My mods:  
   - used a chef knife to julienne the zucchini lengthwise -worked fine
   - added fresh green beans and a chopped fresh tomato, cored
   - threw the beans and zucchini in the pasta water with the noodles for 2 minutes to blanch / warm up, then drained all in a colander and gave a quick cold water rinse

My sauce was a little too strong on mint.   Next time, I would go with 2:1 basil to mint and a little more ginger. 
 
Good way to use up garden goodies in a satisfying dish!]]></description>
