Ooh, that chutney looks like an amazing pair with sweet-savory latkes! I’m definitely going to have to check out Ming Tsai now. :)

I think the vinegar would make it OK, I’ll just have to check the ratios. I’ll give it a shot tomorrow assuming the kids cooperate ;)

You know, I was wondering the same thing. I don’t have a ton of experience with canning, so I can’t say one way or the other if this would be safe… but I bet you could find a canning-safe chutney recipe and adjust the flavors somewhat to include ginger/cider!

Yum. I have several bushels of apples. Any idea how well this chutney does preserved in bottles? I have a LOT of apples.
