<p>March is a hard month for cooking. It feels like it should be spring &#8211; we&#8217;re so ready for the sunshine and for green to return to the trees! And, perhaps more pressing, we are ready for winter to be over. Even though I escaped Boston for 5 weeks in January and early February, I&#8217;m <span style="font-style: italic;">still</span> ready for it to be over. We&#8217;ve had a handful of sunny days this month, but here in Massachusetts, it&#8217;s still very much winter. As evidenced by the windchill of -6°F this weekend and the Nor&#8217;easter bearing down on us today.</p>

<p>By extension, March is a hard month for food blogging. There&#8217;s no local produce to inspire, no major food holidays. Just a craving for summer mixed with the reality of winter. In past years, I&#8217;ve posted everything from <a href="http://katieatthekitchendoor.com/2014/03/01/butternut-squash-carbonara-with-fried-sage-and-caramelized-onions/">Butternut Squash Carbonara</a> to <a href="http://katieatthekitchendoor.com/2015/03/03/kittery-foreside-apple-cider-french-crullers/">Apple Cider Doughnuts</a> to <a href="http://katieatthekitchendoor.com/2013/03/01/n-e-e-t-magazine-feature-strawberry-balsamic-salad-with-candied-pecans-and-goat-cheese/">Strawberry Balsamic Salad</a> &#8211; no seasonal cohesion to speak of.</p>
<p>It&#8217;s a transitional eating period, but instead of the abundance of September and October, we&#8217;re left with the dregs of the root cellar. We&#8217;re still at least a month away from the first tender greens and peas. We&#8217;re no longer excited about brussels sprouts and squash. All we want is the first cocktail-on-the-porch Saturday afternoon.</p>

<p>So this year, I&#8217;m making a concerted effort to come up with and share recipes that are appropriate for March. Recipes that are warm and nourishing without being heavy and rich. Recipes that shift towards spring without leaving you unsatisfied. They all have an element of brightness. I hope they will help inspire you in the kitchen this month while we wait patiently for spring.</p>

<p>This Salmon en Papillote with Potatoes and Dill Butter is an easy weeknight meal that perfectly fits the bill. Salmon is a richer fish, still fatty and satisfying, but not heavy like a roast or stew. The dill butter adds a bright, herbal note and makes it feel a little fancy. As a bonus, it&#8217;s one of the simplest recipes on this blog and its pretty healthy. The trifecta for dinner recipes: tasty, healthy, easy.</p>

Serves 2.</em></p>
<ul>
<li style="text-align: center;">4 TBS salted butter</li>
<li style="text-align: center;">3 TBS finely chopped fresh dill</li>
<li style="text-align: center;">pinch sea salt</li>
<li style="text-align: center;">6 small red or white potatoes</li>
<li style="text-align: center;">Two 6 oz. salmon fillets</li>
<li style="text-align: center;">2 TBS dry white vermouth</li>
</ul>
<ol>
<li>Mix the softened butter and chopped dill together in a small bowl until thoroughly combined. Sprinkle with sea salt. Cover and chill in the fridge until ready to use.</li>
<li>Thinly slice the potatoes and add to a medium pot. Cover with cold water. Season lightly with salt and bring to a boil over medium heat. Boil just until the potatoes are tender, about 8 minutes. Drain the potatoes and set aside.</li>
<li>Preheat the oven to 400°F. Cut out four squares of parchment paper that are about 1 foot long/wide. Double up the squares so there are two in a stack. Place a knob of dill butter in the middle of each stack, then layer potato slices over the butter. Place a piece of salmon on top of the potatoes, then top with a few dots of dill butter and a little sea salt. Pour 1 TBS of vermouth over each piece of fish. Bring two edges of the packets together over the fish and fold down a few times, then twist the open ends to seal the packets. Place on a rimmed baking sheet and bake for 10-12 minutes, until the salmon is just cooked through. Unwrap carefully at the table and serve.</li>

<p>We knew it wouldn&#8217;t last, and it didn&#8217;t. This weekend fickle March is welcoming us with a cold snap and below freezing temperatures. But that reminder that there are days where no jacket is required, where slow afternoons outdoors are the norm, was just what we New Englanders needed to help push on to spring.</p>

<p>We&#8217;re in the last days of comfort food &#8211; already my cravings are starting to shift towards brighter, greener flavors. So I figured now was a good time to post one last warming soup for the season. This Portuguese Kale Soup is a family favorite, something we&#8217;ve been making for years. Actually, it was one of the very first recipes that I ever posted, <a href="http://katieatthekitchendoor.com/2010/02/19/this-stuff-is-good-for-you/">way back in 2010</a>. (Look at those pictures! Good for perspective, no?) It&#8217;s still one of my favorite recipes, although I&#8217;ve tweaked it a bit as I&#8217;ve become a better cook. Since we just got home from Portugal, now seemed like a good time to give it a refresh.</p>

<p>While we were in Portugal in January, I ate plenty of bowls of green and filling <em>caldo verde</em>. But <em>caldo verde</em> and this Portuguese Kale and Linguiça Soup, while largely based on the same ingredients, are somehow very different. Where <em>caldo verde</em> is mild and very green, this soup is assertive and tangy, rich with the flavors of tomato and vinegar. After some research, I think this particular soup may very much be a Massachusetts-special: not strictly traditional Portuguese, but a <a href="http://www.iamprovincetown.com/Cookbook/soups.html">Provincetown</a> evolution.</p>

<p>I realize that 3 of my last 5 recipes have been soups (what can I say? I know my strengths), so I promise that after this we&#8217;ll move on to other food groups. <li style="text-align: center;">1 large carrot, peeled and grated</li>
<li style="text-align: center;">sea salt</li>
<li style="text-align: center;">3 cloves of garlic, minced</li>
<li style="text-align: center;">1/2 tsp cumin</li>
<li style="text-align: center;">5 cups <a href="http://katieatthekitchendoor.com/2017/02/14/perfect-homemade-chicken-stock/">chicken stock</a></li>
<li style="text-align: center;">3 medium Yukon gold potatoes, cut into 1/2 inch cubes</li>
<li style="text-align: center;">1 large bunch of kale finely chopped</li>
<li style="text-align: center;">One 14.5 oz can of crushed tomatoes</li>
<li style="text-align: center;">8 oz. linguiça, cut into 1/4 inch slices</li>
<li style="text-align: center;">One 15 oz can of kidney beans, drained and rinsed</li>
<li style="text-align: center;">1 tsp red wine vinegar</li>
</ul>
<ol>
<li>Heat the olive oil in a soup pot over medium heat. Add the grated onion and carrot and season with sea salt. Saute until tender, about 6-8 minutes, stirring frequently. Add the minced garlic and the cumin and cook for 2 minutes longer, stirring.</li>
<li>Add the chicken stock, cubed potatoes, kale, crushed tomato, and linguiça to the pot, and stir to combine. Bring to a boil then reduce the heat slightly and simmer for 30 minutes, until potatoes and kale are very tender. Add the kidney beans and vinegar and cook for 5 minute longer, just to heat the beans through. Serve hot with crusty bread.</li>

<p>We spent last weekend in Maine, in what felt like the real kick-off to the summer. I love the way Maine smells – like pine needles drenched in sun, freshly cut hay, lake water, wood shavings, and the occasional whiff of smoke. When I step out of the car I inhale deeply, taking in everything sweet and fresh and good about a place where days are spent outdoors and the windows are always open. It was a blissful few days. I went swimming every day, hiked on mossy trails and rocky ones, ate fried seafood overlooking the harbor, and caught a few beautiful sunsets – one from a small cabin deck with a 180° view of the ocean, one from the middle of the harbor, bobbing gently in our boat, and two from the picnic table where we gather for wine and dinner. I can’t wait to go back.</p>

<p>While we were there, we put together a sunny Sunday brunch featuring Stonewall Kitchen products in celebration of their 25<sup>th</sup> anniversary. Stonewall Kitchen is a Maine company through and through, headquartered in a beautiful space in York, Maine. They are probably most famous for their jams and jellies (especially the Wild Maine Blueberry Jam!), but I’ve tried a number of their sauces and spreads and all of their products are truly high quality and delicious. Started by two young men selling their jams and chutneys at a farmer’s market, Stonewall Kitchen has expanded into a company that is a household name for many. <p>For our brunch, we used four Stonewall products to put together three delicious recipes. First, Sea Breeze Mimosas, the simplest thing in the world to make – just a splash of chilled cranberry-grapefruit <a href="https://www.stonewallkitchen.com/sea-breeze-mixer-172412.html">Sea Breeze Mixer</a>, a dash of cranberry bitters, and a healthy pour of prosecco. If you’re getting an extra strong start to your day, a little bit of vodka added to the mix doesn’t hurt either. Second, a Smoky Roasted Garlic Hash – potatoes sautéed with shallots, <a href="http://www.stonewallkitchen.com/roasted-garlic-oil-551004.html#start=2">Roasted Garlic Oil</a> and smoked paprika, strips of roasted red pepper and poblano, a sprinkling of scallions, and a crispy olive-oil fried egg to top each serving. And to finish off the dish, an essential topping: <a href="http://www.stonewallkitchen.com/habanero-mango-hot-sauce-270801.html#q=hot%2Bsauce&amp;start=2" target="_blank">Habanero Mango Hot Sauce</a>. This smoky, slightly sweet, slow-burn hot sauce is absolutely delicious – I’m kicking myself for leaving it behind with my family (we put it on everything from eggs to burgers to baked beans over the course of the weekend).</p>

<p>The last recipe, and in my opinion the star of the show, Wild Maine Blueberry Jam Doughnuts. These are the doughnuts of your dreams – light, just a little bit chewy, rolled in a generous amount of cinnamon sugar, and stuffed to the gills with <a href="http://www.stonewallkitchen.com/wild-maine-blueberry-jam-M101305.html#start=1" target="_blank">Wild Maine Blueberry Jam</a>. There’s a trendy/hipster doughnut shop near us in Boston that makes jelly doughnuts that I dream about (so much so that I got one for my birthday breakfast for the past two years) – and these were even better. Every single one of my family members tried to have just one and ended up eating two – even my weight-lifting, sugar-avoiding little brother.</p>

<p style="text-align: center;"><em>Makes 12 large doughnuts. Recipe adapted from <a href="http://www.tasteofhome.com/recipes/jelly-doughnuts">Taste of Home</a> and <a href="http://www.seriouseats.com/recipes/2013/11/thanksgiving-hanukkah-cranberry-sauce-jelly-doughnut.html">Serious Eats</a>.</em></p>
<ul>
<li style="text-align: center;">1 c. milk, heated until warm but not hot to the touch</li>
<li style="text-align: center;">2 packages active dry yeast</li>
<li style="text-align: center;">1/4 c. plus 1 TBS sugar, divided</li>
<li style="text-align: center;">3 TBS softened butter</li>
<li style="text-align: center;">1/2 tsp salt</li>
<li style="text-align: center;">2 eggs</li>
<li style="text-align: center;">1 1/2 c. AP flour</li>
<li style="text-align: center;">1 1/2 c. bread flour</li>
<li style="text-align: center;">canola oil or shortening, for frying</li>
<li style="text-align: center;">1 c. sugar mixed with 2 tsp ground cinnamon, for coating</li>
<li style="text-align: center;">2 jars <a href="http://www.stonewallkitchen.com/wild-maine-blueberry-jam-M101305.html#start=1">Stonewall Kitchen Wild Maine Blueberry Jam</a></li>
</ul>
<ol>
<li>Place warm milk in a small bowl. Sprinkle yeast over the top of the milk, along with 1 TBS of the sugar. Stir for 30 seconds, then let stand 10 minutes, until yeast is foamy. Set aside.</li>
<li>In a large bowl, cream butter and remaining 1/4 c. sugar together until light and fluffy. Stir in salt, then beat in eggs until completely mixed in. Add milk and both kinds of flour and stir until a smooth dough is formed. Knead dough until it is smooth and elastic, about 5 minutes. Place dough in a lightly greased bowl, cover with plastic wrap, and let rise in the fridge overnight.</li>
<li>When ready to fry doughnuts, remove the dough from the fridge. Shape into a flat disc, then roll out on a floured surface to a thickness of 1/4 inch. Use a biscuit cutter or glass to cut 3 inch circles out of the dough, and place doughnuts on a baking sheet or tray. Re-roll any scrap dough to make more doughnuts. Cover doughnuts with a towel and let rise for 20 minutes.</li>
<li>Heat canola oil or shortenining in a high-sided frying pan or dutch oven until the temperature reaches 350-375ºF. Fry doughnuts one at a time in the hot oil, flipping once. Doughnuts should fry for about 1 minute per side before they are golden brown on the outside and cooked all the way through. You may need to adjust the temperature up or down as you go.</li>
<li>Combine the 1 c. sugar and 2 tsp cinnamon in a paper bag. Immediately after frying each doughnut, place it in the paper bag and shake the bag to coat the doughnut with cinnamon-sugar before placing it on a plate to cool. Repeat the frying and sugar coating process until all doughnuts are cooked.</li>
<li>Once the doughnuts are cool to the touch, begin filling them. Place the blueberry jam in a pastry bag fitted with a pastry tip. Insert the pastry tip into the side of the doughnut and fill until the doughnut is heavy and jam is starting to come out the front of the doughnut. Serve doughnuts as soon as possible after filling them.</li>

<li style="text-align: center;">8-10 medium Yukon Gold potatoes, washed and cut into 1/2 inch chunks</li>
<li style="text-align: center;">1 tsp white vinegar</li>
<li style="text-align: center;">sea salt</li>
<li style="text-align: center;">2 TBS <a href="http://www.stonewallkitchen.com/roasted-garlic-oil-551004.html#q=roasted%2Bgarlic%2Boil&amp;start=2">Stonewall Kitchen Roasted Garlic Oil,</a> divided</li>
<li style="text-align: center;">1 tsp smoked paprika</li>
<li style="text-align: center;">1 poblano pepper</li>
<li style="text-align: center;">1 red pepper</li>
<li style="text-align: center;">4 slices bacon, cut into 1/2 inch pieces</li>
<li style="text-align: center;">3 large shallots, peeled and thinly sliced</li>
<li style="text-align: center;">1 TBS olive oil</li>
<li style="text-align: center;">4 eggs</li>
<li style="text-align: center;"><a href="http://www.stonewallkitchen.com/habanero-mango-hot-sauce-270801.html#q=mango&amp;start=5">Stonewall Kitchen Habanero Mango Hot Sauce</a>, for serving</li>
</ul>
<ol>
<li>Add the cubed potatoes and white vinegar to a large pot. Fill with cold water to cover the potatoes and salt generously. Bring to a boil over medium heat, and boil gently until potatoes are just tender when poked with a fork, about 15 minutes. Drain the potatoes, then toss with 1 TBS of the roasted garlic oil and the smoked paprika. Set aside.</li>
<li>Preheat the broiler to high. Place the poblano pepper and red pepper on a foil-lined, rimmed baking sheet, then place under the broil. Broil until pepper skin is beginning to blacken and blister, then use tongs to turn the peppers to another side. This should take about 5 minutes per side. Once peppers are blackened all over, remove from the oven and set aside to cool. Once cool, remove and discard the stems and seeds, and slice the pepper flesh into thin strips.</li>
<li>Heat a large frying pan over medium heat and add bacon. Fry until browned and crispy, about 8-10 minutes, stirring frequently, then add the sliced shallots and saute until golden brown. Add the cooked potatoes to the pan and season generously with sea salt. Fry the potatoes until golden brown all over, stirring occasionally, about 15-20 minutes total. Remove from the heat and mix with the sliced peppers. Transfer to a large platter.</li>
<li>Heat the olive oil over medium-low heat in a frying pan. Carefully crack the eggs into the hot oil and fry sunny-side up. Place the fried eggs on top of the potato hash. Serve with the Habanero Mango Hot Sauce.</li>

<p><strong>The Book:</strong> Iceland is at the very top of my travel wishlist. The dramatic landscapes and vast, untouched wilderness have me aching to throw my hiking boots in a bag and hop on a plane across the Atlantic. In reality, I&#8217;ll be getting on planes to a lot of different places in the next few months &#8211; Colombia, Chile, and Charleston for starters &#8211; but none of them will be going to Iceland. I certainly can&#8217;t complain about the wonderful places I <em>will</em> be going, but that doesn&#8217;t mean I can&#8217;t daydream about Iceland at the same time. The book <a href="http://www.amazon.com/North-The-Nordic-Cuisine-Iceland/dp/1607744988/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=ACI6BUGA2CS5EJS7&amp;creativeASIN=1607744988"><em>North: The New Nordic Cuisine of Iceland</em>, is</a> one way to amp up my daydreaming. It&#8217;s a cookbook, sure, but I have to say that it feels like more than a cookbook to me. The interviews with food producers and stories of life on the island are as important to the book as the recipes themselves. The book is organized not by meal or by region, but by producer &#8211; a chapter for the arctic char smoker, one for the salt maker, and for the birch and mushroom forager. It was truly fascinating to learn about rugbraud, the hearty rye bread that is baked in underground geyser ovens, and about Siggi Henningson, a fisherman who spends his afternoons rapelling over cliffs to collect seabird eggs, not for himself, but for the entire town. The structure of the book and the stories paint a clear picture of where Iceland&#8217;s food comes from, on both land and sea.</p>

<p>I knew in advance that many of the recipes in North would be too esoteric to ever make at home, but was thoroughly intrigued anyway. The flavors throughout the book are consistent and coherent: smoke, salt, rich dairy, bright pickles, oily fish, and grassy herbs, the foods of a cold and isolated island. The fact that some ingredients may be hard (or impossible) to find outside of Iceland (seabird eggs, anyone?) is readily acknowledged, and many substitutions are offered &#8211; the authors have even provided an email you can reach out to with questions. The recipes also skew towards fine dining more than rustic eating &#8211; one of the authors is, after all, the chef at <a href="http://dillrestaurant.is/en">Dill</a>. But although I know that I will never go to the trouble of making Lumpfish Roe with Smoked Mayonnaise, Beer Vinegar Jelly, and Horseradish Cream (smoke your own oil to make your own smoked mayonnaise, make your own beer vinegar and then turn it into jelly, you get the picture), other recipes can certainly be tweaked to fit into my repertoire &#8211; like Fennel Salad with Cottage Cheese and Spiced Nuts, or Poached Cod Cheeks in Roasted Cod Soup. Whether or not I find myself cooking from this book regularly, it&#8217;s so full of general inspiration that it deserves a place on my bookshelf, esoteric recipes or not.</p>

<p><strong>The Food: </strong>One of the recipes that felt approachable enough to try was for Bacalo Potatoes with Fennel Ribbons and Sorrel Ash. I had to be a bit generous with my interpretation of this recipe, taking inspiration as much from the headnote and author Jody Eddy&#8217;s description of the ways they ate this throughout their trip, as from the recipe itself. The base of this recipe is creamy mashed potatoes mixed with bacalo, or salt cod, a combination sometimes called brandade. As written, the potatoes and cod are served topped with sorrel ash, roasted carrots, fennel ribbons, soft boiled eggs, and freshly grated horseradish. Since both sorrel and horseradish are hard to come by without planning ahead, I nixed them and decided to take a more rustic approach to the meal &#8211; serving the mash on hearty whole grain bread spread with mustard (a decent replacement for the pungent horseradish). I also skipped the eggs, as once you smear potatoes on toast you don&#8217;t feel like you need that many more things on top. Although I usually try to stick to the letter when testing recipes for cookbook reviews, here, I don&#8217;t feel bad about it. Eddy writes &#8221; One night, Gunnar served it on toast; another, he substituted smoked haddock, an ideal replacement for the cod. The profusion of herbs he added was dictated by whatever we foraged that day.&#8221;  It&#8217;s a recipe that is more idea than science. I&#8217;ve written it here the way I made it, inspired by the instructions in <a href="http://www.amazon.com/North-The-Nordic-Cuisine-Iceland/dp/1607744988/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=ACI6BUGA2CS5EJS7&amp;creativeASIN=1607744988">North</a>.</p>

<ul>
<li style="text-align: center;">1 lb. salt cod</li>
<li style="text-align: center;">4 large carrots, peeled and cut into bite-sized pieces</li>
<li style="text-align: center;">2 TBS olive oil, divided</li>
<li style="text-align: center;">sea salt and pepper to taste</li>
<li style="text-align: center;">1 lb. waxy potatoes</li>
<li style="text-align: center;">1/2 c. heavy cream</li>
<li style="text-align: center;">4 slices whole grain bread</li>
<li style="text-align: center;">2 TBS mustard</li>
<li style="text-align: center;">2 fennel stalks, peeled into ribbons using a vegetable peeler</li>
</ul>
<ol>
<li>Place the salt cod in a bowl and fill to cover with cold water. Soak in the water in the refrigerator for 24 hours, changing the water 2 to 3 times. When you are ready to prepare the meal, drain and rinse the soaked fish. If it has them, remove and discard the skin and bones. Set the fish aside.</li>
<li>Preheat the oven to 400°F. Toss the carrot pieces with 1 TBS of the olive oil and sea salt and pepper, and spread on a rimmed baking sheet. Roast, stirring every 10 minutes, until tender all the way through, about 20-30 minutes depending on the size of your pieces. Transfer the roasted carrots to a bowl and set aside.</li>
<li>Add the salt cod to the roasting pan and roast until warmed through, about 8-10 minutes. Break into flakes and keep warm.</li>
<li>Peel the potatoes and cut into chunks. Add to a large pot and cover with cold water. Salt water generously. Bring to a boil over medium-high heat, and boil until potatoes are tender, about 5-8 minutes. Drain the potatoes and mash with a potato masher. Add the heavy cream and mash until incorporated, then stir in the warm salt cod pieces. Season to taste with pepper.</li>
<li>Rinse and dry the roasting pan, then brush the bread slices with the remaining 1 TBS of olive oil. Reduce the oven temperature to 350°F and toast the bread until golden brown, about 5-7 minutes per side. Remove the bread from the oven and spread with the mustard. Top with a generous heap of the potatoes and cod, and several pieces of roasted carrot. Just before serving, shave the fennel stalks into thin ribbons using a vegetable peeler and place on top of the potatoes. Serve immediately.</li>

<p><strong>The Book:</strong> Every season I receive a handful of cookbooks in the mail that weren&#8217;t previously on my radar. I don&#8217;t review everything that comes across my doorstep, but every once in a while I get a surprise gem that I never would have thought to look at otherwise. This fall, <em><a href="http://www.amazon.com/Duck-Waffle-Recipes-Daniel-Doherty/dp/1845339576/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=6PMZ3E7QFUSUF2UU&amp;creativeASIN=1845339576">Duck &amp; Waffle</a></em>, the cookbook from the trendy London restaurant of the same name, was that unexpected treasure. Right away you can tell that this book is exceptionally creative: &#8220;Dossants&#8221; &#8211; croissants stuffed with amaretto donut cream? PB&amp;J turned into french toast? Spicy ox-cheek filled doughnuts? I am so in. This book is packed with comfort food recipes but with fancy ingredients and flavors &#8211; so basically, right up my alley. As you might have guessed, this is not food for when you&#8217;re craving something light. In fact, the chef and author Daniel Doherty writes in his recipes for Grilled Cheese with Ox Cheek, &#8220;as always, feel free to add one of the magical three: bacon, more cheese, or hot sauce.&#8221; Words to live by. The breakfast and brunch chapter is where this book really shines, but there are some inspired dinner and dessert picks as well. Whatever time of day it is, flipping through <em><a href="http://www.amazon.com/Duck-Waffle-Recipes-Daniel-Doherty/dp/1845339576/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=6PMZ3E7QFUSUF2UU&amp;creativeASIN=1845339576">Duck &amp; Waffle</a></em> is going to make you hungry.</p>

<p><strong>The Food:</strong> If a book has a recipe for something called &#8220;hangover hash,&#8221; how can you not make it? Whether or not you&#8217;ve had a bit too much to drink the night before, is there anything more appealing than a skillet full of potatoes, sausage, eggs, and cheese set in front of you on a lazy weekend morning? I&#8217;d argue there isn&#8217;t, unless of course you sweeten the pot with a piping hot mocha and a bowl of fresh berries on the side. This hash would shine at any respectable brunch restaurant &#8211; it&#8217;s got potatoes, caramelized onions, an incredible tangy sauce of red peppers and tomato, chorizo, egg, and of course, a healthy handful of grated gruyere cheese. Both the caramelized onions and the peperonata take a long time to prepare, slowly sweating over low heat, but the pay-off is well worth the wait. The peperonata in particular is a flavor powerhouse &#8211; Doherty writes that he is never without a jar in his fridge, and I may have to follow suit. I will say that if you were actually hungover, making this would be altogether too daunting, at least as far as I can tell from my experience with hangovers and cooking. But if you&#8217;re planning ahead, then you&#8217;ll make the caramelized onions, peperonata, and boiled potatoes in advance, and the morning of all you&#8217;ll have to do is put everything in a skillet, put it in the oven, then lie back down and wait 25 minutes for it to be done. And once you&#8217;ve tried the basic recipe, it&#8217;s easy to riff on &#8211; I made my second batch with a fat spoonful of ricotta on top, and next time I think I&#8217;ll replace the caramelized onions with sauteed mushrooms.</p>

Serves 2.</em></p>
<ul>
<li style="text-align: center;">3 TBS olive oil, divided</li>
<li style="text-align: center;">2 large onions, finely sliced</li>
<li style="text-align: center;">1 bay leaf</li>
<li style="text-align: center;">10 new potatoes or 3 medium Yukon Gold potatoes</li>
<li style="text-align: center;">One 4 1/2 inch long cooked, smoked chorizo or andouille sausage, sliced into 1/4 inch rounds</li>
<li style="text-align: center;">1/2 c. peperonata, recipe below</li>
<li style="text-align: center;">2 eggs</li>
<li style="text-align: center;">3/4 c. shredded Gruyere cheese, or a mix of Gruyere and Gouda</li>
<li style="text-align: center;">sea salt and freshly ground black pepper</li>
</ul>
<ol>
<li>Place 2 TBS of the olive oil in a large skillet and heat over low heat. Add the sliced onions and bay leaf and toss to coat with the olive oil. Cook the onions over low heat until golden brown and caramelized all over, stirring every 3-5 minutes &#8211; this should take 40 minutes to 1 hour. If your onions are browning on the outside inside of turning golden, turn down the heat. Remove the bay leaf and season onions to taste with salt.</li>
<li>Cut the potatoes into 1/2 inch cubes. Add to a saucepan and cover with cold water. Salt the water, then bring to a boil over medium-high heat. Boil for 10-15 minutes, until potatoes are tender when pierced with a fork, then drain.</li>
<li>Preheat the oven to 350°F. Divide the cooked potatoes and the sliced sausage between two <a href="http://www.amazon.com/Lodge-L3SK3-Pre-Seasoned-Cast-Iron-6-5-inch/dp/B00063RWT8/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=BRTRCG6DF6FZJDMB&amp;creativeASIN=B00063RWT8">6 inch cast iron skillets</a>. Drizzle with the remaining 1 TBS of olive oil. Bake the potatoes and sausage for 10 minutes, then remove from the oven and stir in the caramelized onions and peperonata. Bake for another 10 minutes, then crack one egg over each skillet and cover with grated cheese. Bake until egg white is cooked through, about another 8-10 minutes, then remove from the oven and serve immediately. Season to taste with salt and pepper.</li>

<li style="text-align: center;">4 large red bell peppers, seeded and sliced into strips 1/4 inch thick</li>

<li style="text-align: center;">4 garlic cloves, peeled and minced</li>
<li style="text-align: center;">sea salt and freshly ground black pepper</li>
<li style="text-align: center;">One 15 oz. can of crushed tomatoes</li>
<li style="text-align: center;">1 bay leaf</li>
<li style="text-align: center;">2 sprigs of thyme</li>
<li style="text-align: center;">2 TBS dark brown sugar</li>
<li style="text-align: center;">4 TBS red wine vinegar</li>

<ol>
<li>Heat the olive oil in a large saucepan, then add the peppers, onions, and garlic. Season to taste with salt and black pepper. Cook, stirring occasionally, until peppers and onions are soft, about 20-25 minutes. Add the tomatoes, bay leaf, thyme, brown sugar, and red wine vinegar and stir to evenly mix. Cook for another 10-15 minutes, until it has a semi-thick sauce consistency. Remove and discard the bay leaf and thyme stems, and store in a jar in the fridge.</li>

<p><strong>The Book: </strong>In some ways, blogger <a href="http://mimithorisson.com/">Mimi Thorisson&#8217;s</a> life is incredibly frustrating to observe from afar &#8211; a country house in France, seven beautiful children, days spent foraging for mushrooms in the woods or shopping at open air markets and then cooking veritable feasts in a giant old kitchen. Add to that a chateau to be renovated as an inn and restaurant, a TV show, a lovely new cookbook, and you would think that more people would envy her to the point of hatred &#8211; but I think it must be impossible to hate Mimi, whose writing and stories clearly show that she is a smart, loving woman who has worked quite hard to be where she is. All this is a long-winded way of saying that when I opened her new book, <a href="http://www.amazon.com/Kitchen-France-Year-Cooking-Farmhouse/dp/080418559X/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=IVNKYVONBZPCJTBY&amp;creativeASIN=080418559X"><em>A Kitchen in France</em></a>, it was not with jealousy but with joy at her success and excitement at discovering more lovely little glimpses into her countryside life.</p>

<p>The book is very much an extension of the blog, with the same look and feel and type of food (although I do wish that more of Mimi&#8217;s thoughtful long-form prose would have made it into the book). All her recipes and stories have a bit of a fairytale aura about them: long treks through the woods, basket on her arm, searching for cepes and late nights around old wooden tables with winemakers discussing the day&#8217;s harvest. You will find some recipe repeats from her blog, but the newly included dishes are more than enough reason to pick up a copy. I would love to have Mimi cook for me one day &#8211; she cooks big, unapologetic meals that celebrate flavor and richness and decadence. They are not meals for a single person or a quick workday lunch eaten at your desk, they are meals that are meant to be shared with family, friends, and strangers, meals that are meant to be cooked slowly and lingered over at the table. Even her &#8220;summer&#8221; dishes have a wonderfully cozy, homey feel to them &#8211; dishes like duck breasts grilled over grape vines and the mustard-roasted poussins featured here. It makes me think that Médoc must be a little bit like Maine, where a warm and hearty dinner at the end of a long day spent outdoors feels appropriate no matter what the season. It&#8217;s a particularly good book to have on hand as we head into the holiday season, when the focus on eating and sharing good food is strongest. And I very much agree with Mimi&#8217;s representation of &#8220;good&#8221; food. And yet, every recipe feels wholesome and nourishing, simply because it is made from ingredients found just down the road, or in the woods, and cooked lovingly at home. Mimi&#8217;s food &#8211; and this book &#8211; is all about flavor, nourishment, and gathering around the table, as it should be.</p>

<p><strong>The Food: </strong>Something about the luxurious presentation of Mimi&#8217;s food had me imagining that it would be fairly complicated to prepare. But as I flipped through the recipes trying to choose one for this post, I realized that most of the recipes are actually quite simple &#8211; I could cook many of them without even making a trip to the grocery store. This recipe for mustard-roasted poussins is no exception, as the only additions I made to my list were creme fraiche and the chicken itself.</p>
<p>I have a confession to make at this point: this was the first time I&#8217;ve ever roasted a chicken. I know. Five years as a food blogger, making things like <a title="Back to Russia // Russian Mushroom and Rabbit Pie" href="http://katieatthekitchendoor.com/2013/10/16/back-to-russia-russian-mushroom-and-rabbit-pie/">rabbit pie</a> and <a title="Spiced Potato and Pea Parathas" href="http://katieatthekitchendoor.com/2014/02/12/spiced-potato-and-pea-parathas/">homemade parathas</a> and <a href="http://katieatthekitchendoor.com/2012/12/06/spqr-modern-italian-food-and-wine/">venison ragu</a>, but I&#8217;ve never done a simple roast chicken. We did <a href="http://katieatthekitchendoor.com/2013/12/15/captains-table-christmas-rum-and-pomegranate-glazed-roast-duck-with-boozy-chestnut-apple-stuffing/">roast a duck</a> last year as part of the Captain Morgan challenge, but I think Trevor did most of the duck handling while I focused on the stuffing. To be honest, I still get a little squeamish working with big pieces of meat. I don&#8217;t know if it comes from my long past vegetarian childhood or just being out of my comfort zone. With a bit of guidance from Mimi, however, I turned out a succulent chicken, flavored with a generous amount of mustard and creme fraiche, a handful of baby potatoes tucked neatly underneath to catch the goodness of the drippings. Although it only took 15 minutes of effort to prepare, lifting the lid to reveal the chicken to Trevor was quite satisfying, in a very domestic way. The reward to effort ratio on this recipe is high, making it an easy decision to add it to our dinner rotation.</p>

<p style="text-align: center;"><em>Note: Poussins as small as 1 1/2 pounds can be tricky to find in the US. We used a young, Kosher chicken that was 3 pounds with great results. A 3-pound chicken provided a generous meal for 2 of us.</em></p>
<ul>
<li style="text-align: center;">1/2 cup Dijon mustard</li>
<li style="text-align: center;">1/4 c. creme fraiche</li>
<li style="text-align: center;">4 TBS unsalted butter, at room temperature</li>
<li style="text-align: center;">juice of 1/2 lemon</li>
<li style="text-align: center;">2 garlic cloves, minced</li>
<li style="text-align: center;">1/4 tsp ground nutmeg</li>
<li style="text-align: center;">Four 1 1/2 pound poussins or guinea hens</li>
<li style="text-align: center;">Fine sea salt and freshly ground black pepper</li>
<li style="text-align: center;">Olive oil for drizzling</li>
<li style="text-align: center;">2 lbs. small new potatoes, scrubbed and halved</li>
</ul>
<ol>
<li>In a medium bowl, combine the mustard, creme fraiche, butter, lemon, garlic, and nutmeg and mix until thoroughly combined. Wash the poussins (chickens) inside and out and pat dry. Rub the mustard mixture on the chickens inside and out, then season generously with salt and pepper. Place in a dish or bowl and let marinate for at least 2 hours or overnight.</li>
<li>When you are ready to cook the chicken, preheat the oven to 350°F. Put the halved new potatoes in a saucepan, cover with cold water, season generously with salt, and bring to a boil over medium heat. Reduce the heat and simmer for 10 minutes, until potatoes are partially tender but still hold their shape firmly. Drain the potatoes.</li>
<li>Put the poussins in individual baking dishes or one large roasting pan. Scatter the potatoes around the poussins, then drizzle everything with olive oil. Roast until the poussins are golden and cooked through (the juices should run clear, not pink, when pricked with a knife, and the internal temperature of the thickest part of the thigh and breast should be greater than 165°F). If the birds are getting too dark, cover with foil.</li>
<li>Serve 1 poussin per chicken with a side of potatoes.</li>

<p><strong>The Book:</strong> When Hillary Davis reached out to me about reviewing her newest book, <a href="http://www.amazon.com/French-Comfort-Food-Hillary-Davis/dp/1423636988/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=DBFNZ6IS7LRU2QSN&amp;creativeASIN=1423636988"><em>French Comfort Food</em></a>, it was the middle of summer, and the days when I&#8217;d be craving French Onion Soup and Coq au Vin seemed almost too distant to imagine. Now that we&#8217;ve seemingly catapulted from fall straight into mid-winter (Snow? On Novemebr 2nd? The worst) though, French comfort food seems like exactly the sort of thing I want to be pulling out of my oven, and I&#8217;m glad to have a copy of this book to turn to. These are classic recipes &#8211; nothing fancy or convoluted here. Many of them will be familiar to the average American cook: cheese souffles, leek and potato soup, croque madames, bouef bourguinon. For many, these are the dishes that first come to mind when we think of French cooking &#8211; in a way, the dishes feel almost retro, meals that would have been a hit in upscale restaurants during the 80s. But of course, they have all been timeless classics in France for centuries. For classic bistro food that will stick to your ribs without complicated preparations or expensive ingredients, this book is a great resource.</p>

<p><strong>The Food:</strong> The first recipe I made from <a href="http://www.amazon.com/French-Comfort-Food-Hillary-Davis/dp/1423636988/ref=as_sl_pc_qf_sp_asin_til?tag=katatthekitdo-20&amp;linkCode=w00&amp;linkId=DBFNZ6IS7LRU2QSN&amp;creativeASIN=1423636988"><em>French Comfort Food</em></a> was a vegetarian shepherd&#8217;s pie that used a ratatouille sauce instead of ground beef as the flavor base. I made it mostly because it was a time when our fridge was overflowing with tomatoes and eggplants and it seemed as good a way as any to use some up. I added the ground beef back in, used our freshly harvested potatoes, and didn&#8217;t skimp on the cheese. It turned out great &#8211; we ate half in the first day, and froze the second half for a rainy day. I was planning on featuring a different recipe for this post, because shepherd&#8217;s pie just isn&#8217;t that French, and I&#8217;d already made it so I thought I should branch out. But then, last weekend turned out to be that rainy day, and the reheated leftovers were so good that I knew I had to share the recipe with you. So here it is: not particularly French, not particularly vegetarian, but definitely comfort food. Make a big batch while there are still eggplants and peppers hanging out at the markets and be sure to freeze some for that unknown future time when you&#8217;ll really need it. I do have to note &#8211; while I usually try to stick to the letter on recipes when doing book reviews, I took all kinds of liberties with this one to suit my tastes. I&#8217;m telling you this so that you know that it&#8217;s a forgiving recipe, so feel free to adjust a bit here and there. That said, the brilliance of this recipe &#8211; using a meaty vegetarian ratatouille sauce as the base instead of beef &#8211; is all Hillary&#8217;s.</p>

Add the bell pepper, leaves from the rosemary and thyme, carrot, and eggplant and saute until beginning to soften, another 5 minutes. Add the tomatoes and season to taste with salt and pepper. Mix the tomato paste and flour together in a small bowl, then stir into the ratatouille mixture until fully incorporated. Let sauce cook until eggplant is tender, about 20 minutes.</li>
<li>While the sauce is cooking, place the quartered potatoes in a saucepan and cover with cold water. Season generously with salt, then bring to a boil over medium heat. Boil until tender, about 10 minutes, then drain potatoes. Add butter and milk to potatoes and mash or blend potatoes until very smooth but still stiff enough to hold their shape, then season to taste with salt and pepper. Add more milk if you&#8217;d like the potatoes to be smoother. Stir 1 cup of the grated cheese into the potatoes and set aside.</li>
<li>Preheat the oven to 400°F and lightly oil a 9&#215;13 casserole dish. Spoon the sauce evenly over the bottom of the dish. Wipe out the saute pan and return to medium heat, then add the ground beef to the pan. Cook until browned all over, about 8-10 minutes. Drain the grease from the pan, then spoon the cooked beef evenly on top of the sauce. Next, spread the mashed potato mixture evenly over the top of the beef, using a spatula to smooth it out to meet all the edges. Sprinkle the remaining 1/2 cup of cheese on top of the casserole, then place the casserole dish on a baking sheet (to catch any bubble ups) and place in the oven. Bake until golden brown and bubbling, about 30 minutes. Let cool for 5 minutes, then serve.</li>

<p>I used to consider baked potatoes a healthy dinner, and one I really loved. Sadly, the past few years of anti-carb diet madness have tainted my love for the potato, and I find myself eating them less often &#8211; even though I try hard to ignore fad diets and focus simply on putting nutritious foods in my body (potatoes are nutritious!) and resisting non-nutritious foods, the waters of all the health information out there can be tricky to navigate. In truth, a plain baked potato is a pretty smart dinner choice &#8211; it&#8217;s fairly low in calories, high in fiber, and high in potassium and several vitamins. The problems arise with the toppings &#8211; butter, bacon, sour cream, cheddar cheese, guacamole&#8230; potatoes love to be eaten with lots of fat, and not always in moderate amounts.</p>
<p>To help return baked potatoes to their rightful pride of place in my dinner rotation without succumbing to the temptation to use them primarily as a vehicle for butter, I came up with this recipe for twice-baked potatoes stuffed with a broccoli and kale filling. After baking, scoop out most of the potato&#8217;s insides, blend with a little bit of milk, cooked broccoli and blanched kale, stuff it back in the potato, top with a small amount of cheddar, broil, and you have a virtuous baked potato dinner the merits of which it&#8217;ll be hard to argue with yourself over. <p>Since we&#8217;re talking health, I also wanted to give you a quick update on my <a title="March Fitness Challenge // Roast Vegetable Salad with Goat Cheese Mousse" href="http://katieatthekitchendoor.com/2013/03/07/march-fitness-challenge-roast-vegetable-salad-with-goat-cheese-mousse/">March Fitness Challenge</a>. If I were a teacher, I&#8217;d probably give myself a B- on this effort, maybe a B for following the spirit, if not the letter of the challenge. So far, out of 27 days, I&#8217;ve exercised 21 of them &#8211; a 78% success rate. I managed to do the first 10 days in a row without taking a day off, but on the 11th I had a terrible stomachache and just couldn&#8217;t do it. Then, things got a little spotty, although I&#8217;m hoping to finish out this last week strong. Still, I&#8217;ve definitely seen positive effects &#8211; I ran my fastest mile (7&#8217;29&#8221;!) in years at the very end of my run this Sunday, I&#8217;ve been getting back into jump rope and managed to do 30 minutes non-stop with 5 speed pieces built in, and doing the Nike Training Club workouts has definitely started to change the shape of my legs and core. Even when I&#8217;m tired, I&#8217;m usually glad that I sneak something in. Maybe in April I&#8217;ll switch things up &#8211; 5 days a week for at least 20 minutes? &#8211; but I&#8217;d like to keep up the pace of my training. I&#8217;ll keep you posted!
