<p>After dipping my toe back in the water <a href="http://katieatthekitchendoor.com/2015/12/08/december-fitness-goals-vegetarian-chili/" target="_blank" rel="noopener noreferrer">last month</a>, I am officially bringing back my monthly <a href="http://katieatthekitchendoor.com/tag/fitness-goals/" target="_blank" rel="noopener noreferrer">fitness goals</a> series. Because boy do I need to get this body back into shape! A year of heavy travel and stressful life decisions apparently takes its toll. And since the approach of setting goals month by month (and holding myself accountable here) worked pretty well last time around, that&#8217;s where I&#8217;m starting again.</p>

<p>I&#8217;ve mentioned it in passing, but I&#8217;ll be spending most of this month in Hong Kong on an extended work trip. I&#8217;m getting more and more excited as it gets closer. I plan to have a regular exercise routine while I&#8217;m there, but more importantly, I want to make sure I am getting out and exploring as much as I can. And hiking! Hong Kong has incredible hiking all within easy commute of the downtown areas, and I plan on taking full advantage of the warm temperatures to make it a January full of long walks and the great outdoors. Offset, of course, by dim sum and roast pork but that&#8217;s a different conversation. Accordingly, my goal for this month is just about being out there, and steps is how I&#8217;m going to measure it. At a minimum, I want to hit 10K every day, and if that means that when I get home from work with 5,000 steps we have to venture out for a twilight walk to find the best dumplings in a new neighborhood? All the better. The only out I get are my two full plane days, and even then, I&#8217;ll do my best in the airport hallways. And come February, I&#8217;ll be reporting back here about the best hikes and long walks for exploring the city.</p>

<p>I&#8217;ve been making this oatmeal all year, but January seemed like a particularly good time to share it. This is super quick to make, and isn&#8217;t much of a stretch from a normal bowl of oatmeal &#8211; the only difference is that instead of adding brown sugar, banana, and nuts as toppings, you saute them in a bit of butter to start, then cook the oatmeal right on top of them, so you end up with a bowl of creamy oats deeply infused with sweet, buttery, banana-y goodness. Although I&#8217;m calling it bananas foster, I haven&#8217;t added any rum &#8211; that would definitely take it out of healthy breakfast territory &#8211; but I promise you it still tastes like bananas foster should. Only, in oatmeal form. For breakfast.</p>

<li id="instruction-step-1">In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir until melted, about 1 minute. Add the pecans and sliced banana and stir to coat in the brown sugar mixture. Cook until bananas are soft and fragrant, about 3-4 minutes, stirring frequently. Spoon half of the banana mixture into a bowl for topping your oatmeal.</li>
<li id="instruction-step-2">Add the oats and cinnamon to the remaining half of the banana mixture still in the pan. Stir to coat the oats in the sauce. Toast the oats for 1 minute, then add the milk. Cook, stirring frequently, until oatmeal is thick and oats are soft, about 5-8 minutes, then remove from the heat. Divide oatmeal between two bowls and top with the reserved banana mixture. Serve immediately.</li>

<p>Back in September, I did a little <a title="Better Breakfast Month and Giveaway // Cinnamon-Almond Waffles with Apple Pie Topping" href="http://katieatthekitchendoor.com/2013/09/29/better-breakfast-month-and-giveaway-cinnamon-almond-waffles-with-apple-pie-topping/">recipe development</a> for the California Almond Board, after which I found myself with a lot of leftover almonds and a huge tub of almond butter sitting in my pantry. I&#8217;ve always been a faithful peanut butter lover, but I started playing around with the almond butter, adding a little bit to my various breakfast recipes to see how I liked it. I quickly stumbled upon a combination that I couldn&#8217;t get enough of &#8211; oatmeal flavored with thick pieces of cooked apple, a sprinkling of cinnamon and brown sugar, and a healthy tablespoon of almond butter swirled in at the end. It was sweet, it was creamy, it was filling, and it satisfied my autumnal cravings for a hot breakfast without the guilt of some of my other hot-breakfast staples. I dubbed it &#8220;Apple Pie Oatmeal,&#8221; and proceeded to make all my coworkers jealous of the warm, sweet-smelling breakfast I was enjoying every morning. Yes, my coworkers, because one of the best things about this recipe is that it&#8217;s portable &#8211; you can assemble all the ingredients for this in a tupperware before you leave for work, microwave it for 2 minutes once you&#8217;re there, and have a warm, delicious breakfast to savor at your desk. Believe me, it really brightens up a dreary morning. After four months of eating this for breakfast at least once a week, it has become a tried and true favorite, and I figured it was high time I shared it with you.</p>
<p>I want you to know: I&#8217;ve experimented a lot with this recipe. I&#8217;ve swapped out the apples for frozen blueberries and raspberries. I&#8217;ve used maple syrup instead of brown sugar. I&#8217;ve replaced the almond butter with peanut butter and tried omitting the cinnamon. However, nothing is as good as that initial combo: oats, milk, apples, brown sugar, cinnamon, almond butter. It&#8217;s perfect. That said, you should feel free to play around with it on your own! Just don&#8217;t be surprised if you find yourself coming back to the original, too.</p>

<p style="text-align: center;"><em>Serves 1.</em></p>
<p style="text-align: center;"><em>Note: I prefer making this in the microwave &#8211; it&#8217;s faster, less messy, and the apples get softer. However, it&#8217;s also good on the stovetop if you prefer to make it that way. I&#8217;ve included instructions for both, below.</em></p>
<ul>
<li style="text-align: center;">1/2 c. oats</li>
<li style="text-align: center;">1 c. skim milk</li>
<li style="text-align: center;">1 small apple, cored and cut into 1/2 inch cubes</li>
<li style="text-align: center;">1/2 tsp cinnamon</li>
<li style="text-align: center;">1 TBS almond butter</li>
<li style="text-align: center;">1 TBS brown sugar</li>
<li style="text-align: center;">1 TBS sliced almonds, toasted in a dry skillet (optional)</li>
</ul>
<ol>
<li>If making in the microwave: combine all ingredients except the sliced almonds in a microwave-safe tupperware or bowl. Cover loosely with a lid or paper towel, and microwave on high for one minute. Remove, stir, and return to microwave. Microwave in 30 second intervals until oats and apples are cooked and slightly soft, stirring in between intervals in the microwave. It usually takes only two or three 30 second intervals to finish the oatmeal. Careful &#8211; if you cook it too long it might overflow from the bowl, so watch it closely! Sprinkle the toasted almonds over the top, and serve.</li>
<li>If making on the stovetop: combine oats, milk, and apple in a small pot. Cook over medium-low heat, stirring frequently, until oats and apples are soft, about 5-8 minutes. Remove from heat, and stir in cinnamon, almond butter, and brown sugar until fully incorporated. Sprinkle with toasted almonds and serve.</li>

<p>Sometimes when your mind is in a hundred different places, you can forget to choose nourishing foods (especially if all your equipment for making nourishing foods happens to be packed away in boxes). But when you&#8217;re slammed is when you most need good energy to get through the day, which is why recipes like this Baked Blackberry Oatmeal from <a href="http://www.amazon.com/dp/0847839605/ref=as_li_qf_sp_asin_til?tag=katatthekitdo-20&amp;camp=0&amp;creative=0&amp;linkCode=as1&amp;creativeASIN=0847839605&amp;adid=0KHK01AF6B88C9D2125F">Vegetarian Everyday</a> are minor life savers. It&#8217;s effortless to throw together, low on fat and sugar, high on fiber and protein, craveably good, and one batch is enough for breakfasts and snacks all week. I would venture to say that this might be the best baked oatmeal you&#8217;ll ever have &#8211; the huge volume of blackberries oozes up into the oats making it taste like a giant blackberry muffin, and the crunchy, maple-sweetened topping tastes like something that should be really bad for you, but it isn&#8217;t at all. And if you live near any sort of bramble patch, now is the time to make this &#8211; we have more ripe blackberries in our garden than we can keep up with and I&#8217;m sure some of you have the same problem.</p>

<li style="text-align: center;">2 1/2 c. fresh blackberries</li>
<li style="text-align: center;">1 1/3 cups rolled oats</li>
<li style="text-align: center;">1 tsp baking powder</li>
<li style="text-align: center;">1/2 tsp ground ginger or cinnamon</li>
<li style="text-align: center;">pinch of sea salt</li>
<li style="text-align: center;">2 large eggs</li>
<li style="text-align: center;">1 1/2 c. milk</li>
<li style="text-align: center;">3/4 tsp vanilla extract</li>
<li style="text-align: center;">1/4 c. maple syrup, plus more for serving</li>
<li style="text-align: center;">1/2 c. pumpkin seeds</li>
<li style="text-align: center;">1/2 c. pecans or hazelnuts, roughly chopped</li>
<li style="text-align: center;">1/4 c. sunflower seeds</li>
</ul>
<ol>
<li><span style="line-height: 15px;">Preheat the oven to 325°F. Grease a loaf pan with butter. Pour the blackberries onto the bottom of the pan and spread so they are at an even height.</span></li>
<li>In a large bowl, mix together the oats, baking powder, ginger or cinnamon, and salt. Pour over the blackberries. Whisk the eggs, milk, and vanilla extract together in the same large bowl, then pour over the oats, evenly soaking the entire mixture.</li>
<li>In a small bowl, use your fingers to mix together the maple syrup, pumpkin seeds, nuts, and sunflower seeds until they are all evenly coated. Sprinkle the seed mixture over the top of the oatmeal. Bake for 50 minutes to 1 hour, until the oatmeal is set and the seeds are lightly browned and crunchy. Serve at any temperature with a drizzle of maple syrup. Keep leftovers in the fridge.</li>
