<p>Last weekend, I had such a lovely, rejuvenating visit with my best college girlfriends, as always. The four of us try to get together for a long weekend at least once a year (this year we’ve actually managed three!). It’s the easiest sort of friendship – one where you know everyone so well that you don’t have to worry about what you say or how weird you sound. We spend a lot of time snuggling and a lot of time talking and laughing and last, eating. We love to eat. Obviously, eating is very important to me, so it’s great to have friends that are on the same page. But it can get a bit heavy, particularly at this time of year. I have a lot of dinners out coming up in the near future, and I’m looking forward to all of them, but I’m also trying to eat lighter at any meal that is not a celebration. I’ve been craving vegetables and whole grains and other things that leave me feeling light and fresh in between eating fests, so it was perfect timing to receive a copy of Diana Henry’s newest cookbook, <a href="https://www.amazon.com/Simple-Diana-Henry/dp/1784722049/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=a99703f7d5abe4f75ae48fb2b168cc5b&amp;creativeASIN=1784722049" target="_blank">Simple</a>.</p>

<p>I&#8217;m a big fan of Diana Henry &#8211; I have four of her books, all of which are in heavy use in my kitchen. I love her books first and foremost because she is a whiz with flavors, and I love her food, period. But I also love that all the books have the same clean, appealing design and colorful, casual photography. The books are inviting &#8211; they remind me what it is I love about food. As is perhaps obvious from the title, this book focuses on simple food &#8211; the kind of thing you can throw together on a weeknight with what you have in the fridge. It&#8217;s basically an ode to the way I cook when I&#8217;m only feeding myself, full of vegetable roasts and fancy nourishing toasts and quick but healthy pastas. There&#8217;s even a special two page section dedicated to fillings for baked potatoes! Seriously, Diana is a woman after my own heart. This is the book I&#8217;m going to recommend to friends who love food and want to learn to cook but don&#8217;t know where to start. It has all the simple recipes and techniques that you need to learn when you first learn to cook for yourself, but still feels creative and balanced.</p>

<p>The first recipe I made is an adaptation of Diana&#8217;s Roast Cauliflower with Pomegranates, Green Olives, and Chickpea Puree. I love crunchy roasted chickpeas, so rather than blending the chickpeas into a hummus, I roasted them with the cauliflower and used the other hummus ingredients to make an addictive tahini dressing. I tossed everything together with a generous amount of fresh parsley leaves and juicy pomegranate seeds and it was amazing, exactly what I want to be eating in between plates of Christmas cookies. And bonus: about halfway through the bowl, I realized that this recipe was naturally gluten free and vegan.  This is not a very frequent occurence in my house &#8211; we love cheese and we love bread. So when I don&#8217;t even realize a recipe has neither? That&#8217;s a win.</p>

Serves 3-4.</em></p>
<ul>
<li style="text-align: center;">1 large head of cauliflower, cut into florets</li>
<li style="text-align: center;">3 cups cooked chickpeas</li>
<li style="text-align: center;">6 TBS olive oil, divided</li>
<li style="text-align: center;">1/2 tsp cayenne pepper</li>
<li style="text-align: center;">1 tsp cumin seeds</li>
<li style="text-align: center;">1 tsp sea salt</li>
<li style="text-align: center;">black pepper</li>
<li style="text-align: center;">1/3 cup walnut halves and pieces, toasted in a dry pan for 3-4 minutes until lightly browned</li>
<li style="text-align: center;">1/2 cup pitted, chopped green olives</li>
<li style="text-align: center;">seeds from 1 pomegranate</li>
<li style="text-align: center;">3 TBS minced fresh parsley</li>
<li style="text-align: center;">1 small garlic clove, peeled and finely minced or crushed</li>
<li style="text-align: center;">3 TBS tahini paste</li>
<li style="text-align: center;">juice from 1 lemon</li>
<li style="text-align: center;">1/2 tsp ground cumin</li>
</ul>
<ol>
<li>Preheat the oven to 400°F. Spread the cauliflower florets out on one rimmed baking sheet and the chickpeas out on another rimmed baking sheet. In a small bowl, whisk together 4 TBS of the olive oil, the cayenne pepper, the cumin seeds, sea salt, and black pepper until evenly combined. Pour half of the oil over the cauliflower and half over the chickpeas. Use a spatula to flip the ingredients to coat with the olive oil.</li>
<li>Place pans in the oven and roast for 30-40 minutes. The cauliflower is done when it is tender all the way through and caramelized on the edges. The chickpeas are done when they are crunchy and golden brown. Add roasted chickpeas and cauliflower to a large bowl. Add the toasted walnuts, chopped olives, pomegranate seeds, and chopped parsley to the bowl and stir together.</li>
<li>To make the dressing, whisk the remaining 2 TBS of olive oil together with the minced garlic, the tahini paste, the lemon juice, and the cumin until smooth and thick. Taste and adjust balance of ingredients if desired. Add the dressing to the bowl and stir to coat the ingredients. Serve warm or at room temperature.</li>

<p>It is well and truly summer in Boston, at least for now. Today it&#8217;s 91° and hazy hot (91! In May! My coworker in Madrid says its hotter here in Boston than in Spain, which almost never happens). The trees have gone from the pale green of spring to the deep green of mid-summer. The zucchini plants are growing by inches every day, and the tomatoes could not be happier (although the delicate foxgloves flop over in the midday sun). The other morning I walked out of the subway station to find a group of 3rd graders on a field trip and the smell of sunscreen hit me full force. It made me smile &#8211; the idea of being outside all day, hot and steamy, running through sprinklers and guzzling cold lemonade. The smells of summer are the best &#8211; freshly mowed grass, hot pavement, salty sea air. I get tired of summer fast, but for now, it&#8217;s a novelty, and I love it.</p>

<p>Last weekend, I was at a beach house on the Jersey Shore for my college roommate&#8217;s bachelorette party. Friday the weather was absolutely perfect, and we spent the morning and early afternoon sitting out in the sun, drinking shandies, walking on the beach, and playing cornhole. Around 2, someone had the idea of walking to the ice cream parlor about a mile away and my heart lit up. An ice cream cone with homemade ice cream, eaten on the boardwalk looking out at the beach? The definition of happiness.  The definition of summer. So we put on our shoes and walked the mile to the store &#8211; only to find that it wasn&#8217;t open until the next day! And of course Saturday was cold and rainy and no one wanted ice cream anymore (except secretly, I did). So I&#8217;ve spent all week thinking about that lost ice cream cone, and then it got hot and sunny in Boston and my ice cream fantasies morphed into ice cream float daydreams (inspired by <a href="http://www.bonappetit.com/drinks/slideshow/float-slideshow" target="_blank">last year&#8217;s Bon Appetit article</a>), and here we are, Memorial Day Weekend, and I have boozy, dreamy, Tahini Caramel Ice Cream Floats for you.</p>

<p>This ice cream is an evolution of my favorite recipe, which started with the <a href="http://cooking.nytimes.com/recipes/11490-sour-cream-ice-cream-with-brown-sugar-strawberry-swirl" target="_blank">NY Times</a> <a href="http://katieatthekitchendoor.com/2013/05/26/sunday-dinner-coffee-chile-strip-steaks-grilled-endives-strawberry-sour-cream-ice-cream/" target="_blank">Strawberry Sour Cream Ice Cream</a>, morphed into <a href="http://katieatthekitchendoor.com/2015/08/24/kitchen-update-goat-cheese-ice-cream-with-blackberry-red-wine-swirl/" target="_blank">Blackberry Goat Cheese Ice Cream</a>, and here takes the form of Tahini Caramel Date Ice Cream. The custard is almost as thick fridge-cold as it is frozen, which is just the way I like it. For the floats, pour a splash of bourbon in the glass, top with cream soda, add a scoop of ice cream, more cream soda, then finally top with whipped cream and a drizzle of extra caramel and you will be in instant ice cream heaven. For kids, just skip the bourbon. This combination of flavors &#8211; dates, tahini, caramel, cream soda, and bourbon &#8211; went above and beyond what I was dreaming of. Now I just have to make the ice cream last the whole weekend.</p>

<li>Add 1 oz. Bourbon to the bottom of two glasses or sundae dishes. Top each with a splash of cream soda and 1 scoop of ice cream. Pour remaining cream soda over ice cream until glass is almost full. Top floats with whipped cream and tahini caramel sauce.</li>

<p style="text-align: center;"><b>Tahini Caramel Date Ice Cream</b></p>
<p style="text-align: center;"><em>A Katie at the Kitchen Door original recipe, originally inspired by <a href="http://cooking.nytimes.com/recipes/11490-sour-cream-ice-cream-with-brown-sugar-strawberry-swirl" target="_blank">NY Times</a>. Makes 1 1/2 quarts ice cream.</em></p>
<ul>
<li style="text-align: center;">7 egg yolks</li>
<li style="text-align: center;">1 c. sugar, divided</li>
<li style="text-align: center;">1 1/2 c. heavy cream</li>
<li style="text-align: center;">1/2 c. whole milk</li>
<li style="text-align: center;">10 whole pitted dates</li>
<li style="text-align: center;">1 tsp vanilla extract</li>
<li style="text-align: center;">4 oz. neufchatel / low-fat cream cheese</li>
<li style="text-align: center;">1 cup of <a href="http://katieatthekitchendoor.com/2014/04/24/graeters-new-flavors-tahini-caramel-and-sesame-brittle-sundae/" target="_blank">Tahini Caramel Sauce</a></li>
</ul>
<ol>
<li>Whisk the egg yolks and 1/2 cup of the sugar together in a large, heatproof bowl, until yolks are pale yellow. Set aside.</li>
<li>Add heavy cream, whole milk, dates, and remaining 1/2 cup of sugar to a large saucepan. Whisk briefly to combine, then heat over medium-low heat, whisking occasionally. When the cream mixture comes to a gentle simmer, remove from the heat and immediately transfer to a high-powered blender. Blend on high until dates are fully incorporated into the cream (always be extra careful when blending hot liquids!). Pour the hot cream mixture directly over the egg yolks, whisking the egg yolks vigorously as you do so to temper the yolks. Then return the mixture to the saucepan. Cook over medium-low heat, whisking constantly, until custard is thick, about 5 minutes, then remove from the heat.</li>
<li>Strain the custard through a fine-mesh sieve into a clean bowl, discarding any solids that are left behind. Stir the vanilla extract into the strained custard. Add the cream cheese to the custards in small pieces, and whisk until cream cheese is fully melted into the custard. Cover the custard tightly and refrigerate until cold, at least 3 hours but ideally overnight.</li>
<li>Freeze the ice cream according to the directions of your ice cream maker. Just before the ice cream is done churning, drizzle the caramel sauce into the top of the ice cream maker so it swirls into the ice cream. Alternatively, you can transfer the churned ice cream to a loaf pan, drizzle the caramel sauce on top, and use a spatula to swirl the caramel into the ice cream. Transfer the ice cream to a container, cover tightly, and freeze until firm enough to scoop.</li>

<p>We are (very) slowly starting to settle in to our new house. The pile of unpacked boxes in the dining room is dwindling, and things are starting to find homes. I built a little herb garden, not exactly a priority as far as house projects go but something that I&#8217;ve been looking forward to since we decided to buy a house. Yesterday we caved and bought a mini-fridge to tide us over until our real fridge is available, and a chilled glass of lemonade in this 95° heat is already worth the cost of the fridge, in my book. Trevor ripped out some of the old cabinets and replaced them with gorgeous industrial-style pine shelves, and we now have a plan to make the kitchen usable for the next 12 months or so while we save up to truly remodel it. Things are still a little chaotic, but they&#8217;re looking up.</p>

<p>With a few surfaces cleared and cleaned, at least a little cold storage, and a place to store our groceries, we&#8217;re easing back into cooking.  The very first meal was a package of frozen tortellini and a jar of tomato sauce. Gourmet, I know. Last night we were more ambitious and fired up the grill for sausage, peppers, and onions, along with grilled corn on the cob. Today, I&#8217;ve managed to have all my meals at home &#8211; cereal (ice cold milk, what a delicious thing!), tomato-lentil-couscous, and now, this Smoked Salmon Soba Bowl. Because there are still a number of kitchen tools we haven&#8217;t unearthed, and because we&#8217;re just starting to build up a new pantry, I needed to keep this meal super simple, and it is. The only cooking is to boil the soba noodles and edamame, then the noodles get tossed with a 5-ingredient dressing, and topped with smoked salmon, avocado, and pickled ginger. Simple, healthy, and full of flavor. And there&#8217;s something supremely satisfying about slurping cold, nutty noodles straight from the bowl when it&#8217;s too hot to think. <li>In a small bowl, whisk together tahini, honey, soy sauce, sesame oil, and rice wine vinegar until smooth. Taste and adjust flavors to your liking. Set aside.</li>
<li>Toss the prepared soba noodles with the edamame and the dressing. Chill until ready to serve. To serve, divide noodles between plates and top with avocado cubes, pieces of salmon, pickled ginger, and sesame or poppy seeds.</li>

<p><strong>The Book: </strong>Although I somehow missed <a href="http://www.sproutedkitchen.com/">Sprouted Kitchen&#8217;s</a> eponymous <a href="http://www.amazon.com/The-Sprouted-Kitchen-Tastier-Whole/dp/1607741148/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=WD5JYO2EOASRTV3E&amp;creativeASIN=1607741148">first book</a> (so many cookbooks, so little time!), after the rave reviews I saw for it all over my favorite blogs, I wasn&#8217;t about to make the same mistake with their newest book, <a href="http://www.amazon.com/The-Sprouted-Kitchen-Bowl-Spoon/dp/1607746557/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=EX2HQZT2O4A7NX4N&amp;creativeASIN=1607746557">Sprouted Kitchen Bowl + Spoon</a>. If you&#8217;re not familiar with Sara and Hugh&#8217;s lovely blog, please take a few minutes to <a href="http://www.sproutedkitchen.com/">go check it out</a> &#8211; it&#8217;s full of warmth, love, and healthy, wholesome meals. In their newest book, which is a seamless continuation of their blog, they take the somewhat trendy idea of &#8220;bounty bowls&#8221; (see also &#8220;earth bowl,&#8221; &#8220;broth bowl,&#8221; etc&#8230; even Panera now sells &#8220;broth bowls&#8221; of quinoa, lentils, and kale, although to be honest, I&#8217;m not sure how a broth bowl is different from soup) and explore it to the fullest. They&#8217;ve managed to turn everything from breakfast (cabbage, fennel, and apple slaw with smoked salmon) to dessert (key lime eton mess) into a &#8220;bowl&#8221; meal. Perhaps the best description of what qualifies as a &#8220;bowl&#8221; is that it should be a hearty but healthy mixture of grains, beans, vegetables, fruits, eggs, lean meats, and flavorful sauces, served together in a big bowl but with each element maintaining it&#8217;s own flavors and integrity. The recipes that Sara and Hugh have included are not particularly innovative or particularly classic &#8211; what they are is well-loved, tried and true meals that a family that loves to cook and eat has come to rely on. I love that the recipes are healthy without being restrictive &#8211; they won&#8217;t deny you eggs, a little cheese, or a few spoonfuls of maple syrup. They are also simple &#8211; nothing in this book should overwhelm you, even if you&#8217;re a tentative cook. Everything is simple to prepare, simple to serve, and simple to eat, the sort of food you&#8217;d happily whip up and pack for a picnic, but with smart, bright flavors throughout.</p>

<p><strong>The Food: </strong>In my last post, I lamented my recent (poor) eating habits, driven largely by my nutty travel schedule (I have another week-long trip starting tomorrow, and I&#8217;m planning to be a lot more diligent about what goes into my body this time!). Coming home to a copy of<a href="http://www.amazon.com/The-Sprouted-Kitchen-Bowl-Spoon/dp/1607746557/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=EX2HQZT2O4A7NX4N&amp;creativeASIN=1607746557"> Bowl + Spoon</a> waiting for me in the mail was exactly what I needed &#8211; it&#8217;s full of inspiration for healthy, nourishing, and simple meals to fuel you through a busy day. The first recipe I turned to was the Tahini Kale Slaw and Roasted Tamari Portobello Bowl, because it was exactly to my tastes without even a small tweak (although I did skip the carrots as Trevor is allergic). The base of the bowl is a hearty scoop of brown rice, which is then topped with a raw kale slaw dressed in a sweet and savory tahini and citrus sauce. The crowning elements are sesame and soy roasted portobello mushrooms, and perfectly ripe avocado. The beauty of this recipe, besides that it&#8217;s filling, healthy, and super simple to prepare, is that each element has a distinct flavor &#8211; they don&#8217;t run together and end up tasting like a stirfry. I made this two nights in a row, and my body and tastebuds were both grateful.</p>

<p style="text-align: left;"><span style="text-decoration: underline;"><em>For the Tahini Citrus Miso Dressing:</em></span></p>

<li style="text-align: center;">1/2 c. tahini</li>
<li style="text-align: center;">2 TBS white or yellow miso</li>
<li style="text-align: center;">2 TBS honey</li>
<li style="text-align: center;">1 TBS toasted sesame oil</li>
<li style="text-align: center;">2 tsp Sriracha or hot sauce</li>
<li style="text-align: center;">1 TBS rice wine vinegar</li>
<li style="text-align: center;">1/3 c. orange juice, preferably freshly squeezed</li>
<li style="text-align: center;">Sea salt and freshly ground black pepper</li>
<li style="text-align: center;">Lemon juice, to taste</li>

<ol>
<li>In a mixing bowl or mason jar, whisk together the tahini, miso, honey, sesame oil, Sriracha, vinegar, and orange juice until smooth and evenly combined. Thin with water or lemon juice, 1 TBS at a time, if needed. Season to taste with salt, pepper, and lemon juice. The dressing will keep, covered, in the fridge for two weeks.</li>
</ol>
<p><span style="text-decoration: underline;"><em>For the Tahini Kale Slaw and Roasted Tamari Portobello Bowl:</em></span></p>
<ul>
<li style="text-align: center;">2 large portobello mushrooms, stems removed</li>
<li style="text-align: center;">2 TBS toasted sesame oil</li>
<li style="text-align: center;">Sea salt and black pepper to taste</li>
<li style="text-align: center;">1 TBS tamari or soy sauce</li>
<li style="text-align: center;">1 bunch lacinato (tuscan) kale, central stems removed</li>
<li style="text-align: center;">1 carrot, peeled and grated</li>
<li style="text-align: center;">3 scallions, white and green parts, chopped</li>
<li style="text-align: center;">1/2 c. sunflower sprouts or microgreens</li>
<li style="text-align: center;">1 c. cooked brown rice</li>
<li style="text-align: center;">1 large avocado, peeled, pitted and cubed</li>
<li style="text-align: center;">1/3 c. roasted and salted sunflower seeds</li>
</ul>
<ol>
<li>Preheat the oven to 375°F. Line a small roasting pan with tinfoil and place the portobello mushrooms in it. Rub both sides with the sesame oil and with sea salt and black pepper. Place them gill side up on the roasting pan and drizzle with the soy sauce. Roast until soft and collapsing, about 15-18 minutes. Remove from the pan and thinly slice.</li>
<li>While the mushrooms are roasting, prepare the kale slaw. Finely chop the kale into slivers, then toss with the carrot and scallions. Dress with the tahini citrus dressing to taste, rubbing the dressing into the kale to help tenderize it. Add the sprouts to the salad just before serving.</li>
<li>To assemble the bowls, divide the brown rice between two bowls. Top with a generous portion of the kale slow, 1 of the sliced portobellos, and half the cubed avocado. Sprinkle with sunflower seeds and serve.</li>

To be perfectly honest, I&#8217;d never heard of Graeter&#8217;s &#8211; they&#8217;re more of a midwestern brand and we have plenty of great creameries in New England &#8211; but I said yes anyways, because, well, I really love ice cream. Like, more than most people, I think. I didn&#8217;t make any commitment to writing about the new flavors, but after my first few bites, I knew I would have to share, because it would have been a crime not to. It&#8217;s really good stuff. I&#8217;m a particular fan of the Salted Caramel Truffle Gelato, which I savored two spoonfuls at a time, straight out of the pint, every night for a good two weeks. It&#8217;s fabulously soft and creamy and richly flavored, and although I&#8217;m not sure I could swallow the $10/pint cost of <a href="http://www.graeters.com//shop-online/ice-cream/graeter-s-selections">ordering it online</a>, if I ever see some in a store near me, I&#8217;m stocking up immediately.</p>

<p>I decided to share this delicious new discovery with you in the form of a sundae. I mean, if the ice cream is &#8220;A Little Less Indulgent,&#8221; that just means you have an excuse to douse it in caramel sauce, right? This sauce is inspired by a dinner we had recently at <a href="http://www.oleanarestaurant.com/">Oleana</a>, a Middle Eastern mezze restaurant in Cambridge that&#8217;s nearly impossible to get a reservation at (at least by Boston standards). We had a lot of delicious dishes that night, but the most memorable one for me was the dessert: Turkish-style Profiteroles with Sesame Cashew Caramel and Sesame Halva. It was amazing, and I couldn&#8217;t get over how addictive the sesame caramel sauce was, so I wanted to try making it at home. It ended up coming out just how I wanted to, so now I might have to make caramel this way all the time. Adding tahini to the caramel makes it that much more unctuous and satisfying, and it cuts the sweetness with its deep savory flavor. But as much as I love the sauce, I think the real star of the show might have been the Salted Sesame Butter Brittle, which I decided to make at the last minute to add crunch, and more sesame flavor. It&#8217;s a Ming Tsai recipe, and Ming Tsai is pretty much infallible in my eyes &#8211; this recipe was no exception. I was a little concerned by how opaque and soft the caramel mixture looked at first, and how long it took to color, but as soon as I bit into the hardened candy I knew I never should have doubted. It&#8217;s more like sesame toffee, really, and I made myself a little bit sick I ate so much of it. Lesson learned. Maybe. All together &#8211; the ice cream, the tahini caramel, the sesame butter brittle &#8211; it was a solidly delicious dessert.</p>

<li style="text-align: center;">2 TBS crumbled Salted Sesame Butter Brittle (recipe below)</li>

<li>Assemble. Serve.</li>

<p style="text-align: center;"><strong>Salted Sesame Butter Brittle</strong></p>
<p style="text-align: center;"><em>Recipe from <a href="http://www.ming.com/food-and-wine/recipes/simply-ming-season-7/sesame-butter-brittle.htm">Ming Tsai</a>. Makes 3 cups of brittle pieces.</em></p>
<ul>
<li style="text-align: center;">3/4 c. white sesame seeds</li>
<li style="text-align: center;">1 stick butter</li>
<li style="text-align: center;">1 cup sugar</li>
<li style="text-align: center;">sea salt</li>
</ul>
<ol>
<li>Toast the sesame seeds in a dry skillet over medium heat, stirring frequently, until fragrant, about 2 minutes. Remove from skillet and set aside. Line a baking sheet with parchment paper and set aside.</li>
<li>Add the butter and the sugar to a medium, heavy-bottomed saucepan. Melt over medium heat. Stir just to combine once melted, then stop stirring, and cook until golden brown, about 3-5 minutes. Remove from heat and stir in toasted sesame seeds until well mixed, then pour caramel out onto lined baking sheet. Spread the caramel to 1/8 &#8211; 1/4 inch thickness using the back of a wooden spoon. Sprinkle a little bit of sea salt over the top of the hot brittle. Let cool completely, then break into pieces. Store in an airtight container at room temperature.</li>
</ol>
<p style="text-align: center;"><strong>Tahini Caramel Sauce</strong></p>
<p style="text-align: center;"><em>Inspired by <a href="http://www.oleanarestaurant.com/">Oleana</a>. Makes 1 cup.</em></p>
<ul>
<li style="text-align: center;">1/2 c. sugar</li>
<li style="text-align: center;">3/4 c. heavy cream</li>
<li style="text-align: center;">2 TBS tahini</li>
</ul>
<ol>
<li>Pour the sugar into an even layer in a medium, heavy-bottomed saucepan. Heat over medium heat until the sugar begins to melt and turn amber. At this point, gently stir the melted parts into the un-melted sugar a little bit at a time. If the sugar clumps, stop stirring for a minute to let it melt.</li>
<li>As soon as all the sugar is melted and amber brown, carefully add a little bit of the heavy cream, stirring as you do so &#8211; the cream will make the caramel bubble up violently. One bubbling subsides, add the rest of the cream in a slow stream, stirring as you do, and stopping if it bubbles up too high. Stir until caramel and cream are fully mixed, then remove from heat. Add tahini and stir until it is melted. Let cool slightly, then serve.</li>

<p>My shelf in the fridge is kind of a disaster right now. I love having all these fun condiments available, but when you&#8217;re sharing a fridge with four people (read: four bottles of milk, four cartons of eggs, four bottles of soy sauce, etc.) it can feel like they&#8217;re taking up room for real food. You know, like vegetables, and chicken. The fridge situation is complicated by the fact that tonight, I&#8217;m getting my first delivery from <a href="http://www.blueapron.com/">Blue Apron</a>, with ingredients for 3 delicious meals that will also need to make their way into the fridge. Conundrum.</p>

<p>So when I was thinking about what to make for <a href="http://greatist.com/">Greatist </a>this week, I knew it couldn&#8217;t require anything that wasn&#8217;t already in my fridge/freezer/pantry. As I thought about it, I realized that this is a way I should try to eat more often &#8211; using up what I have instead of always running out to get something new in order to make something just so. It&#8217;s less wasteful. So I mixed up a delicious tahini, soy sauce, and honey sauce, marinated some chicken I had waiting in the freezer in it, added some blanched Chinese broccoli, and cooked it all up in a frying pan with rice. It came out amazing &#8211; sweet and salty and satisfying &#8211; and just goes to show you that a good sauce can go a long way! <p>I wanted to ask &#8211; how were everyone&#8217;s Valentine&#8217;s Days? Mine was just right. Trevor brought me flowers (yellow, my favorite) and chocolate and 9 little airplane bottles of booze with 9 accompanying packets of hot chocolate &#8211; boy knows how I like to drink. We had planned on going ice skating, but I got home from work too late. Instead, we meandered downtown just to see if we could find space at a bar for a few drinks. We ended up at <a href="http://www.saloondavis.com/">Saloon</a>, a very hipster-esque underground bar/restaurant. They were having a singles Swing Dance night, and it was fun to drink our fancy cocktails and nibble on sliders and watch people. It was even more fun to be with my favorite person and just talk and laugh. I feel so lucky to have that.</p>

I made another batch of these <a title="Snowstorm // Grapefruit Jam and Grapefruit-Ginger Thumbprint Cookies" href="http://katieatthekitchendoor.com/2013/02/13/snowstorm-grapefruit-jam-and-grapefruit-ginger-thumbprint-cookies/">grapefruit and ginger thumbprint cookies</a> (note to self, always make extra dough so you can whip up a batch of these in 10 minutes!), I worked on a spring salad feature for an online magazine (which you&#8217;ll have to wait to hear more about), I&#8217;m in the process of testing out Lindsay of <a href="http://www.loveandoliveoil.com/">Love and Olive Oil</a>&#8216;s new book, <a href="http://www.amazon.com/dp/1594746133/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;camp=0&amp;creative=0&amp;linkCode=as1&amp;creativeASIN=1594746133&amp;adid=13A2XMHEVD024TDE1QNV">Breakfast for Dinner</a>, and I made this roasted carrot and tahini soup, the perfect healthy and tasty treat for an afternoon lunch at home. I&#8217;ve tried a lot of different carrot soups over the past years, and never found one that I liked, until I realized that the trick was in roasting the carrots first. Now, I use this technique with most vegetable puree-type soups that I make. This particular soup was inspired by <a href="http://smittenkitchen.com/blog/2013/01/carrot-soup-with-tahini-and-crisped-chickpeas/">Smitten Kitchen</a> &#8211; I used slightly different amounts and spices, I roasted the carrots instead of boiling them, and I went for a yogurt-tahini sauce instead of a thinner tahini-lemon sauce, but the gist of the two recipes is basically the same. The flavors are lovely and bright, the puree smooth and the crunchy spiced chickpeas addictive. I might just have another bowl for dinner.</p>

<p style="text-align: center;"><strong>Roasted Carrot and Tahini Soup with Chickpeas</strong></p>
<p style="text-align: center;"><em>Inspired by <a href="http://smittenkitchen.com/blog/2013/01/carrot-soup-with-tahini-and-crisped-chickpeas/">Smitten Kitchen</a>. Serves 3-4.</em></p>
<ul>
<li style="text-align: center;"><span style="line-height: 15px;">1 lb. carrots, peeled and chopped into 1/2 inch slices</span></li>
<li style="text-align: center;">4 TBS olive oil, divided</li>
<li style="text-align: center;">coarse sea salt, to taste</li>
<li style="text-align: center;">1 small onion, peeled and diced</li>
<li style="text-align: center;">4 cloves garlic, peeled and minced</li>
<li style="text-align: center;">1/4 tsp ground coriander</li>
<li style="text-align: center;">1/8 tsp red pepper flakes</li>
<li style="text-align: center;">3 c. chicken broth</li>
<li style="text-align: center;">1 1/2 c. cooked chickpeas, or canned chickpeas, drained of their liquid</li>
<li style="text-align: center;">1/4 tsp ground cumin</li>
<li style="text-align: center;">1/4 tsp paprika</li>
<li style="text-align: center;">juice from 1/2 lemon</li>
<li style="text-align: center;">1 6-oz. container plain Greek yogurt</li>
<li style="text-align: center;">4 TBS tahini</li>
</ul>
<ol>
<li>Preheat oven to 400°F. Toss the carrots with 2 TBS of the olive oil and sprinkle with salt. Roast the carrots for 25 minutes, flipping once, after 15 minutes of cooking.</li>
<li>About 5 minutes before the carrots are done, heat 1 TBS of the remaining olive oil in a large pot over medium heat. Add the diced onion, and saute for 3 minutes, or until beginning to soften. Add the minced garlic, coriander, and red pepper flakes and saute for 2 minutes longer, until the garlic and spices are fragrant. Add the roasted carrots to the pot along with the chicken broth. Bring to a boil, then let simmer for 10 minutes.</li>
<li>Add the cooked chickpeas to the same roasting pan you used for the carrots. Add the last 1 TBS of olive oil, to the chickpeas, then sprinkle with the cumin, paprika, and sea salt. Toss to coat evenly, then roast for 15 minutes.</li>
<li>Blend the soup in a blender until it is a smooth puree. If it is too thick, add more broth to the blender. Add the lemon juice to the hot soup and pulse a few times to incorporate. Taste for seasoning and add more lemon or salt if necessary.</li>
<li>Spoon the soup into bowls. Top each with a large spoonful of yogurt and 1 TBS of tahini, as well as a handful of the roasted chickpeas.</li>
