					<description><![CDATA[So I tried your recipe and it is lovely creme de cassis.  Also tried Darina Allen&#039;s recipe which is different but also very nice, so you might want to take a look.  Just tried out this recipe for the boozy berries that were left over and they are delicious, so thought I would share:

Currant muffins

Recipe was for 100g of fresh red currants, just multiply recipe by however many berries you have, worked for me… multiplied by 3… would work with any berries I would say

1/4 vanilla pod
50g butter
100ml buttermilk (or 100g milk with 1 tablespoon vinegar added 5 minutes before)
75g sugar
1 egg
Salt
50g flour
1 tablespoon baking powder
70g oat flakes

1) Remove the vanilla seeds from the pod
2) Melt the butter, pour into bowl, and then add the buttermilk, vanilla seeds, sugar, eggs and a pinch of salt and beat until creamy
3) Mix the flour and baking soda and then add to the mixture, stir with a spoon.  Add the oatflakes and the fruit and mix.
4) Put into muffin tin and bake at 200 C(in pre-heated oven) for 20 minutes.]]></description>
