As someone who grew up in a Hungarian/Slovak family, we had lots of mushroom soup and it has always been one of my favorites. This one looks particularly delicious - mushrooms, dill, paprika, sour cream - classically tasty!

I can't wait to try this. I use to think the same thing about saffron, until I found it at Trader Joes. You get a small but decent amount for just over $5.00 (at least in Seattle) and a little goes along way.

@Cyndall: I've never attempted to make a mushroom broth (the soaking water for the dried mushrooms is added to the soup) out of fresh mushrooms, but I'm sure if you could make one with the same intensity of flavor, it would be just as good - if not better! - as using dried.

@Jenn: I used a mix of wild mushrooms. It was my first time using dried mushrooms, so I'm not sure how much different varieties would affect the flavor. If you try it with a particular kind, let me know how it comes out!

Thanks for stopping by everyone! Hope you like it if you try it.

@ John: The mushrooms have some health benefits - lots of vitamins and minerals, good for fighting colds - but they aren't super abundant in this soup. It's low calorie - 177 calories per serving - for how filling it is, so that could be considered a health benefit!

@ Needles&Bread: Thank you for such a heartfelt comment - it's always just really nice to know there are other people out there thinking about/experiencing the same stuff. And your blog looks great. :-)

Mushroom soups are terrific things. I've been meaning to make one for awhile. I also love dill. I'm going to be adding a few things to my grocery list!

This was also a nice post to read coming up on the new year. I've been out of college for about a year and a half now, and while I've stayed away from academia, a lot of learning has gone down - about myself, my goals in life, and where I would eventually like to see myself. I'd never considered the possibility of writing being a part of my life until I began blogging and even more so when I reinvented my blog to be more true to myself rather than trying to be just like all the big food bloggers.

Long story short, I like your style. :)
