This was soooo good! The cheese with the roasted garlic was perfect with the crispy eggplant and the arugula and tomato sauce. I had Sam’s Club ciabatta which I warmed up and everything combined made this one of the best things I’ve made lately.

Actually, sending cookbooks around to different bloggers who then pick their favourite recipe and cook it could be a really nice idea!
