<p>I&#8217;m home from my last trip of the year and very ready for a few days off for Christmas. Originally I had all kinds of last minute errands planned for today, but it&#8217;s treacherously icy outside. After a brief trip to the grocery store, the freezing rain had us turning tail to get back inside. Now we&#8217;re all sorts of cozy &#8211; wrapping presents, baking cookies, assembling this year&#8217;s gingerbread house, and listening to Christmas swing music. Although I still have a bunch of miscellaneous little things to do tomorrow, I&#8217;m so much happier for being forced to take a rest day. December always feels like a bit of a sprint, and now I want to slow way, way down.</p>
<p>If you&#8217;ve left your Christmas baking to the last minute, like I inevitably do, I have a simple little cookie recipe for you. They may not be the world&#8217;s prettiest cookie, but these Pecan Crescent Cookies are wonderfully tasty. I just took a batch out of the oven and can verify that they are just as good as I remember. You can also make them from start-to-finish in less than 45 minutes with only pantry ingredients. Perfect for a day when you really don&#8217;t want to leave the house (see: freezing rain).</p>

All you need to do is pulse the ingredients in a food processor, then shape and bake the cookies. I found the recipe in the giant <a href="https://www.amazon.com/Bon-Appetit-Cookbook-Magazine/dp/0764596861/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=b2c161c96fb3b8d3c1d1550e94e13b7d&amp;creativeASIN=0764596861"><em>Bon Appetit Cookbook</em></a> last year, hidden amongst dozens of other cookie recipes. After the first batch received rave reviews, I made a second and third tray. Now in their second year on our Christmas cookie tray, I think we can declare these a Christmas staple. They&#8217;re crumbly and tender but not dry, and just barely sweet. They almost toe the line between sweet and savory. In fact, if you opt to skip the powdered sugar, they are delicious with a little blue cheese.</p>

<li>Preheat the oven to 325F. Place the pecans on a cookie sheet. Toast in the oven for 4-5 minutes, until just fragrant. Take care not to let them burn.</li>
<li>Add the toasted pecans and all other ingredients to a food processor. Pulse several times until the dough looks crumbly, then process on high until the dough begins to come together. Press a bit of dough together between your fingers &#8211; if it holds together, the dough is ready. If not, blend a bit longer.</li>
<li>Use your hands to gather the dough together. Pinch off a little more than a tablespoon of dough and form a short rope of dough by squeezing the dough in the palm of your hand. Place the rope on a cookie sheet and shape into a crescent, smoothing any lumpy parts. Repeat until you have used all the dough. Bake the cookies for 25-30 minutes, until just barely firm to the touch. Let cool completely, then sift powdered sugar over the top of the cookies.</li>

<p>I&#8217;ve mentioned it in passing, but I&#8217;ll be spending most of this month in Hong Kong on an extended work trip. I&#8217;m getting more and more excited as it gets closer. I plan to have a regular exercise routine while I&#8217;m there, but more importantly, I want to make sure I am getting out and exploring as much as I can. And hiking! Hong Kong has incredible hiking all within easy commute of the downtown areas, and I plan on taking full advantage of the warm temperatures to make it a January full of long walks and the great outdoors. Offset, of course, by dim sum and roast pork but that&#8217;s a different conversation. Accordingly, my goal for this month is just about being out there, and steps is how I&#8217;m going to measure it. At a minimum, I want to hit 10K every day, and if that means that when I get home from work with 5,000 steps we have to venture out for a twilight walk to find the best dumplings in a new neighborhood? All the better. The only out I get are my two full plane days, and even then, I&#8217;ll do my best in the airport hallways. And come February, I&#8217;ll be reporting back here about the best hikes and long walks for exploring the city.</p>

<p>I&#8217;ve been making this oatmeal all year, but January seemed like a particularly good time to share it. This is super quick to make, and isn&#8217;t much of a stretch from a normal bowl of oatmeal &#8211; the only difference is that instead of adding brown sugar, banana, and nuts as toppings, you saute them in a bit of butter to start, then cook the oatmeal right on top of them, so you end up with a bowl of creamy oats deeply infused with sweet, buttery, banana-y goodness. Although I&#8217;m calling it bananas foster, I haven&#8217;t added any rum &#8211; that would definitely take it out of healthy breakfast territory &#8211; but I promise you it still tastes like bananas foster should. Only, in oatmeal form. For breakfast.</p>

<li>In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir until melted, about 1 minute. Add the pecans and sliced banana and stir to coat in the brown sugar mixture. Cook until bananas are soft and fragrant, about 3-4 minutes, stirring frequently. Spoon half of the banana mixture into a bowl for topping your oatmeal.</li>
<li>Add the oats and cinnamon to the remaining half of the banana mixture still in the pan. Stir to coat the oats in the sauce. Toast the oats for 1 minute, then add the milk. Cook, stirring frequently, until oatmeal is thick and oats are soft, about 5-8 minutes, then remove from the heat. Divide oatmeal between two bowls and top with the reserved banana mixture. Serve immediately.</li>

<p>Today was my last day at my job! On Monday, I begin a new role &#8211; I&#8217;ll be in the same company, but I&#8217;m transferring to a project management role in our International business unit. I&#8217;ll be traveling a lot more (in fact, I&#8217;ll be on a plane to Hong Kong on my first day on the job), and working on some really neat projects with our teams around the world, with the side benefit of getting to tell you all about the awesome foods I get to try. I&#8217;m very excited about my new job, but the past few days have been bittersweet. This was my first job out of college, and I&#8217;ve had two and a half great years in the group that I&#8217;m leaving. I&#8217;ve learned a ton, developed so much more confidence in myself, and, maybe most importantly, met some really great people. When I was first looking for jobs, I didn&#8217;t realize the sheer volume of time you spend with your coworkers, and I consider myself lucky to have found myself in a group of smart, entertaining, and caring people who have become my close friends. I spent a good part of most days at work laughing with an intensity that I never expected to experience in a workplace, and I know I&#8217;m lucky to be able to say that. I&#8217;m certainly planning on maintaining my friendships with everyone, but it will be different not being there for the little day to day stories and jokes. So, thank you CS&amp;R, for being awesome.</p>

<p>Although I&#8217;ve brought baked goods in to work once or twice, I have to admit that overall, I probably fell short of my coworkers&#8217; expectations of having a food blogger around. So today, to celebrate my time in the group and make good on all my &#8220;yeah I&#8217;ll make those someday&#8221; promises, I brought in a batch of classic, gooey, super sweet seven layer bars. I considered going all fancy/homemade with these &#8211; you know, homemade cookie crust, a caramel drizzle, etc. &#8211; but in the end, what I really wanted was just the classic version, over-processed store bought ingredients and all. So that&#8217;s what I made, although it turns out that if you live in Cambridge, it&#8217;s pretty difficult/expensive to try and find things like sweetened coconut flakes, butterscotch chips, and sweetened condensed milk when Wholefoods has taken over the local grocery scene (typically a good thing, but not for something like this). Still, these are certainly worth making in my book, and hopefully my coworkers thought so too. Now I just have to start managing the baking expectations of my new coworkers.</p>

<li style="text-align: center;">1 package of  graham crackers (8 or 9 whole crackers)</li>
<li style="text-align: center;">1 stick butter (8 TBS) melted</li>
<li style="text-align: center;">1 1/2 c. whole pecans, coarsely chopped</li>
<li style="text-align: center;">1 c. semisweet chocolate chips</li>
<li style="text-align: center;">3/4 c. white chocolate chips</li>
<li style="text-align: center;">1/2 c. butterscotch chips</li>
<li style="text-align: center;">1 c. sweetened coconut flakes</li>
<li style="text-align: center;">1 (14 oz.) can sweetened condensed milk</li>
</ul>
<ol>
<li>Preheat the oven to 350°F. Line a 9&#215;13 inch baking pan with tinfoil so that the foil hangs slightly over the sides. Place graham crackers in a blender and pulse several times until crackers are finely ground. Pour into a bowl and add the melted butter, stirring to fully coat the crumbs with the butter. Spread the buttered crumbs into the bottom of the lined pan, pressing to create a thin and even layer.</li>
<li>In order, sprinkle the chopped pecans, chocolate chips, white chocolate chips, butterscotch chips and coconut flakes evenly over the graham cracker crust. Spoon or pour the can of sweetened condensed milk evenly over the surface of the entire pan. Place in the preheated oven and bake until the top is golden brown, about 25-30 minutes. Cool in the pan on a wire rack for about two hours. Cover and store in the fridge.</li>

The cookies taste a lot like cheese straws, and they would be the perfect little appetizer for a cocktail party.</p>
<p style="text-align:left;">If you don&#8217;t have any cocktail parties on the horizon (aka, you&#8217;re me), I also happen to think that these are the perfect thing to nibble on with a glass of wine while curled up and watching TV. Which brings me to the reason I&#8217;m posting these today: tonight is quite possibly the most important TV event all year, the Game of Thrones finale. Brace yourself for full dorking out: last week&#8217;s episode was nuts!! I legitimately have been thinking about it all week long (and I know the internet in general has been having a grand old time with it). I&#8217;m actually anxious about tonight&#8217;s episode (although I did get this <a href="http://www.ommegang.com/got/">Game of Thrones themed beer</a> to make me feel better), which makes me feel a bit foolish, but HBO/George R.R. Martin are really killing it. And even worse, <em>after</em> tonight&#8217;s episode, I have to wait <em>an entire 10 months</em> for the next season. At least this year we&#8217;ll have three seasons to re-watch instead of just two. And no, I don&#8217;t read the books: honestly, I&#8217;m afraid it would ruin the show for me. Please don&#8217;t judge me for just writing that.</p>
<p style="text-align:left;">And since I&#8217;ve already gone down the path of admitting embarrassing facts about myself, you might also find me eating a plate of these during The Bachelorette tomorrow. No shame.</p>

Makes about 16 cookies.</em></p>
<ul>
<li style="text-align:center;"><span style="line-height:15px;">1 c. whole pecans, toasted</span></li>
<li style="text-align:center;">1 c. flour</li>
<li style="text-align:center;">1/4 tsp black pepper</li>
<li style="text-align:center;">1/4 tsp salt</li>
<li style="text-align:center;">1 c. shredded sharp cheddar cheese</li>
<li style="text-align:center;">2 TBS butter, cut into 4 pieces</li>
<li style="text-align:center;">6 TBS water, chilled</li>
</ul>
<ol>
<li><span style="line-height:15px;">Place the toasted pecans, flour, salt, and pepper in a food processor and run until finely ground. Empty into a bowl.</span></li>
<li>Add the cheddar cheese and the butter to the bowl. Use a pastry cutter or a fork to blend the ingredients until the cheese is broken up and the dough is slightly crumbly. Add the cold water 1 TBS at a time, pulling the dough in from the edges with a fork between additions, until the dough just comes together when squeezed.</li>
<li>Gather the dough into a ball and roll into a log about 7 inches long. Wrap in plastic wrap and place in the freezer for 30 minutes (to harden it before slicing). If you&#8217;re freezing the dough for longer than this, you will need to thaw it slightly before slicing.</li>
<li>Preheat the oven to 350°F. Slice the chilled dough into 1/4 inch slices, placing on a parchment lined baking sheet. Bake for 25 minutes or until lightly browned, then transfer to a rack to cool. Store in an airtight container.</li>

<p style="text-align:center;"><em>Note: The original recipe says that the natural pectin in the lemon helps the jelly gel without any added pectin, but made this way, my jelly was definitely more of a sauce. If you&#8217;d like a thicker jelly, add 2 tsp pectin to the other ingredients before bringing to a boil.</em></p>

<li style="text-align:center;">1 c. turbinado sugar</li>
<li style="text-align:center;">1/4 c. rice vinegar</li>
<li style="text-align:center;">1 red bell pepper, de-stemmed, seeded, and minced</li>
<li style="text-align:center;">1 TBS sriracha</li>
<li style="text-align:center;">peel of 1 lemon (use a vegetable peeler)</li>
<li style="text-align:center;">2 tsp pectin (optional, see headnote)</li>
</ul>
<ol>
<li><span style="line-height:15px;">In a small saucepan, whisk together sugar, vinegar, red pepper, sriracha, lemon peel, and pectin. Place over low heat. Stir constantly as you gradually increase the heat to bring the mixture to a boil. Once the mixture is boiling, boil for 2 minutes, then remove from heat. Pour the jelly into a clean, pre-warmed half-pint jar. Let cool, stirring occasionally to re-distribute the chopped pepper. Keep refrigerated for up to a month.</span></li>

<p>Sunday afternoon I had a sudden urge to bake. The whole whisking, stirring, creaming, folding shebang. Maybe, more than anything, I was just craving ritual. We&#8217;re starting to look for an apartment for next year and although I know that there&#8217;s no reason to be stressed out about it so early in the process, it can be hard to control that sort of thing. Actually, to tell the truth, I feel stressed out about a lot of things &#8211; finding an apartment, finishing planning our upcoming trip, blogging frequently enough, planning my birthday party, getting everything done that I need to at work this week, finding time to exercise, making sure things are going in to the garden on time, and so on. All small things on their own, many of them really fun things on their own, but all together&#8230; it feels like a lot. I&#8217;m sure everyone has their own list like this and doesn&#8217;t need to hear about mine, but it makes me feel better just to write it down. Basically, I need to take a giant chill pill and just relax.</p>

<p>Baking is one version of a chill pill, at least for me. So I turned to my favorite baking cookbook, <a href="http://www.amazon.com/dp/1579654274/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;camp=0&amp;creative=0&amp;linkCode=as1&amp;creativeASIN=1579654274&amp;adid=14RAQN2XDPGCGQWGPYPN">In The Sweet Kitchen</a>, by Regan Daley &#8211; that woman always has something to fit the bill, and her recipes are pretty much foolproof. For whatever reason, I wanted to make something unnecessarily sweet &#8211; something with sugary, caramelly flavors in it. As I flipped through the book, I landed on the Pecan Toffee Coffee Cake, and I was sold, even though I knew it meant that I had to run to the store just for toffee bits and sour cream and more nutmeg. (Actually, I took a chance on the tiny Indian corner store down the block and was shocked to find all three things hidden in the shelves. That man&#8217;s store is like Mary Poppins&#8217; handbag &#8211; I have never gone in there looking for something and left without it. Even obscure things, like power strips and sink strainers.) The flavors in the filling &#8211; espresso, cinnamon, nutmeg, pecans, and chocolate-covered toffee bits &#8211; are intense and  dark and rich. By the spoonful it would be overpowering, but folded into the center of soft, gently spiced cake, it&#8217;s amazing. I&#8217;m so glad I gave this a try. Now, the only trick will be to keep myself from stress eating the entire thing.</p>

<p style="text-align:center;"><em>Adapted very slightly from <a href="http://www.amazon.com/dp/1579654274/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;camp=0&amp;creative=0&amp;linkCode=as1&amp;creativeASIN=1579654274&amp;adid=14RAQN2XDPGCGQWGPYPN">In The Sweet Kitchen</a>. Serves 12 to 15.</em></p>
<p style="text-align:center;"><em>The only two (tiny) changes I made were to double the amount of espresso powder and use salted butter but omit the salt. I also found that I could only use up about half the filling without having the layers touch each other, so I used the extra filling to sprinkle on top of the warm slices. My advice: make the filling recipe as written below, but don&#8217;t fret if it seems like you&#8217;ll have too much, and don&#8217;t try to overfill the layers.</em></p>
<p style="text-align:left;"><em><span style="text-decoration:underline;">For the filling</span></em><span style="text-decoration:underline;">:</span></p>

<li style="text-align:center;"><span style="line-height:15px;">1/2 c. packed light brown sugar</span></li>
<li style="text-align:center;">2 TBS granulated sugar</li>
<li style="text-align:center;">2 tsp instant espresso powder</li>
<li style="text-align:center;">1 1/2 TBS unsweetened cocoa powder</li>
<li style="text-align:center;">2 tsp cinnamon</li>
<li style="text-align:center;">1/2 tsp nutmeg</li>
<li style="text-align:center;">3/4 c. chopped pecans, toasted until fragrant</li>
<li style="text-align:center;">3/4 c. (half of a 225 gram package) English toffee bits such as Skor or Heath (chocolate-covered toffee bits are even better!)</li>
</ul>
<p><span style="text-decoration:underline;"><em>For the cake:</em></span></p>
<ul>
<li style="text-align:center;"><span style="line-height:15px;"> 3 c. flour</span></li>
<li style="text-align:center;">2 tsp baking powder</li>
<li style="text-align:center;">1 tsp baking soda</li>
<li style="text-align:center;">2 tsp cinnamon</li>
<li style="text-align:center;">1 tsp nutmeg</li>
<li style="text-align:center;">3/4 c. (1-1/2 sticks) salted butter, softened</li>
<li style="text-align:center;">1 1/4 c. packed light brown sugar</li>
<li style="text-align:center;">1/2 c. granulated sugar</li>
<li style="text-align:center;">3 large eggs, at room temperature</li>
<li style="text-align:center;">2 1/2 tsp vanilla extract</li>
<li style="text-align:center;">1 3/4 c. full-fat sour cream</li>
<li style="text-align:center;">3/4 c. (the other half of a 225 gram package) English toffee bits</li>
</ul>
<ol>
<li>Preheat oven to 350°F. Generously grease a 10-inch Bundt pan.</li>
<li><span style="line-height:15px;">To make the filling: In a food processor, pulse together the brown sugar, granulated sugar and espresso powder until finely ground. Transfer to a medium bowl and whisk in cocoa powder, cinnamon, and nutmeg. Stir in chopped pecans and toffee bits. Set aside.</span></li>
<li>To make the cake batter: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg until evenly combined. Set aside. In a separate large bowl, beat together softened butter, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, beating vigorously after each addition. Stir in vanilla.</li>
<li>Add the flour mixture to the batter in three additions, alternating with the sour cream in two additions. Mix just to blend in between additions &#8211; don&#8217;t over-mix the batter at this stage or the cake will be tough. After the last flour addition is stirred in, gently fold in the toffee bits.</li>
<li>Spoon 1/3 of the cake batter into the bottom of the prepared pan and spread out with a spatula so it fills the pan evenly. Use a spoon to carve out a shallow &#8220;moat&#8221; all around the center &#8211; you want to leave 1/2 an inch between the edge of the moat and the side of the pan. Generously spoon the filling into the center of the moat, making sure that none of the filling touches the sides. Aim to use about half the filling, but don&#8217;t overfill the moat. Spoon another 1/3 of the cake batter on top of the filling and spread all around to cover the filling and reach to the sides. Repeat the moat/filling process to make a second layer of filling. Spoon the last 1/3 of the batter on top of the second layer and smooth with a spatula so the top is even and fills the pan to the edge. Tap the pan once or twice on the counter to remove air bubbles.</li>
<li>Bake the cake in the preheated oven for 50-65 minutes, until it is golden brown and a toothpick inserted into the center of the cake part comes out clean (if you insert it into toffee, it will be hard to tell, so don&#8217;t be afraid to poke around a little bit). Let cool in the pan for 10 minutes, then invert onto a cooling rack. Wait until it is completely cool before slicing. Serve with any leftover filling sprinkled on top.</li>

This week was <em>long</em>, but it&#8217;s ending on a high note &#8211; the release of the spring edition of <a href="http://www.neetmagazine.com/">N.E.E.T. magazine</a>, in which I&#8217;m thrilled to have a feature! N.E.E.T. is primarily a fashion magazine, but the back of each issue contains a &#8220;N.E.E.T. eats&#8221; section (this one starts on page 141). This issue&#8217;s theme is spring salads, so I&#8217;ve contributed a light and sweet strawberry-balsamic salad, topped with sugary candied pecans and creamy goat cheese. <li style="text-align:center;">1 lb. strawberries, washed, hulled, and sliced</li>
<li style="text-align:center;">1/2 c. + 2 TBS sugar, divided</li>
<li style="text-align:center;">1 1/2 TBS balsamic vinegar</li>
<li style="text-align:center;">4 sprigs fresh mint, finely minced (about 1 TBS minced)</li>
<li style="text-align:center;">1 c. pecan halves</li>
<li style="text-align:center;">5 oz. baby spinach (1 standard clam-shell container)</li>
<li style="text-align:center;">4 oz. goat cheese, crumbled</li>
</ul>

<li style="text-align:left;">In a small bowl, combine the sliced strawberries, 2 TBS of the sugar, the vinegar, and the minced mint and stir gently together. Let sit for 10 minutes while you prepare the candied pecans.</li>
<li style="text-align:left;">To make the candied pecans: Mix the remaining 1/2 c. sugar with 2 TBS of water in a large frying pan to make a thick paste. Bring to a boil over medium heat, then stir gently a few times. Let cook until just beginning to turn golden, then add pecans. Stir to coat the pecans with sugar. As you stir, the sugar should begin to crystallize on the pecans. Continue to cook, stirring, for about 3-4 minutes to toast the pecans. Remove from heat and let cool. If pecans are stuck together in any places, break apart with a wooden spoon.</li>
<li style="text-align:left;">To serve the salad, divide the spinach between four plates. Divide the strawberries into four portions and arrange on top of the spinach. Spoon some of the balsamic-strawberry juices over the spinach leaves as well. Sprinkle a few tablespoons of the candied pecans over the top of the strawberries, then dot the top of each salad with 1 oz of goat cheese crumbles.</li>

<p>For the last cleanse brunch meal, I decided it was OK to push the boundaries of my rules and let pancakes onto the menu. In part, I think it makes sense to ease your way back into normal eating habits by creating healthy versions of your favorite foods. If you can eat the foods you crave without all the negative health effects, it&#8217;s that much more likely that the benefits of &#8220;cleansing&#8221; will stick! These pancakes, adapted from <a href="http://www.self.com/?intcid=logo_home">SELF Magazine</a>, not only have no sugar and use whole-wheat flour, they also have berries, bananas, and crushed pecans to up their healthfulness.</p>
<p>I was surprised by these pancakes &#8211; I was expecting them to be decent, but not particularly good. I just haven&#8217;t had that much luck with whole wheat baking in the past, and I also have <a href="http://katieatthekitchendoor.com/2011/10/12/apple-pancakes-and-playing-hookey/">really high standards for pancakes</a>, having grown up in a house where mixes were sneered upon and a fresh batch of dad&#8217;s blueberry-buttermilk pancakes was a weekend staple. However, these healthy little guys ticked off all my pancake check-boxes &#8211; they were tender, moist, flavorful, and thick. The fact that I could eat two with a generous drizzle of maple syrup and not feel guilty about it was just an added bonus. I will definitely be making these again!</p>

<li style="text-align: center;">1 c. whole wheat flour</li>
<li style="text-align: center;">1/2 c. rolled oats</li>
<li style="text-align: center;">1/4 c. crushed or roughly chopped pecans</li>
<li style="text-align: center;">2 tsp baking powder</li>
<li style="text-align: center;">1/2 tsp cinnamon</li>
<li style="text-align: center;">1/4 tsp salt</li>
<li style="text-align: center;">1 ripe banana</li>
<li style="text-align: center;">1 egg</li>
<li style="text-align: center;">1 1/2 c. buttermilk</li>
<li style="text-align: center;">1 tsp almond extract</li>
<li style="text-align: center;">1 c. frozen or fresh mixed berries</li>
<li style="text-align: center;">cooking spray or a small pat of butter</li>
</ul>

<li>In a medium bowl, mix together the flour, oats, pecans, baking powder, cinnamon, and salt to combine. In another medium bowl, mash the banana into a paste, then beat in the egg, buttermilk, and almond extract to combine. Add the wet mixture to the flour mixture, and stir until evenly mixed.</li>
<li>Spray a large skillet with cooking spray and heat over medium-low heat, or melt butter in skillet over medium-low heat. Make pancakes using 1/3 c. batter each. Top each pancake with a few berries. Cook for 3-4 minutes, or until the batter is bubbling on the top of the pancake and the bottom is golden brown, then flip and cook for 3-4 minutes on the other side. Repeat until batter is gone. Serve warm with extra berries and maple syrup. Place any extra cooked pancakes in plastic bags and refrigerate to store.</li>

<p>So it&#8217;s Thanksgiving.  And the food blogosphere has been inundated with sweet potatoes, cranberries, pie crusts, and 4-day turkey brining processes.  Which is all great and mouthwatering and exciting, except that I&#8217;m not in charge of Thanksgiving.  And I&#8217;m the kind of person who actually loves Stove Top stuffing and plain old mashed potatoes once a year.  So I&#8217;m not contributing any fancy new dishes to our table or experimenting with pie fillings or scouring cookbooks for stuffing recipes.</p>

<p>Instead, I&#8217;m going to do whatever my mother tells me I can do to help.  And the first of these things was to help her with the shopping.  Which I did.  But then amongst the acorn squash and fresh cranberries and bags of shallots, I found endives.  For a price that was significantly less than the ridiculous $4 a piece they cost in the Durham Wholefoods.  And since I&#8217;ve been meaning to share this endive recipe pretty much since the creation of this blog, I decided to buy them.</p>
<p>And that, my friends, is how it came to pass that I&#8217;m sharing a light, summery appetizer with you on the day before Thanksgiving, completely bucking national food blogging trends.  Although they would make a good cocktail party appetizer.  And it is kind of the start of cocktail party season.  And candied pecans are actually pretty seasonal too.  So maybe I&#8217;m not as far off the mark as I thought.  Either way, I really enjoy these.  They&#8217;re simple, and elegant, and well-balanced, and infinitely variable too.</p>

<p>A few notes about candying nuts: I fell in love with candied nuts in Prague, where you can buy them on every street corner as soon as the weather turns cold.  I&#8217;d frequently run down to the square between classes for a little paper packet of sugared almonds and a cup of hot wine (man, talk about living the life, right?)  As a result of this, I ended up craving them all the time, and so I&#8217;ve experimented with several ways of getting the perfect, warm, crispy, sugared nut.  You can either do them on the stove top or in the oven: they&#8217;ll be done more quickly on the stove top, and you only need water and sugar, but your technique is more important &#8211; if you don&#8217;t stir constantly you&#8217;ll end up with a caramel mess and soggy nuts.  They take longer in the oven, your results will be consistently good.  I think I prefer the end result of the oven roasted nuts better, so if you have the time, do them in the oven!</p>

<ul>
<li style="text-align:center;">2 belgian endives</li>
<li style="text-align:center;">4 oz. crumbled blue cheese</li>
<li style="text-align:center;">3/4 c. candied pecan pieces, see recipe below</li>
<li style="text-align:center;">honey</li>
</ul>
<p>Slice off the bases of the endives.  Remove small and damaged outer leaves.  Carefully separate leaves from the base so that they remain intact.  Fill the white part of the endive with crumbled cheese and pecan pieces.  Arrange on platter and drizzle with a small amount of honey.</p>

<ul>
<li style="text-align:center;">2 c. pecan halves and pieces</li>
<li style="text-align:center;">1 egg white</li>
<li style="text-align:center;">1 TBS water</li>
<li style="text-align:center;">1/4 tsp. vanilla</li>
<li style="text-align:center;">1/2 c. sugar</li>
<li style="text-align:center;">1 tsp. cinnamon</li>
<li style="text-align:center;">3/4 tsp. salt</li>
<li style="text-align:center;">1/2 TBS butter</li>
</ul>
<ol>
<li>Preheat oven to 250°F.  Use butter to grease a baking pan.</li>
<li>Beat egg white with water and vanilla until frothy.  In a separate bowl, mix together sugar, cinnamon, and salt.</li>
<li>Mix pecans with egg white mixture until they are all moistened.  Then transfer to the sugar mixture and stir until pecans are fully coated.  Spread pecans on greased pan in a single layer and bake for 1 hour, stirring every 15 minutes.</li>
