together.  Set bowl in freezer for 5 minutes to firm up.</li>
<li>Divide dough into 6 or 7 equally sized lumps.  Stick the extra two or 3 into the freezer for next time!  Or make double the filling.  On a floured surface, roll out into a circle, and press into tartlet pans. Trim excess dough from edges, crimping as you go.  Put tartlet pans in freezer for 5 minutes.  Preheat the oven to 400°F.</li>
<li>Bring a small pot of salted water to a boil.  Add peas and cook for two minutes, until bright green and just tender, then drain and rinse under cold water.  Set aside.</li>
<li>Remove tartlet pans from freezer, and place on a baking tray.  Cut a circle of parchment paper to fit inside each tartlet pan, and cover with pie beans or rice to keep the crust from bubbling.  Blind bake the crust for 8 minutes.</li>
<li>In a medium frying pan, melt the tablespoon of butter over medium heat.  Add the shallots and cook until translucent, about 5 minutes.  Add the pancetta and cook until brown all over and shallots are caramelized, about 5 minutes more.  Add peas to warm for 30 seconds.  Remove from heat.</li>
<li>In a medium bowl, mix together egg yolks, goat cheese, and minced basil until smooth.  Add pea-pancetta-shallot mixture and season with pepper.  Divide filling evenly among four tarts, and bake for 12 minutes, until set.  Serve warm.</li>
