<p>Every year I seem to end up posting Christmas recipes just days before Christmas is here. December is a busy month, and although I have the best of intentions to share delicious, festive recipes with you all month long, I always seem to get overwhelmed by the whirl of wrapping up projects and preparing for all the events and tasks that go along with the holidays. So here I am, two days before Christmas, with three Christmas cookie recipes for those of you who are planning on some last minute baking or some really early planning for next year.</p>

<p>Actually, if I&#8217;m being fully honest with you, this year is a bit different. I&#8217;ve been carving out more time to prepare for Christmas and here I sit, two days to go, with all my presents purchased and wrapped, three kinds of cookies in the freezer, two Christmas movies (and four of six Star Wars movies) watched, one party successfully thrown and several others attended. In fact, I&#8217;ve had these cookies baked and photographed for the past few weeks, I&#8217;ve just been having trouble finding the right words to accompany them. I&#8217;m trying to be more purposeful with the words I share on this space &#8211; less fluff and more meaning, and better use of the excellent education I&#8217;ve been so fortunate to receive (looking back at hastily written posts makes my former straight-A English student self cringe).</p>

<p>Earlier versions of this post, the ones that went unpublished and sounded eerily reminiscent of past<a href="http://katieatthekitchendoor.com/2011/12/23/last-minute-christmas-cheer/"> </a>Christmas posts, were filled with thoughts of stress and to-do lists and cold dark days, which is so counter to the idea of Christmas spirit that I couldn&#8217;t bring myself to publish them. But I woke up this morning, the first morning of my brief 5-day vacation, knowing what I wanted to say. So here it is: Rest. Take a deep breath. Stop worrying and enjoy being with the people you love, just for the next few days. Throw out your to-do list and congratulate yourself for everything you&#8217;ve already done. Celebrate Christmas with a calm and joyful heart. Drink a little too much wine or have an extra cookie and don&#8217;t stress about a few extra pounds. Take a break, because next year will be here before you know it and you <em>need</em> to rest every once in a while. I write these things with myself in mind more than anything &#8211; it&#8217;s so easy for me to forget to enjoy myself, even when I&#8217;m in the midst of something that should be a wonderful experience. So for the next few days, I&#8217;m going to focus on just that &#8211; enjoying myself.</p>

<p>And because I promised you cookies, here&#8217;s three. First, chocolate peppermint snowballs, dotted with chocolate chips and rolled in crushed candy canes. Second, soft and gently-spiced speculoos stars, dipped in white chocolate and colored sprinkles. Third, delicate, lacy florentines with candied orange peel, candied ginger, almonds, and a drizzle of dark chocolate, the most elegant holiday cookies you&#8217;ll put on your table. They&#8217;re all lovely, although I have a soft spot for the speculoos, which are like a gentler version of gingerbread. And with that, I&#8217;m signing off for a few days, hopefully to take my own advice and come back feeling refreshed and calm. Merry Christmas!</p>

<p style="text-align: center;"><em>Recipe adapted slightly from <a href="http://www.epicurious.com/recipes/food/views/chocolate-chip-and-peppermint-crunch-crackles-107523" target="_blank">Bon Appetit</a>. Makes about 36 cookies.</em></p>
<ul>
<li style="text-align: center;">8 oz. bittersweet chocolate, roughly chopped</li>
<li style="text-align: center;">1 1/2 oz. unsweetened chocolate, roughly chopped</li>
<li style="text-align: center;">1 stick butter, cut into quarters</li>
<li style="text-align: center;">1/2 c. finely crushed peppermint candies, plus more for decorating</li>
<li style="text-align: center;">6 TBS sugar</li>
<li style="text-align: center;">3 eggs</li>
<li style="text-align: center;">2 tsp vanilla extract</li>
<li style="text-align: center;">1 tsp peppermint extract</li>
<li style="text-align: center;">1 1/2 c. flour</li>
<li style="text-align: center;">3/4 tsp baking powder</li>
<li style="text-align: center;">3/4 c. milk chocolate chips</li>
</ul>
<ol>
<li>Place bittersweet chocolate, unsweetened chocolate, and butter into a medium saucepan. Heat over low heat, stirring, until chocolate and butter are completely melted. Remove from heat and stir in 1/2 c. crushed peppermint candies and sugar. Cool to room temperature, stirring occasionally.</li>
<li>Whisk eggs into chocolate mixture one at a time, then whisk in vanilla extract and peppermint extract. In a medium bowl, combine flour and baking powder, then stir into chocolate mixture. Stir chocolate chips into mixture. Cover batter and chill for 30 minutes, or until easy to roll into firm balls.</li>
<li>Preheat oven to 325°F. Roll cookie dough into balls that are approximately the size of a ping pong ball. Place on cookie sheets and bake until puffed and cracked on top, about 15 minutes. Remove from oven and let stand for 5 minutes, then sprinkle with additional crushed peppermint candies or powdered sugar.</li>

<ul>

<li style="text-align: center;">1 TBS ground cinnamon</li>
<li style="text-align: center;">1 1/2 tsp ground ginger</li>
<li style="text-align: center;">1/2 tsp ground cloves</li>
<li style="text-align: center;">1/2 tsp baking powder</li>
<li style="text-align: center;">1/2 tsp salt</li>
<li style="text-align: center;">1 1/4 c. dark brown sugar</li>
<li style="text-align: center;">1 stick butter, room temperature</li>
<li style="text-align: center;">1 egg</li>
<li style="text-align: center;">4 oz. high quality white chocolate, cut into pieces</li>
<li style="text-align: center;">colored sugar sprinkles</li>
</ul>
<ol>
<li>In a large bowl, whisk together flour, cinnamon, ginger, cloves, baking powder, and salt. Set aside. In another bowl, beat brown sugar and butter until fluffy. Beat in egg. Add flour mixture to wet ingredients a few scoops at a time, beating to incorporate flour between additions. Dough will be slightly dry. Divide dough in two, flattening into two large rectangles. Wrap each rectangle in plastic wrap and refrigerate 1 hour.</li>
<li>Preheat oven to 350°F. Lightly flour a work surface and roll out one of the dough rectangles to about 1/4 inch thick. Use cookie cutter to cut out stars and transfer to a baking sheet lined with parchment paper. Repeat with remaining dough, re-rolling dough as necessary. Bake cookies until edges begin to darken, about 8 minutes. Transfer to a rack to cool.</li>
<li>Melt the white chocolate in the microwave on low power, stopping to stir every 20 seconds, until the chocolate is runny. Do not overheat or chocolate will seize and you will need to start over. Brush or drizzle the chocolate onto the cookies, then sprinkle with the colored sugar. Let chocolate cool, then store the cookies between waxed paper sheets in the fridge or freezer until ready to serve.</li>

<ul>
<li style="text-align: center;">3 oranges, scrubbed</li>
<li style="text-align: center;">1 c. plus 4 TBS sugar, divided</li>
<li style="text-align: center;">1/2 c. water</li>
<li style="text-align: center;">1/2 c. plus 2 TBS heavy cream</li>
<li style="text-align: center;">1/4 c. brown sugar</li>
<li style="text-align: center;">2 TBS butter</li>
<li style="text-align: center;">2/3 c. sliced almonds, toasted</li>
<li style="text-align: center;">1/4 c. flour</li>
<li style="text-align: center;">2 TBS finely chopped crystallized ginger</li>
<li style="text-align: center;">4 oz. bittersweet chocolate, chopped</li>
</ul>
<ol>
<li>To make the candied orange peel, peel the orange using a vegetable peeler, being careful to remove only the orange part of the peel and not the white pith. Finely chop enough of the orange peel to measure 1 TBS and set aside for the cookie batter. Place the remaining peel in a saucepan and cover with water. Bring to a boil, cook for 2 minutes, then drain. Add 1/2 cup sugar and 1/2 cup water to the orange peel and bring to a boil, stirring frequently. Boil for 5 minutes, then drain, reserving the orange syrup for another use. Sprinkle 2 TBS of sugar on a plate or other flat surface, and transfer the candied peel to the sugar. Sprinkle another 2 TBS of sugar on top of the peel. Let dry for 20 minutes, then roughly chop enough candied peel to measure 2 TBS.</li>
<li>Preheat the oven to 350°F. Line two baking sheets with aluminum foil and spray generously with cooking spray (this is very important, as cookies will stick to aluminum foil if not prepared properly. You can also use silpat mats but you will need to let cool for longer before removing the cookies).</li>
<li>In a medium saucepan, combine cream, remaining 1/2 cup sugar, brown sugar, and butter. Bring to a simmer, stirring constantly, then add the 1 TBS of reserved un-candied orange peel, the 2 TBS of candied orange peel, the toasted almond, crystallized ginger, and flour. Bring to a boil, stirring constantly, then remove from the heat.</li>
<li>Use a tablespoon to scoop the warm batter onto the prepared pans, spacing cookies 3 inches apart as they will spread a lot. You can expect to fit about 6-8 cookies per pan. Place pans in the oven and bake until edges begin to crisp, about 10-12 minutes. Slide foil off sheets and cool cookies on foil, then carefully peel the cookies from the foil. Repeat until you have used all the batter.</li>
<li>Place the chocolate in a microwave-safe bowl and melt on low power, stopping to stir every 20 seconds, until the chocolate is runny. Do not overheat or chocolate will seize and you will need to start over. Use a spoon to drizzle the chocolate on top of the cooled florentines. Let chocolate harden then transfer cookies to fridge for storage.</li>

<p>I like this time of year more and more as I get older. I&#8217;m not talking about the holiday season. That I&#8217;ve always loved, and actually the holidays seem to become a little more stressful and a little less joyful every year &#8211; but I&#8217;ll save that topic for another day. I&#8217;m talking about the time between the holidays, the normal, early winter days.</p>
<p>I typically approach winter with a feeling of dread. January and February are usually so HARD for me &#8211; it&#8217;s dark, the snow and the cold the past few years have been relentless, my skin gets so dry that I can&#8217;t sleep, and my emotions get all out of whack. Last year I tried to combat it with an end of <a href="http://katieatthekitchendoor.com/2015/02/09/usvi-travelogue-pina-sunrise-cocktail/">January trip to the USVI</a>, which helped a little, but February, and even March, to be honest, were brutal. Thankfully, we&#8217;ll be skipping a solid 6 weeks of that awful deep winter time this year &#8211; thanks to my job, it seems I&#8217;ve become a snowbird at a young age.</p>

<p>But December is a different story. I vividly remember walking home from work one night in mid-December last year &#8211; it was cold, but very bright. After I passed through the hubbub of Harvard Square, it suddenly felt deeply quiet, the kind of quiet that is rare in a city. The kind of quiet that I associate with being in the woods, with a soft blanket of snow reflecting the moon into the night. The moon was full, the trees, stripped of their leaves, left stark echos against the blue-black sky. And I realized, all at once, that I love that quiet, that stillness. It&#8217;s a stillness that only comes with true cold, with the earth settling into sleep. So there is a part of winter that I love, and it felt significant to me to recognize this, to embrace something I was dreading.</p>
<p>These past few weeks I&#8217;ve been experiencing the same thing &#8211; a feeling of calm on cold, moonlit evenings, and on brisk, crisply sunny mornings. Enjoying the quiet as I wait for the bus in the early morning light, watching my breath form puffy clouds in front of me. It&#8217;s a nice counterpoint to the chaotic joy of the holidays.</p>

<p>As you may recall, another reason I can get behind winter is warm cocktails. Over the years I&#8217;ve posted a number of my favorite recipes here, like this <a href="http://katieatthekitchendoor.com/2013/11/11/holiday-cocktails-burnt-sugar-hot-buttered-rum/" target="_blank">Burnt Sugar Hot Buttered Rum</a> and this <a href="http://katieatthekitchendoor.com/2013/11/02/book-club-winter-cocktails-nutella-melt-with-frangelico/" target="_blank">Nutella Melt</a>. Last year I did a <a href="http://katieatthekitchendoor.com/2014/11/22/12-festive-winter-cocktails/">little round-up</a> of all my favorite winter cocktails&#8230; which it seems I might have to update soon. My first contribution to that list for this season is this Mulled Spiked Cider with Port and Cranberries, which also has a little red wine, apples, and clementines. Like many of my favorite drinks, it&#8217;s inspired by <a href="http://cookinandshootin.com/" target="_blank">Maria and Tara</a>&#8216;s genius book <em><a href="http://www.amazon.com/gp/product/1594746419?creativeASIN=1594746419&amp;linkCode=w00&amp;linkId=Q6YFE3JY2KAYAL74&amp;ref_=as_sl_pc_qf_sp_asin_til&amp;tag=katatthekitdo-20" target="_blank">Winter Cocktails</a></em>, which pretty much becomes a fixture in my kitchen at this time of year. This warm, sweet, boozy drink was the perfect thing to warm us up over the lazy long weekend&#8230; and the leftovers are just the thing to look forward to coming home to after a stressful weekday.</p>

<ul>
<li style="text-align: center;">2 whole cinnamon stick</li>
<li style="text-align: center;">2 whole star anise</li>
<li style="text-align: center;">10 whole cloves</li>
<li style="text-align: center;">3 c. apple cider</li>
<li style="text-align: center;"><span style="line-height: 1.5;">2 clementines, scrubbed and cut into thin slices</span></li>
<li style="text-align: center;">1/2 c. fresh cranberries</li>
<li style="text-align: center;">1 apple, cored, peeled and cut into 1/4 inch cubes</li>
<li style="text-align: center;">1/4 c. white sugar</li>
<li style="text-align: center;">2 c. red wine</li>
<li style="text-align: center;">3/4 c. tawny port</li>
<li style="text-align: center;">brandy or Bourbon to taste, optional</li>
</ul>
<ol>
<li>Add the cinnamon, star anise, and cloves to a large saucepan or dutch oven and toast over medium heat until fragrant, about 1 minute. Add the apple cider, clementines, cranberries, apple, and sugar and gently simmer until fruit is soft, about 10 minutes. Add the red wine and port and continue heating just until the drink begins to steam, then remove from the heat and cover to keep warm. Ladle into mugs to serve, removing any cloves that you see as you do so. Adding a splash of brandy or Bourbon to each if you like your drinks a little stronger!</li>

Riding the wave of her success in the restaurant world, Renee has just released a cookbook, <a href="http://www.amazon.com/Boat-Whale-Walrus-Menus-Stories/dp/1570619263/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=WILKRN6UWBHLQIOZ&amp;creativeASIN=1570619263"><em>A Boat, A Whale, &amp; A Walrus</em></a>, that documents the evolution of her career and cooking style. The book, which is organized into seasonal menus such as a 4th of July crab feast and an autumnal Normandy dinner, is a lovely ode to simple meals designed to share with friends and family. Something about the book feels unhurried to me, perhaps because the structure is fluid and Renee meanders from a lengthy description of smoked salmon to a series of short-and-sweet &#8220;winter ingredients&#8221; recipes to a profile of her butcher to a short list of favorite holiday wines, all within a few pages of one another. Adding to the unhurried effect is the soft feel of the design, from the thick off-white paper to the muted, soft-focus images. The food is not fancy or overdone, but simple and refined &#8211; recipes to make at home and share, like a mushroom and leek strata for a winter brunch or a pot of manila clams, served with wine, creme fraiche, and herbs, as the centerpiece to a spring dinner. Some of the best recipes are hidden away on the seasonal ingredients pages, which feature short paragraph-style recipes for a handful of ingredients: in spring, favas (grilled whole favas over ricotta with honey), nettles (slow-braised nettle soup), and sorrel (salmon with sorrel cream sauce); in fall, brussels sprouts (brussels sprout carbonara with cayenne), eggplant (pickled baby eggplant), and radicchio (radicchio and comte tart). Of course, the fishing and foraging vibe of the Pacific Northwest comes through strongly, and mussels, salmon, clams, crab, mushrooms, and hearty greens all receive their due.</p>

<p><strong>The Food: </strong>I&#8217;ve bounced all over the place trying to decide what recipe I wanted to make for you from this book. First it was the Celery Root and Celery Leaf Salad with Pomegranate and Meyer Lemon Vinaigrette, but then after I purchased the ingredients Trevor told me he&#8217;s allergic to raw celery root, so that ship sailed. I toyed with the idea of making the Martinis with Anchovy-Stuffed Olives and Preserved Lemon for New Year&#8217;s Eve, but I&#8217;m really just not a gin person (although <em>that</em> recipe Trevor would absolutely love, so maybe I&#8217;ll make him one some night soon). Same goes for the Pickled Mussel Toasts with Garlic Aioli &#8211; sounds delicious if you eat mussels, which I don&#8217;t. I flipped through the pages of the book countless times, hemming and hawing. In the end, the recipe that called to me the most was this Molasses Spice Cake with Candied Orange Peel. Yes, it&#8217;s 100% a perfect Christmas recipe. And yes, Christmas Day has already passed. But we have a lot more cold winter mornings ahead of us and this cake is just as appropriate for January or February as it is for December. Besides, Christmas technically lasts until January 6th, so we&#8217;re having spice cake.</p>

<p>This cake is a rustic, bundt-pan affair. It&#8217;s dark and spicy, flavored with espresso, molasses, mustard, and black pepper, then glazed with orange juice and topped with candied orange peel. Trevor described it as <em>elemental</em> and I think that word is a good fit. It must be served with a healthy dollop of whipped cream, for the contrast of the cream&#8217;s sweet lightness to the cake&#8217;s spice and density. The only tricky parts about making it are adding a full cup of coffee to a butter-based butter without it separating (just go slowly) and perhaps candying the orange peel, although really that&#8217;s rather straightforward too. Even if you&#8217;ve put away your flour and sugar for this year, bookmark this one for the next time you need a cake that&#8217;s rich and wintry.</p>

<ul>
<li style="text-align: center;">2 1/2 c. AP flour, sifted</li>
<li style="text-align: center;">2 tsp baking soda</li>
<li style="text-align: center;">1 1/2 tsp coarse kosher salt</li>
<li style="text-align: center;">1TBS ground ginger</li>
<li style="text-align: center;">2 tsp ground cinnamon</li>
<li style="text-align: center;">1/2 tsp dry mustard</li>
<li style="text-align: center;">1/2 tsp ground black pepper</li>
<li style="text-align: center;">10 TBS butter, softened, plus more for the pan</li>
<li style="text-align: center;">3/4 c. plus 1 c. sugar, divided</li>
<li style="text-align: center;">2 eggs</li>
<li style="text-align: center;">1 c. molasses</li>
<li style="text-align: center;">4 shots espresso, cooled, plus whole milk to equal 1 c. liquid total</li>
<li style="text-align: center;">2 organic navel oranges, washed on the outside</li>
<li style="text-align: center;">freshly whipped cream, for serving</li>
</ul>
<ol>
<li>Preheat the oven to 325°F. Thoroughly butter and flour a bundt pan, tapping out any extra flour. I find it easiest to use a tablespoon of melted butter and a pastry  brush to brush the butter into all the nooks of the pan.</li>
<li>In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnnamon, mustard and pepper until evenly combined. Set aside.</li>
<li>In a large bowl or a stand mixer, beat the softened butter until pale and fluffy. Add 3/4 cup of the sugar and beat vigorously until sugar is fully incorporated, at least 1 minute. Beat in the eggs one at a time, mixing between additions. Beat in the molasses until it is fully incorporated. Slowly drizzle in the espresso and milk mixture, mixing the batter the whole time. If the batter begins to separate, stop the addition of the coffee and add a little bit of the flour mixture to the batter to help work the butter back into the batter, then continue mixing in the coffee.</li>
<li>Add the dry ingredients to the flour and stir until just incorporated. Batter should be fairly smooth. Spoon the batter into the prepared bundt pan and bake until a toothpick inserted in the center comes out clean, about 45-55 minutes. Let the cake cool in the pan for 10 minutes, then invert the cake onto a cooling rack.</li>
<li>To make the candied oranges, use a vegetable peeler to cut the peel from the oranges, being careful to remove only the orange peel and not the white pith underneath. Cut the peel into strips 1/4 inch wide, then place the peel in a small saucepan and cover with water. Boil the peel for 5 minutes, then drain. Squeeze the juice from the oranges into a cup, adding water to equal 1 cup of liquid. Add the orange juice and the remaining 1 cup of sugar to the saucepan with the orange peel. Bring to a simmer over low heat, and simmer until peel is shiny and almost translucent, about 10 minutes. Don&#8217;t turn the heat up too high or the liquid may boil over. Remove the candied peel with a spoon and let dry on a piece of parchment paper. Use the orange syrup in which you candied the peel to glaze the cake: brush the glaze on the cake while the cake is still warm, letting the cake dry for 2-3 minutes after each coat of glaze. Do this until all the glaze has been used and the cake is shiny. Serve the cake with the candied orange peel and freshly whipped cream.</li>

<p><em>If halloween were a more elegant holiday than it is, this is what I would serve at halloween parties &#8211; smooth, silky creme brulee with a hint of roasted pumpkin and fall spices, topped with spicy garam masala pumpkin seeds. As it is, we&#8217;ll save this for fancier events and stick to the garish chocolate and peanut butter combinations tonight. I&#8217;m a creme brulee fiend &#8211; I can never resist ordering it for dessert when we&#8217;re out for dinner &#8211; so when Trevor made this amazing version at home he won me over all over again. This recipe is all him, so I&#8217;ll let him tell you its story&#8230;</em></p>
<p>A couple of months ago, when we started cutting into our very first home-grown Sugar Pie pumpkins, I decided I really wanted to do something besides endless pies with them. My first thought was ‘Oh! pumpkin creme brulee!’ The pumpkins we grew have a lot of natural sweetness, and would be perfect for a light creme brulee. A quick google, however, revealed that I wasn&#8217;t the first, or even the fifth person to think of it. The internet is full of pretty well-established pumpkin creme brulee recipes.</p>

<p>Demoralized, I decided to play with the flavors of roasted pumpkin seeds. Rather than salt and oil, I settled on the sweet, caramel-y flavors of Indian spices with a little kick. Cumin, masala, and chili powder paired nicely with the sweetness of the ginger and the nutty seed flavor. So I made these once, and they were gone in about a day, (mostly my fault).</p>
<p>I figured that the crunchy, crystallized seeds would be the perfect garnish for a bruleed crust, and would add a little something different to the pumpkin creme brulee recipes that were already out there. So with the seeds as a starting point, I threw some darker, intense spices into the milk while making the custard. Adding too much pumpkin to a creme brulee recipe is problematic for the final set of the custard, so the autumn flavor really has to come from the spices. The amounts aren&#8217;t enough to hit you over the head, but it’s definitely more than your classic vanilla bean dessert. It turned into a classy dessert with a little something extra, and I think it made Katie pretty happy. So it’s all good.</p>

<p style="text-align: center;"><em>Makes 1 cup of seeds.</em></p>

<li style="text-align: center;">1 cup pumpkin seeds</li>
<li style="text-align: center;">½ cup granulated sugar</li>
<li style="text-align: center;">⅛ tsp cumin</li>
<li style="text-align: center;">1 tsp garam masala</li>
<li style="text-align: center;">⅛ tsp ginger</li>
<li style="text-align: center;">½ tsp chili powder</li>
<li style="text-align: center;">1 tsp sea salt</li>
<li style="text-align: center;">1 ½ tbsp canola oil</li>
</ul>
<ol>
<li>Preheat oven to 350°F. Combine sugar, salt and spices.</li>
<li>Combine pumpkin seeds and oil in a separate bowl, stirring to coat seeds completely. Add half of the sugar mixture to the seeds and stir to coat.</li>
<li>Spread the seeds evenly over  a baking sheet and bake for 30 min, stirring every 8-10 minutes, until the seeds just begin to brown, and become crunchy.</li>
<li>Before the seeds begin to cool, add the remaining sugar mixture, and stir to coat.</li>

<li style="text-align: center;">½ cup whole milk</li>
<li style="text-align: center;">⅛ tsp ground ginger</li>
<li style="text-align: center;">3 whole cloves</li>
<li style="text-align: center;">⅛ tsp ground cardamom</li>
<li style="text-align: center;">⅛ tsp ground cinnamon</li>
<li style="text-align: center;">½ cup granulated sugar</li>
<li style="text-align: center;">4 egg yolks</li>
<li style="text-align: center;">¼ cup pumpkin puree</li>
<li style="text-align: center;">4 cups boiling water</li>
<li style="text-align: center;">⅓ cup white sugar (for sprinkling)</li>
<li style="text-align: center;">⅓ cup turbinado sugar (for sprinkling)</li>

<ol>
<li>Preheat the oven to 325°F. Combine milk and cream along with the spices in a small sauce pan and heat over medium heat until the mixture begins to steam heavily and give off a nutty aroma. Do not let the mixture come to a boil.</li>
<li>Remove from heat and allow the milk to steep for 15 minutes. In a small bowl, combine the granulated sugar and egg yolks and whisk until smooth.</li>
<li>Strain the whole spices and any skin that formed from the milk mixture. Add the strained milk to the egg yolks and sugar, stirring constantly. Once combined, add the pumpkin puree and mix until smooth.</li>
<li>Divide the mixture between four creme brulee dishes, and set in a large baking dish. Fill the baking dish with boiling water so that the water reaches to just below the lip of the creme brulee dishes. Bake in the oven for 30-40min, checking after 30 minutes for done-ness. The custards should be firm, but jiggly. Refrigerate for 3 hours or overnight, covering with plastic wrap, but ensuring the wrap does not touch the surface of the custard.</li>
<li>Combine the two sprinkling sugars in a small bowl, and remove the dishes from the refrigerator, uncovering them carefully. Spread the sugars evenly in an ⅛” layer over the top of the custard, taking care not to disturb the surface.</li>
<li>Move a lit pastry torch over the surface of the creme brulee such that the tip of the blue flame is about 1 ½” away from the surface of the sugar. Keep the torch moving over the sugar until it begins to bubble slightly and turn a light brown.</li>
<li>Allow the sugar to cool. Sprinkle masala pumpkin seeds over the top and serve immediately.</li>

<p>Lately we&#8217;ve been making meals where almost every ingredient has come out of our garden, and it&#8217;s incredibly satisfying. With the cooler weather, we&#8217;ve been able to turn on our oven and stovetop again, saving us from daunting tasks like eating 20 gorgeous heirloom tomatoes raw before they start to mold (a 3 day window) and finding ways to use up pumpkin without the help of a long, slow, caramelizing roast. The first meal where nearly everything was homegrown was a Mediterranean Shepherd&#8217;s Pie &#8211; we had grown the garlic, the onion, the tomatoes, the eggplant, the zucchini, and the potatoes. Really the only ingredients that we hadn&#8217;t grown or made were the cheese and the ground beef. And now, we have this gorgeous yellow curry, packed full of vegetables taken straight from the ground &#8211; we even grew the cayenne chilies that give it its kick!</p>

<p>This yellow curry is relatively quick, easy, and deeply nourishing. It&#8217;s made from only vegetables, spices, and water, and I was skeptical about how much flavor I&#8217;d be able to coax out of such a limited number of ingredients. No rich and creamy coconut milk? No savory chunks of lamb? But the carrot and pumpkin deliver sweetness, the tomatoes acidity, and the potatoes break down into a thick, rich sauce that soaks up all the flavor of the toasted spices. It&#8217;s a lovely curry. Of course, I can&#8217;t take much credit for it, beyond, perhaps, the addition of the tomatoes, as it&#8217;s adapted from <a href="http://www.amazon.com/gp/product/1579652522/ref=as_li_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1579652522&amp;link_code=as3&amp;tag=katatthekitdo-20&amp;linkId=BK3XYA4NWAK7Y6OW"><em>Mangoes and Curry Leaves</em></a>, my Indian cooking bible. I love Indian food and have been attempting it at home since I first started cooking,  but it wasn&#8217;t until I took a step back and took time to learn the fundamentals that I started to turn out satisfying Indian dishes. Now my repertoire is slowly building &#8211; I love these <a title="Spiced Potato and Pea Parathas" href="http://katieatthekitchendoor.com/2014/02/12/spiced-potato-and-pea-parathas/">potato and pea parathas</a> and this <a title="Monthly Fitness Goals: February // Pakistani Chickpea Pulao with Sweet Hot Date-Onion Chutney" href="http://katieatthekitchendoor.com/2014/02/10/monthly-fitness-goals-february-pakistani-chickpea-pulao-with-sweet-hot-date-onion-chutney/">chickea pulao</a>, and now I can add this adaptable vegetarian curry to the list as well.</p>

Serves 4.</em></p>
<ul>
<li style="text-align: center;">3 TBS vegetable oil</li>
<li style="text-align: center;">1/2 tsp turmeric</li>
<li style="text-align: center;">1/4 tsp cayenne</li>
<li style="text-align: center;">1 tsp ground coriander</li>
<li style="text-align: center;">1/4 tsp mustard seeds</li>
<li style="text-align: center;">1/4 tsp cumin seeds</li>
<li style="text-align: center;">1/4 tsp fennel seeds</li>
<li style="text-align: center;">1/4 tsp fenugreek</li>
<li style="text-align: center;">2 bay leaves</li>
<li style="text-align: center;">2 medium carrots, peeled and cut into 1/4 inch dice</li>
<li style="text-align: center;">2 c. cubed (1/4 inch dice) Yukon gold potatoes</li>
<li style="text-align: center;">2 c. cubed (1/2 inch dice) pumpkin</li>
<li style="text-align: center;">1 large yellow tomato, cored and cut into 1/2 inch chunks</li>
<li style="text-align: center;">large handful of green beans, trimmed and cut into 1/2 inch lengths</li>
<li style="text-align: center;">1 fresh cayenne chile, sliced into thin rings</li>
<li style="text-align: center;">1 1/2 c. water</li>
<li style="text-align: center;">1 tsp salt</li>
<li style="text-align: center;">2 tsp sugar</li>
<li style="text-align: center;">juice from 1/2 fresh lime</li>
</ul>
<ol>
<li>Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add all of the spices and bay leaves at once, and stir-fry in the hot oil until the mustard seeds start to pop and sizzle. Add the vegetables in order listed, stir-frying for 1-2 minutes between each addition. If the vegetables begin to stick to the pan as you are cooking, add a few tablespoons of water to the bottom to deglaze any sticky parts of the pan. Add the fresh cayenne chile and cook for 1-2 minutes longer.</li>
<li>Once you have added all the vegetables, pour the water into the pan and bring to a rapid simmer. Simmer until all vegetables are tender, potatoes and tomato have broken down, and the sauce is thick and spoonable. This should take about 15 minutes-20 minutes. Add the salt, sugar, and lime juice and taste for seasoning, adjusting as necessary. Remove from the heat and serve over rice.</li>

<p>Growing up, ribs were something my father worked on perfecting over infinite summer afternoons. Along with your other excellent suburban traditions, early morning soccer and football in the backyard, grilling was a must during weekends in the summer. We’d absolutely crowd the grill with racks and racks of market-cut beef ribs, trimmed up and spiced with an ever-improving rub. It was always, and still is, an eternity to wait for ribs to be done perfectly. So we’d stand in a circle on his porch and make giant indian smoke signals every time the grill cover came off, checking on coals barely glowing through the supreme pile of meat. Dad would admire the Boston skyline, just visible from his back porch in the neighborhood-on-a-hill, and I can remember needing to sprint around the yard, just to diffuse my excitement. I’m personally ready to eat ribs at the first sizzle of meat on grill, and to this day, I’m not entirely sure how long it took to cook those massive cuts. But in the end, I’m grateful it helped stretch out those Saturdays in summer.</p>

<p>Both my brother and I had our roles in the process; I’d tackle the sauce, while Andrew would handle the rub, and we’d trade off working on sides. My dad would trim up the ribs and handle the art/science of developing the long slow fire, which got perfectly smoky when the fat started dripping. The smells are incredible, and tasting the tenderest bite through a layer of crunchy, smokey caramelization to me is unparallelled. The result was always a consistent, falling of the bone, sweet tender and smokey feast.</p>
<p>I recently spent a very nice long weekend with my dad and my brother and my stepmom, in my dad’s own childhood hometown for a family reunion. Over a bottle of Noah’s Mill and a fair few cigars, the men got down to a little reflecting. Andrew is great in the kitchen and regularly cooks from this website (often providing unsolicited feedback). My stepmom and dad are vegetarians and super accomplished crossfitters, and stronger than I’ll ever be. But, we equally enjoyed those memories of summer Saturdays, and we each were sure it was perfect.</p>
<p>At any rate, now that Katie and I have a grill, I’m making my own attempt at perfection. With the old tricks still fresh in my mind, I’ve been working a rib recipe that’s good enough to share. I’m definitely using some non-traditional flavors, but the philosophy is the same. So this probably isn’t the final product, but I think it’s a pretty good effort, and a good place to reflect on the way.</p>

<p style="text-align: center;"><strong>Guava-Glazed Grilled Ribs</strong></p>
<p style="text-align: center;"><em>A Katie at the Kitchen Door original. Serves 2-3.</em></p>
<p><em>Note: Ribs are like an art project. All times, ingredients, implements and instructions are approximate. This is simply what has been working for me.</em></p>
<ul>
<li style="text-align: center;">1 rack untrimmed  pork or beef ribs, about 4-5lbs. (increase cooking time for larger racks)</li>
</ul>
<p><em>For the rub:</em></p>
<ul>
<li style="text-align: center;">2 tsp fresh ground black pepper</li>
<li style="text-align: center;">2 Tbsp sumac</li>
<li style="text-align: center;">2 tsp salt</li>
<li style="text-align: center;">1 tsp cumin</li>
<li style="text-align: center;">1 tsp cayenne</li>
<li style="text-align: center;">1 tsp smoked paprika</li>
<li style="text-align: center;">1 tsp garlic powder</li>
</ul>
<p><em>For the sauce:</em></p>
<ul>
<li style="text-align: center;">14 oz guava paste</li>
<li style="text-align: center;">½ cup soy sauce</li>
<li style="text-align: center;">¼ cup Worcestershire sauce</li>
<li style="text-align: center;">¼ cup water</li>
<li style="text-align: center;">1 Tbsp Sriracha</li>
<li style="text-align: center;">salt and pepper to taste</li>
</ul>
<ol>
<li>Trim any loose bits from the inside and edges of the rack.</li>
<li>Mix together all seven rub spices in a bowl. Completely cover the rack (and trimmings) with the rub and refrigerate for at least 3 hours and up to 12.</li>
<li>Light grill, maintaining medium heat (300-350°F). Sear ribs on both sides for 5-10 min a side.</li>
<li>Move ribs to the perimeter of the fire and grill for about 2.5 hours, flipping every 30 minutes.</li>
<li>While the ribs are cooking, mix together all the ingredients for the sauce, until smooth. If the guava paste is lumpy, heat sauce gently over medium heat while stirring to help smooth it out.</li>
<li>Just before you are ready to take the ribs off the grill, brush the ribs liberally with the sauce, then allow the ribs to cook for 2-3 minutes a side, monitoring carefully to ensure the sauce does not burn. Remove the ribs from the grill, let rest for 5-10 minutes, then serve.</li>

<p><strong>The Book: </strong>It seems that at least once a year, a cookbook that is more aptly described as an encyclopedia of a particular culture and cuisine is released. <a href="http://www.amazon.com/gp/product/0393050696/ref=as_li_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=0393050696&amp;link_code=as3&amp;tag=katatthekitdo-20&amp;linkId=NPSCR6JUYWWY7A6R">Gran Cocina Latina</a> is a good example, as is <a href="http://www.amazon.com/The-Book-Middle-Eastern-Food/dp/0375405062/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=MBUVIEXQGOZQDUTE&amp;creativeASIN=0375405062">The New Book of Middle Eastern Food</a>, and to a certain extent even Dorie Greenspan&#8217;s <a href="http://www.amazon.com/Around-My-French-Table-Recipes/dp/0618875530/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=JE4EY4ERPPMLDZ3S&amp;creativeASIN=0618875530">Around My French Table</a>. These books are much more than just exciting cookbooks, they&#8217;re reference books for chefs and travelers and budding anthropologists that contain hundreds of classic recipes along with a thorough communication of the culinary culture and history of a particular region of the world. Often these books become instant classics, essential books for any cook seriously interested in learning about other cuisines. This season I have two books of this type in my review pile, and the first is about a very specific place &#8211; the Yucatan peninsula in Mexico. <a href="http://www.amazon.com/gp/product/0292735812/ref=as_li_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=0292735812&amp;link_code=as3&amp;tag=katatthekitdo-20&amp;linkId=DD4G2J5ULOT6FL43">Yucatan: Recipes from a Culinary Expedition</a>, written by David Sterling, is the product of his decades of culinary experience living in the Yucatan while running a cooking school there.</p>

<p>Starting the book knowing nothing about the Yucatan, except that it looks like a nice place to go on vacation, I quickly realized I was in the hands of an expert. I was easily drawn into the narrative of this ideologically isolated peninsula, even when that narrative had nothing whatsoever to do with food. History, geography, biology &#8211; you&#8217;ll get a little bit of everything with this book. Of course, eventually it all ties back to food and cooking, and I don&#8217;t know if there was a single recipe in this book that I wasn&#8217;t interested in trying. The recipes are mostly traditional, yet still presented in a creative and intriguing way &#8211; combinations like Roasted Quail with a Puree of Squash Seeds, Chaya, and Habanero and Zucchini and Squash Blossom Stew with Tiny Corn Pancakes are representative of what people have eaten traditionally, but totally new to me. I should note that as much as the 60-page ingredient primer will help orient you to traditional ingredients, many will still be hard to find for American cooks. Beyond that, many of the recipes will be time-consuming for those not accustomed to cooking with the major base ingredients of the cuisine, as sourcing or preparing the spice mixes, flours, and fats that are traditionally used will add to the total preparation time. However, once you have a few of the key pantry items built into your repertoire, I imagine the recipes become less daunting &#8211; there&#8217;s just a bit of a learning curve.</p>

<p><b>The Food: </b>One of the goodies we brought back with us from Ecuador was a bag full of fermented cacao beans. As part of our trip <a title="Ecuador Travelogue: The Amazon &amp; Itamandi Lodge" href="http://katieatthekitchendoor.com/2014/04/03/ecuador-travelogue-the-amazon-itamandi-lodge/">we learned about the entire chocolate making process</a>, even roasting and grinding our own beans before making the freshest hot chocolate ever. We picked up a half pound bag of the beans for $2.50 in a little souvenir shop later in our trip, and now I&#8217;m wishing we had brought more home with us, as whole beans go for $20 a pound on Amazon. When I saw the dessert recipes calling for freshly ground cacao paste in this book, I knew we&#8217;d found a way to put our beans to good use. This Mayan Chocolate Frozen Custard is one of the most intense ice creams I&#8217;ve ever tasted. Using a whole host of traditional ingredients &#8211; Mexican crema, freshly ground cacao, cayenne pepper, and a hand-ground spice mixture called recado rojo that includes achiote, garlic, and vinegar &#8211; it has a ton of different flavors, and a somewhat gritty texture from the ground cacao beans. And preparing all the components really gave our mortar and pestle a good workout. I realize that this description might not make it sound all that appealing, but it&#8217;s a really exciting recipe that&#8217;s definitely worth stepping outside of your comfort zone for. If you can find whole cacao beans, use them &#8211; the smell of freshly roasted cacao being mashed to a paste is otherwordly &#8211; but otherwise, you can use cacao nibs or bittersweet chocolate.</p>

<li style="text-align: center;">1 c. sugar</li>
<li style="text-align: center;">1/4 c. honey</li>
<li style="text-align: center;">3/8 tsp ground allspice</li>
<li style="text-align: center;">1/8 tsp cayenne powder</li>
<li style="text-align: center;">5 large egg yolks</li>
<li style="text-align: center;">8 oz. fresh chocolate paste, recipe below (or bittersweet chocolate, chopped)</li>
<li style="text-align: center;">1 TBS vanilla</li>
</ul>
<ol>
<li>Place the milk and the recado rojo in a blender and blend for 30 seconds. Strain the milk through a fine-mesh sieve into a heavy saucepan, discarding the solids that get caught in the strainer. Add the creme fraiche, sugar, honey, allspice, and cayenne to the milk. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture has just reached a simmer, then remove from the heat.</li>
<li>In a medium bowl, whisk the egg yolks until they are pale yellow and frothy. While whisking the eggs, slowly pour 1 cup of the hot milk into the eggs in a thin stream, whisking vigorously to temper the eggs. Repeat with another cup of hot milk, then pour the egg mixture back into the hot milk mixture, whisking the milk as you do so. Still whisking, return the custard to low heat and cook just until the mixture thickens enough to coat the back of a spoon. It will still be fluid &#8211; about the consistency of a creme anglaise.</li>
<li>Once the mixture has thickened, strain through a fine mesh sieve into a bowl, discarding any solids. Stir in the chocolate paste or bittersweet chocolate until mixture is thick and chocolate is melted. Let cool, then stir in the vanilla. Cover and refrigerate for at least 6 hours, or overnight. Once thoroughly chilled, process according to your ice cream maker&#8217;s directions.</li>
</ol>

<p style="text-align: center;"><em>Makes about 8 oz.</em></p>

<li style="text-align: center;">1/2 lb. of whole fermented cacao beans</li>

<li>Place the beans in a dry skillet over medium heat. Roast, stirring occasionally, until fragrant and skins are cracking, about 8-10 minutes. Remove from heat. As soon as beans are cool enough to handle, peel the skins away from the beans and discard the skins. Return any peeled beans that are still brown as opposed to a deep blackish brown to the pan for a minute or two, cooking until they are all deeply browned.</li>
<li>Place peeled, roasted beans in a blender and blend until evenly ground. Transfer to a mortar and pestle in grind to a fine paste in batches.</li>

<p><strong>The Book:</strong> This spring has seen a lot of Middle-Eastern themed cookbook releases, including <a href="http://www.amazon.com/gp/product/1742706010/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1742706010&amp;link_code=as3&amp;tag=katatthekitdo-20">Istanbul</a>, <a href="http://www.amazon.com/gp/product/1849754926/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1849754926&amp;link_code=as3&amp;tag=katatthekitdo-20">Flavors of the Middle East</a>, and <a href="http://www.amazon.com/gp/product/1617691089/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1617691089&amp;link_code=as3&amp;tag=katatthekitdo-20">Under the Shade of Olive Trees</a>. The first one to grace our bookshelves is Rawia Bishara’s <a href="http://www.amazon.com/gp/product/1906868840/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1906868840&amp;link_code=as3&amp;tag=katatthekitdo-20">Olives, Lemons, and Za’atar</a>. By the chef-owner of <a href="http://www.tanoreen.com/index.php">Tanoreen </a>restaurant in Brooklyn, it’s a book filled with recipes that feel both modern and traditional, an elevated but still accessible take on a rural cuisine. Rawia does not treat her family&#8217;s cooking style rigidly, but rather lets it grow and evolve based on inspiration from her travels throughout Europe and her years in New York. Many of the resulting recipes are loaded with summer produce, which feels a little bit like torture right now, but is also filling me with inspiration for what to do with all those eggplants and peppers we’ll have come August. I especially can’t wait to try the Eggplant Napoleon, a stack of fried, pesto-marinated eggplant slices served with a slather of baba ghanouj, fresh tomatoes, and more pesto. I’m also drawn toward the big family dinner and feast dishes that she shares – big platters of meat and grains and vegetables, all heavily spiced and sauced – they feel festive and complete and make me want to gather friends around my table more often. The bright flavors that Rawia presents are echoed heavily in the book&#8217;s clean design and photography &#8211; the pictures in the book are wonderfully colorful and energetic, immediately transporting me to a warmer climate where food and color are abundant. It’s a book filled with light, flavor and summertime, for sure.</p>

<p><strong>The Food:</strong> So far, we’ve made two dishes from <a href="http://www.amazon.com/gp/product/1906868840/ref=as_li_qf_sp_asin_tl?ie=UTF8&amp;camp=211189&amp;creative=373489&amp;creativeASIN=1906868840&amp;link_code=as3&amp;tag=katatthekitdo-20">Olives, Lemons, and Za’atar</a>, and both were probably more appropriate for a grand feast than for dinner for two, but I have no regrets about either of them. Featured here is <em>Maftool</em>, the word for Palestinian (better known as Israeli) couscous, but that also refers to a traditional feast dish that uses the couscous as a base. This recipe adorns the couscous with chicken, chickpeas, and pearl onions, all beautifully spiced with a mix of caraway, allspice, cumin, coriander, and other warm spices. I really liked the technique for this dish – after spice-coating and browning the chicken, you add the chickpeas, onions, and several quarts of water to a pot with the chicken to simmer until the chicken is very tender, simultaneously making a gorgeous spiced chicken broth. Then, when it’s time to cook the couscous, you ladle the broth out of the pot onto the couscous, meaning the whole meal is infused with the flavors of the broth and spices. I cooked the couscous just a moment too long, leaving me with a crunchy, caramelized layer on the bottom of the pot – but after trying those crunchy couscous bits, I wouldn’t cook it any other way. The meal is served on one platter – couscous topped with the chicken pieces, lightly shredded, the chickpeas, and the pearl onions. It’s an aromatic, filling, and wholesome dish, perfect for serving a crowd in the winter. As an aside, the recipe headnote states that this dish makes enough for four, but we got at least eight servings out if it – it really makes an obscene amount of food. Plus as a byproduct, you have a delicious pot of chicken and chickpea soup, which I quickly stashed in the freezer for my next cold. The other dish we tried was a braised lamb shank dish which Trevor prepared, served with potatoes and a fresh tomato sauce. Again, the meat was beautifully spiced, and the addition of a cup of basil made it smell like summer. I think we’ll be cooking from this book for a while.</p>

<li style="text-align: center;">1 TBS ground allspice</li>
<li style="text-align: center;">1 TBS ground cumin</li>

<li style="text-align: center;">1 TBS sea salt</li>
<li style="text-align: center;">1 TBS freshly ground black pepper</li>
<li style="text-align: center;">1/2 tsp ground nutmeg</li>
<li style="text-align: center;">1/2 tsp ground cardamom</li>
<li style="text-align: center;">1/2 tsp ground cinnamon</li>
<li style="text-align: center;">1 chicken (2 1/2 to 3 pounds), cut into 8 pieces</li>
<li style="text-align: center;">8 TBS olive oil, divided</li>
<li style="text-align: center;">2 lbs. fresh pearl onions, peeled (blanch first to make peeling easier)</li>
<li style="text-align: center;">3 yellow onions, roughly chopped</li>
<li style="text-align: center;">1 lb. dried chickpeas, soaked overnight, then boiled until tender; or 2 (15 oz.) cans of chickpeas, drained and rinsed</li>
<li style="text-align: center;">2 lemons</li>
<li style="text-align: center;">2 lbs. Israeli couscous</li>
</ul>
<ol>
<li>In a small bowl, combine the first 9 ingredients, stirring to mix. Rub half of this spice mixture all over the chicken pieces. Set aside the other half of the spice mix.</li>
<li>Add 4 TBS of olive oil to a large, heavy-bottomed stock pot. Heat over medium heat, then add the chicken pieces in batches, skin-side down, being careful not to crowd the chicken. Brown the chicken for 6-8 minutes per side, until golden brown. Use tongs to transfer the chicken pieces to a plate. Repeat with any remaining chicken pieces.</li>
<li>Add the pearl onions and chopped yellow onions to the olive oil and saute until they begin to brown, about 5 to 7 minutes. Return the chicken pieces to the pot and add the chickpeas and 3 quarts of water. Raise the heat and bring to a boil, skimming any foam from the surface of the pot. Reduce the heat, cover, and simmer until the chicken is falling off the bone, 45 minutes to 1 hour. Stir in the juice of 1 lemon, and remove from heat.</li>
<li>About 20 minutes before the chicken is done, add the remaining 4 TBS of olive oil to a large saucepan and heat over medium heat. Add the couscous, stirring to coat with the olive oil, and saute until fragrant, about 2-3 minutes. Add the reserved spice mixture and stir to coat grains, then saute for 1 minute. Ladle 6 cups of the broth from the chicken pot into the couscous and bring to a boil. Reduce the heat, cover, and simmer until the couscous is tender and the liquid is absorbed, about 10-15 minutes. Remove from heat and let stand for 10 minutes.</li>
<li>To serve, spoon the couscous onto a large platter and top with the chicken pieces, chickpeas, and onions. Reserve any leftover broth for another use (or it makes a delicious soup on its own with some of the extra chicken in it).</li>

I decided I wanted to blog about them, and by that I mean I asked him if he would write about his trip and type up the recipe. He&#8217;s the best so he agreed, and wrote the short novel below which makes me look bad as a writer/blogger, but I&#8217;m letting it go since it&#8217;s all about what&#8217;s best for my readers, right? <p>Not only did I get to travel to the middle east for work, I’m lucky enough to have an exceptional girlfriend that will let me blather about it on the internet just as long as there’s a recipe involved. At the company where I work, the exciting trips to exotic places don’t generally get thrown to the low guy on the totem pole. I constantly hear stories about floatplane rides in Alaska and almost-bar fights in Ukraine, and I’ve kinda been waiting my turn. I was getting ready for disappointment when this trip cropped up, but in the space of a week, everyone else was called off to different corners of North and South America and I totally lucked out.</p>

<p>At any rate, (back story: I’m a structural engineer) we were asked to take a look at a brand new shipyard in the soon-to-be port city of Duqm. As part of a plan to establish Oman as a shipping powerhouse in the Persian (Arabian) gulf, a massive port was built mid-way between the capital, Muscat and the southern port city, Salalah. The port of Duqm is designed to handle an incredible amount of freight, and the nearby shipyard can service (e.g. repair, paint, scrape-the-barnacles-off…) some of the most massive ships in the world, (VLCCs and some some smaller ULCCs for ship nerds). What they don’t have yet in Duqm are a ton of roads.</p>
<p>For the most part of our trip, we stayed at a very well-appointed resort-style hotel on the beach, replete with BBQ nights and Budweiser. It was extremely comfortable, and also the only thing for miles. Every morning we drove through beige desert, past places where the road would abruptly end, and where bits of infrastructure were being jackhammered out of the bedrock. We drove at incredible speeds; (a little alarm would go off at 160kph,) into a sprawling yard where fourteen cranes dwarfed the silhouettes of fishing dhows in the harbour, and every berth in the yard was occupied by a huge ship crawling with workers. The yard recently celebrated the docking of its 200th vessel in a mere 3 years of service, so It isn’t hard to imagine Duqm growing into a successful center of trade and industry.</p>

<p>But we were looking for a little culture. So on our way home, back through Muscat, we begged for a tour of the city and for ideas of what to bring home to show off to our friends and family. We were treated to an evening tour through the beautiful old city and past the Indian-style palace built by Sultan Qaboos bin Said Al Said. It was explained to us that the Portuguese once invaded Oman in order to position itself along the same crucial trade routes that are used today. Old forts from this time flank the harbour and look down on a city in transition. More and more cruises are stopping in Muttrah, a city in the province of Muscat, as it becomes a destination of interest for National Geographic-style expeditions. We visited one of the oldest marketplaces on the Arabian peninsula, the Muttrah or Al Dhalam Souq (Darkness Souq) which now hosts only a few stalls catering to Omanis, and many which cater to tourists.</p>

<p>With our extremely gracious host guiding us, we sampled delicious gelatinous candy, and sorted through cheap knockoffs for old-school Omani coins. We sampled powerful perfumes and checked out a small grocery which was full of snacks, candy, oil extracts and spices. I managed to grab some sumac, which is a lemony spice from the sumac berry, and some whole turmeric roots, which are super funky looking. (Side note: I tried to buy two little nubbins of turmeric, but ended up with a whole kilo… so we’re set for life.) I also grabbed some rose petals for candying and then escaped for fear of blowing the weight limit on our checked bags. Everything we asked for was shoveled out of giant colorful sacks which created such an incredible set of smells that the other market-goers’ heads would whip around every time the door was opened.</p>

<p>Our last stop was the smallest stall yet; a six-foot square with walls lined floor-to-ceiling with bags and bags of frankincense. Just as we walked up, a small crowd formed of people firing off questions and haggling with a young man in the middle of the whole thing, perched at a raised counter. There was frankincense for chewing and making tea, frankincense for burning, and frankincense mixed with every kind of perfume and oil. We got away with a big bag of huge chunks of the dark, powerful-smelling sap, and a smaller bag of the clearer variety used as as a sort of panacea.</p>
<p>But that’s enough babbling. Our extremely friendly host treated us to a dinner of everything-on-the-menu at a lively outdoor restaurant full of men smoking sheesha and drinking fresh fruit juice, and then sent us on our way. Part of our feast included a small grill, placed on the table full of kebabs, lamb sausage and goat chops, all of which were super delicious, and one of which, I tried to recreate here.</p>

<p><span style="text-decoration: underline;"><em>For the Goat Chops:</em></span></p>
<ul>
<li>2 small garlic cloves, peeled and chopped</li>
<li>½ cup parsley, chopped</li>
<li>2 tablespoons fresh mint, chopped</li>
<li>1 tablespoon sumac</li>
<li>2 tablespoons olive oil</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon ground black pepper</li>
<li>½ teaspoon cayenne pepper</li>
<li>2 teaspoons sweet Hungarian paprika</li>
<li>1 teaspoon ground cumin</li>
<li>1 teaspoon turmeric</li>
<li>1 teaspoon fennel seeds</li>
<li>⅛ teaspoon ground cinnamon</li>
<li>4-6 small goat chops (about 1 lb. in total)</li>
</ul>
<p><span style="text-decoration: underline;"><em>For the Tahini Sauce:</em></span></p>
<ul>
<li>2 tablespoons tahini</li>
<li>3 tablespoons fresh lemon juice</li>
<li>3 tablespoons extra-virgin olive oil</li>
<li>1 tablespoon water, or more if needed</li>
<li>salt to taste</li>
</ul>
<ol>
<li>In a mortar and pestle, grind up the olive oil, garlic, mint, parsley, sumac, and fennel until you have a rough paste, and there are no huge chunks. Add the rest of the the spices and mix it up until it’s a uniform consistency. Trim the chops of any silver skin or ragged edges, then coat them with the rub. Let the chops sit covered in the fridge for two hours or so.</li>
<li>For the tahini sauce, mix the tahini, lemon juice, olive oil and water in a small bowl with a whisk, making sure there are no lumps. The sauce should have a syrupy consistency; season with salt.</li>
<li>On medium-high heat, grill the chops for about five minutes per side for medium-rare (125-130 degrees, internal temp). Let them rest for a couple of minutes after removing them from the heat and then artfully drizzle them with the tahini sauce.</li>

<p>I knew it was dangerous for me to name a post Cookbook of the Month, implying that I really, truly would be able to review at least 1 cookbook every single month.  It didn&#8217;t seem that hard &#8211; what&#8217;s one post a month? &#8211; but I guess I should have considered my initial hesitation more thoroughly before going ahead and making false implied promises.  In <a title="Cookbook of the Month: Antojitos" href="http://katieatthekitchendoor.com/2011/07/26/cookbook-of-the-month-antojitos/">July there was a glorious debut</a>, and then in August, even though I had a book planned and the post written, I left you hanging.  So sorry!  At least I&#8217;ve only missed 1 month so far!  (I&#8217;m feeling glass is half full tonight, so please, be kind, and don&#8217;t point out that missing 1 month is also missing 50% of what was planned).  And I&#8217;m here now!  With this delicious, delicious, completely different from anything else I&#8217;ve had before dish from September&#8217;s cookbook, &#8220;<a href="http://www.amazon.com/gp/product/1862057990/ref=as_li_ss_tl?ie=UTF8&amp;tag=katatthekitdo-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369&amp;creativeASIN=1862057990">Cooking with My Indian Mother-in-Law</a><img loading="lazy" style="border:none!important;margin:0!important;" src="http://www.assoc-amazon.com/e/ir?t=katatthekitdo-20&amp;l=as2&amp;o=1&amp;a=1862057990&amp;camp=217145&amp;creative=399369" alt="" width="1" height="1" border="0" />,&#8221; by Simon Daley.</p>

<p>This book was one of the ones that caught my eye early in my cookbook-devouring days.  Actually, I think it was the first or second cookbook that I picked up in the library and literally read like a novel.  After seeing that the opening pages contain tricks to the fundamentals of Indian cooking &#8211; such as how to mix fresh spice blends, quick fry onions, and tell when a masala is ready by watching the oil &#8211; I was hooked.  Then, as I flipped through the recipes and saw that they included spices I&#8217;d never heard of before, like asafoetida and curry leaves, I was even more intrigued.  I love Indian food and I like to try and make it at home, but I&#8217;m usually disappointed by the lack of complexity in my dishes &#8211; I want that restaurant quality layer of flavor.  My theory being that perhaps there&#8217;s only so much you can expect from using just curry powder and turmeric, I went ahead and picked up the mysterious spices from Wholefoods and began trying the recipes out.  The first one I tried, <a title="Indian Comfort" href="http://katieatthekitchendoor.com/2010/12/06/indian%c2%a0comfort/">chickpea flour dumplings with yogurt</a>, is still one of my favorite recipes, especially when I want to impress friends at the last minute, as it&#8217;s quick to throw together and I almost always have the ingredients on hand.  I also tried a meatball curry which wasn&#8217;t as impressive in its originality (at least, its originality to me!) and flavor, but was still satisfying.</p>

<p>The recipe featured here, for rice with moong dal and spiced buttermilk, beats both the curry and the chickpea dumplings in terms of flavor, although it takes a little bit more time and effort to prepare.  The flavor of this is so unique and wonderful &#8211; its warm, savory, comforting, just a little spicy, and satisfying on every level.  Making the spiced buttermilk was like an experiment in chemistry, as you start with just yogurt, water, a minimal amount of spices, and some curry leaves, and you end with a spicy, yellow, thickened milk that you could use in a number of ways.  Paired with the complex yet gently spiced rice and lentils, its a completely satisfying eating experience, at least in my book.  I encourage you to check this book out, especially if you&#8217;re looking for recipes that will give your attempts at this complex cuisine that extra punch of authenticity.  Need further convincing?  Just give this rice a try, and then make your decision.</p>

</em><span style="text-decoration:underline;">For the rice:</span></p>
<ul>
<li style="text-align:center;">1 c. basmati rice</li>
<li style="text-align:center;">1/2 c. moong dal (tiny green pulses, split)</li>
<li style="text-align:center;">2 1/2 c. hot water</li>
<li style="text-align:center;">1/2 stick butter</li>
<li style="text-align:center;">3 in. cinnamon stick</li>
<li style="text-align:center;">seeds from 3 cardamom pods</li>
<li style="text-align:center;">3 cloves</li>
<li style="text-align:center;">12 black peppercorns</li>
<li style="text-align:center;">1/2 tsp. cumin seeds</li>
<li style="text-align:center;">1 small onion, diced</li>
<li style="text-align:center;">1 clove garlic, minced</li>
<li style="text-align:center;">2 small green chiles (Indian), sliced</li>
<li style="text-align:center;">10 curry leaves</li>
<li style="text-align:center;">1/2 tsp. turmeric</li>
<li style="text-align:center;">1 tsp salt</li>
</ul>
<ol>
<li>Rinse rice and dal, then soak in warm water for 20 minutes.  Melt butter over low heat.  When it foams, add all whole spices and cook for 1-2 mintues, stirring, until spices are fragrant, but not beginning to burn.  Add the onion, garlic, chiles, and curry leaves, and cook until onion has softened.  Add turmeric, cook for 30 seconds, then add 2 1/2 c. hot water, salt, rice, and dal.  Increase heat to bring to a boil, then reduce heat and simmer, covered, for 25 minutes, until rice has absorbed all water.  Set aside, removing any whole cloves you can see .</li>
</ol>
<p><span style="text-decoration:underline;">For the spiced buttermilk:</span></p>
<ul>
<li style="text-align:center;">1 clove garlic, peeled</li>
<li style="text-align:center;">1/2 inch ginger, peeled and cut into chunks</li>
<li style="text-align:center;">1 green chili, roughly chopped</li>
<li style="text-align:center;">1/2 tsp salt</li>
<li style="text-align:center;">1/2 tsp cumin seeds, divided</li>
<li style="text-align:center;">6 oz. plain yogurt</li>
<li style="text-align:center;">1 tsp chickpea flour</li>
<li style="text-align:center;">1/4 tsp turmeric</li>
<li style="text-align:center;">1/2 tsp brown sugar</li>
<li style="text-align:center;">1 branch curry leaves (about 15-20 leaves)</li>
<li style="text-align:center;">1 TBS canola or peanut oil</li>
<li style="text-align:center;">1/4 tsp mustard seeds</li>
<li style="text-align:center;">pinch fenugreek</li>
<li style="text-align:center;">2 cloves</li>
<li style="text-align:center;">1/4 tsp asafoetida</li>
<li style="text-align:center;">cilantro (optional)</li>
</ul>
<ol>
<li>Crush garlic, ginger, chiles, 1/4 tsp cumin seeds, and salt into a paste using a mortar and pestle.  Blend yogurt with 1 1/2 c. water on high speed.  Pour off 1/2 of the yogurt mixture, and add the chickpea flour to the remaining yogurt.  Blend, then add the reserved yogurt back in, along with the turmeric, brown sugar, and chili-garlic paste.  Blend until smooth.</li>
<li>In a large saucepan, heat oil over low heat.  Add mustard seeds, 1/4 tsp cumin seeds, fenugreek, and cloves, and cook for 1 minutes.  Add asafoetida and cook for 30 seconds more.  Add yogurt mixture, cilantro and curry leaf branch, then cook, stirring frequently, for about 10 minutes.  Serve in a pitcher to be poured over rice and moong dal.</li>

<p>Two Sundays ago we went to the NC Museum of Art, and it was very nice.  But I&#8217;ve found that even in the huge, incredible national galleries of Europe, my tolerance for looking at art is about 1 hour and 45 minutes.  No, exactly 1 hour and 45 minutes.  And then I just can&#8217;t look anymore.  Trevor, on the other hand, is an <em>artiste</em>, so after 1 hour and 45 minutes of deep artistic pondering I found myself sitting outside in the very beautiful, but rather warm Rodin garden, being the impatient child that you don&#8217;t want to take to art museums.  I&#8217;m a big girl though, so I decided to pass the time by calling my father to wish him a happy Father&#8217;s Day.</p>

<p>And then I realized, oh my goodness, they&#8217;re in Maine.  Already.  Without me.  In my Maine.  I&#8217;ll have to call him there.  Why am I not in Maine?  I bet it&#8217;s nice and cool and perfect in Maine.  I bet there&#8217;s a car with working air conditioning in Maine.  Sigh.  I&#8217;ll just call.</p>
<p>And so I called.  And with each ring, a different, utopian scene from Maine flashed before my eyes.  Ring.  Laying out on the swim dock with a pitcher of lemonade and my John Steinbeck anthology.  Ring.  Walking up the gravel path to camp with my little brother every morning, inhaling the scent of pine and watching the yellow sunbeams slant across the road.  Ring.  Sitting at the picnic table drinking red wine and eating cheese and playing badminton with my brothers.  Ring.  Sea spray blowing into my face as we race across the bay to Pond Island.  Ring.  Picking blueberries so ripe that they roll off the plants into your hand.  Hello, you&#8217;ve reached the Morris family, we&#8217;re unavailable at the moment but please leave a message &#8230;</p>

<p>Wait a minute, I know where they are.  Ha.  Hahahahaha.  They are putting the docks in.  I am not there.  Ahahahaha.  They are in their wet suits, lugging enormous metal frames and wood panels down the hill into the lake, shivering and searching for dropped bolts in the mucky water as they simultaneously support tons and tons of weight above their shoulders.  And when I arrive, I will simply walk out the back door, skip down the hill, and step gracefully onto the beautifully constructed, perfectly leveled dock.  Life is not so bad.</p>

<p>But to be honest, I would have gladly suffered through the yearly dock ordeal if it meant that I could spend the next four weeks in Maine.  Because Maine is tied with the city of Prague for the superlative of best place in the world.  And I can&#8217;t wait to join my family there for the last three weeks of summer.  I mean, spending the summer in North Carolina is kinda cool &#8211; there&#8217;s something old-fashioned and feminine about summer in the south.  Things really do seem to move slower, and the air is heavy with heat and the fragrance of honeysuckle and magnolia.  But there&#8217;s nothing quite like summer in Maine, at least for me.  And so I wanted to share my love for Maine with you, through food of course.</p>
<p>Now, Maine has two signature foods &#8211; blueberries, and lobster.  I love blueberries, but I kind of want to wait until I&#8217;m actually in Maine and can show you the tiny wild blueberries that are so sweet and perfect to write about blueberry food.  And I don&#8217;t eat seafood, so sorry, no lobster.  (Can you even get lobster in North Carolina?) Instead, I made something that really channels the experience of Maine for me. It&#8217;s not something I eat frequently in Maine, or something that is specific to Maine.  It&#8217;s just something that <em>feels</em> like Maine &#8211; gingerbread.  Warm gingerbread with whipped cream.</p>

<ul>
<li style="text-align:center;">1 stick butter, softened</li>
<li style="text-align:center;">1/2 c. brown sugar</li>
<li style="text-align:center;">1 egg</li>
<li style="text-align:center;">3/4 c. molasses</li>
<li style="text-align:center;">1/2 c. applesauce</li>
<li style="text-align:center;">2 1/2 c. flour</li>
<li style="text-align:center;">1 1/2 tsp baking soda</li>
<li style="text-align:center;">2 1/2 tsp cinnamon</li>
<li style="text-align:center;">2 1/2 tsp ground ginger</li>
<li style="text-align:center;">1 tsp ground cloves</li>
<li style="text-align:center;">1/2 tsp salt</li>
<li style="text-align:center;">1 c. hot water</li>

<ol>
<li>Preheat oven to 350°F.  Grease and flour a large loaf pan.</li>
<li>In a large bowl, cream together brown sugar and butter.  Beat in egg, molasses, and applesauce.  It helps to swirl a little vegetable oil in your measuring cup before pouring the molasses in &#8211; this allows the molasses to dribble out freely.</li>
<li>In a medium bowl, whisk together dry ingredients &#8211; flour, baking soda, cinnamon, ginger, ground cloves, and salt.</li>
<li>Add dry ingredients to wet ingredients 1 cup at a time, stirring gently between additions, until all of the dry mixture has been incorporated into the wet mixture.  At this point, add the cup of hot water and stir to incorporate.</li>
<li>Bake for 50-60 minutes.  A toothpick inserted into the center of the loaf should come out with a few moist crumbs attached.</li>
