Guava paste is so different from fresh guavas, I’m not sure how the transition would be. Of course, you could make guava paste from the fresh guavas (I’ve seen several recipes online), but that seems like kind of a waste of fresh fruit! You might also try somehow juicing the guavas and incorporating the juice into a sauce. If you do try something, let me know how it works out!
