I recently paired this recipe with a wine from a monthly shipment that I receive. Delicious! I did make three changes to the recipe though. We used Cognac instead of grappa, we didn't burn off the alcohol and I didn't blend the sauce. It still turned out amazing. Thanks for the idea.
I wrote a little review on the wine and the recipe pairing here http://atwinalifetime.blogspot.com. Let me know what you think, it would be much appreciated.

Your pictures are absolutely lovely, as always. And the recipe sounds delicious. I am a sucker for anything French-related and I like Lobrano's restaurant reviews. I flipped through the book a few weeks ago at a bookstore. I wanted to buy it, but I just couldn't justify the price of it. It just seemed a bit thin in content for the heft of the book and the hefty price tag. But, that's cookbook publishing these days or so it seems to me and no criticism of him particularly.

Thanks for this informative & lovely review. The book is certainly something that will soon move into my house and make friends with the other cook books on my shelf.
